Reservation started at 6:30 PM and we arrived at that time, the main course of the set menu was not served until after 10:00 PM, first dessert served at 10:45 PM, we did not opt to stay for cheese, as this set menu experience was already hours longer than expected or desired, we waited on average 30 minute between each of the 7 courses, one took over 40 minutes. If that time was filled with “experiences”of servers explaining the dishes, the inspirations, the connections between flavors or something, really anything of interest, the wait wouldn’t have felt like such a massive waste of our time, but the servers only ever spent 15 seconds at most explaining what any dish was upon delivery.
The timing of how slow the courses came out from the kitchen was definitely frustrating, but even the server suggesting a specific glass of chilled wine to be paired with the next dish, pouring that glass and then that dish not coming out for another 25 minutes is one example of the exceptionally poor planning.
When I asked our server if this was a normal amount of time to wait for each dish, he said it’s not usually quite this long, but when I asked the chef if it was normal, she chose not to apologize for the long wait time, instead defending the long wait by saying “these dishes take a long time”.
I’ve ate at many stellar Michelin star restaurants serving complex and varied dishes and have never had to wait anywhere near half the amount of time that I did here.
If you think waiting that amount of time for each tiny dish to come out is great, you may adore this place! But for me, the entire restaurant staring at their cleared tabletop between courses for 20-30 minutes making the meal last over 4.5 hrs is just too long and a waste of everyone’s time.
