There are not many choices in Midland/Odessa for nice dining especially when looking for a place to take a customer or work colleagues. I am very happy that I found Saint Blaise as they hit all three of my marks for restaurants that I take customers to. Food: The food was great. I wanted to get the steak and potatoes but it was $50+ which I thought was a bit steep for just steak and potatoes. I opted for the blackened salmon which was cooked perfectly with delicious broccoli and mashed potatoes on the side that were also cooked perfectly. The gnocchi had a perfect consistency with a non-overwhelming sauce so also phenomenally done. The two drinks I got: Same Place and Maple Manhattan were well-made with each component complementing each other well and not overpowering one another. If you like tequila and manhattans I think you will be happy. Service: The servers were very attentive and made sure we were taken care of the entire visit especially with the waters. Huge kudos! Ambiance: I will say because the inside space is a bit tight and small, having conversation when the restaurant was busy proved a bit difficult but if that is the case they do have seating right outside in the lobby area and having conversations there should not be an issue. I will make sure to be back with customers here!

We had an incredible dinner at Saint Blaise this past Friday night. We made a reservation and were seated immediately—no wait at all, which was a great start. Our waiter, Andy, was phenomenal. His service was attentive, friendly, and truly elevated our entire experience. We started with the French onion dip and homemade chips—absolutely to die for! The chips were fresh, crispy, and addictive. I had the Salisbury steak, which was cooked perfectly and packed with flavor. My husband had the gnocchi, which was soft, rich, and full of a punch of flavor. Every dish hit the mark. The drinks were crafted with care and tasted just as amazing as they looked. You could tell a lot of love went into them. Andy didn’t just stop at great service—he gave us top-tier recommendations for post-dinner drinks, which rounded out our evening perfectly. Andy is a huge asset to the Saint Blaise team. We will definitely be coming back and will be recommending this spot to friends and family. A truly memorable date night!

Saint Blaise is a true gem in the Midland/Odessa area. I would recommend making a reservation as it is a small, intimate restaurant. However, the intimacy adds to the atmosphere. The service was spectacular, our waiter I believe his name was Cody was fantastic. Cocktails were carefully crafted and food was out of this world! Absolutely worth a try if you’re looking for something new!

The food was delicious! The Lobster Roll and Fries had great flavor! This was my first time trying them and they did not disappoint. Everything was fresh and it was not heavy. The restaurant was clean and the staff were great. I will definitely be returning!

We were so excited to try Saint Blaise again! We went back in March and didn’t have a good experience with the hostess and our reservation but I really wanted to try it again. We had reservations and were sat down as soon as we got there. Ryah greeted us with a smile and she was so nice from the moment we walked in until we left! She sat us down and was our waitress! She was so cute and friendly! We loved her! We started off with drinks! I ordered the 1934 cosmopolitan! Loved it. And my friends ordered the salted caramel espresso martini! That was also soooo good! For appetizers we ordered pigs in blankets, beer cheese fondue, and bistro meatballs! For mains we ordered the steak gnocchi, Salisbury steak, and the blackened Salmon. For dessert we got the bread pudding and the apple fritters. Wowwwww! Loved everything. There wasn’t an appetizer, plate or dessert that we regretted! Everything was really really good! I can’t wait to try the brunch next!!!!!

We decided to give this place a try after it was recommended by a friend. It did not disappoint. The restaurant is small and has a very intimate vibe. I’m pescatarian and there were plenty of options for me. I ordered the beer cheese fondue, the lobster roll, and bread pudding while my husband ordered the pigs in a blanket, New York strip, and apple fritters. All of the food was to die for and our server was very attentive. My only note was the steak was very expensive but that could be an issue with the current meat market. This place is a gem and we will be back!

From the moment we walked in, the service was outstanding—friendly, attentive, and genuinely welcoming. The food—absolutely delicious. Our meals were full of flavor and had great presentation to them. And the drinks? Equally impressive. Creative, well-balanced cocktails and a great selection of wines. I always look for 3 things when it comes to a restaurant that I’ll return to, great food, great drinks, and great service. Saint Blaise checks the box on all 3.

Dinner | $30-50 I went in and immediately was greeted at the front by "Aaliyah" She was super bubbly and inviting. We sat inside and it was nice, cool, and lively. Our server Aubrianna greeted us instantly. She gave us amazing drink and starter recommendations. I got the same place and let me tell you, BEST drink I've ever had. Fresh cucumber juice mixed with Aloe Vera Liquor creates heaven in a drink. I should've taken a picture of my entree, the smash burger. It was the tastiest and juiciest burger I've had in midland in a while! I was told to come back and try it BLAISE STYLE next time which includes a grilled jalapeño and bacon with veggies. Dessert was fabulous with the Apple Fritters and Dulce Sauce. Experience was a 100/10 and the staff is so friendly and welcoming. Definitely give it a try if you're in the area, you won't be disappointed!

Sunday brunch was perfect! My husband and I split the Cowboy Quiche and the French toast. The quiche was so delicious and topped with the BEST white gravy and sausage! The French toast was made from bread pudding and had a hint of cinnamon. Oh my gosh, you have to try it! We decided to split both the sweet and the savory dishes, we both agreed it was perfect! Our waitress was so helpful and even split our dishes onto different plates before they came out. Everything was clean and the service exceeded our expectations.

Our overall experience today at Saint Blaise was truly remarkable. We will definitely be revisiting as the food, attentive service, delightful drinks, and ambiance speak for themselves when you order and dine in. The portions were great for the price and we enjoyed our time thoroughly. The only issue was the music was quite loud during our brunch.

It's hard to find anything worth spending money on in midland but Saint Blaise is definitely the exception. Saint Blaise feels modern and upscale but also somehow comfy and nostalgic to Old Midland. I've stop by to grab coffee to go and I've stoped in for bites and cocktails and closed it down and never left disappointed. The menu is unique and eclectic bringing new spins on classic favorites. The vibe is pretty cool!! The service was horrible the food was horrible. We went on Sunday for brunch and the eggs and sausages were over cooked and the hash browns were frozen. Too pricey for crappy food.

Obsessed! Saint Blaise is 10/10. The oysters were delicious. Ive had breakfast lunch and dinner and I've left a happy gal everytime! The service was excellent and drinks were dangerously good. The lighting is relaxing, calming yet still upbeat. Plus the music is always a vibe!! It's perfect for date night or a girls brunch!!

Great ambiance and food! Service is always great with friendly staff. My go-to app to order is always the French onion dip along with the Pigs in a Blanket. I love the French onion soup as well. For dinner, Gnocchi a la vodka is a must, Chicken Shnitzel is always a favorite and the lobster roll.

This is the perfect spot for a date night. We've gone several times and have yet to be disappointed. The waitress was very nice and attentive. We had to ribeye and mashed potatoes which was amazing. I also had the pot pie, which was very good and filling. Can't wait to go back. It gets pretty busy so I'd recommend a reservation.

Very poor organization. I made a reservation five days in advance. When we arrived, they made us wait 30 minutes for tables to become available, and then they seated us at separate tables. The reservation required a deposit, and even with that they did not meet basic standards. What's the point of making a reservation? Extremely disrespectful.

I have to say I was excited to try this place with my family having others tell me how good it was. First of all I don't think there should be any seating by the hostess stand. I understand this is to add more "space" but it was just awkward. Secondly, the service was not great. I felt we were forgotten about and our server was nowhere to be found. Lastly, everything took forever to come out and we didn't get everything we ordered. Definitely will not be returning to this place.
