Miami’s Best New Restaurant Openings, March 2025 | Eater Miami

"A Florida Keys outpost from chef Jeremy Ford (who leads Miami Beach’s Michelin-starred Stubborn Seed) offering a “barefoot” approach to his South Beach fare. The restaurant sources vegetables from Ford’s own farm along with local seafood to shape its menu and is located at Hawks Cay Resort in Duck Key in Marathon." - Laine Doss

Wow! We were blown away by the food and atmosphere. Three star Michelin chef knows what he’s doing! Omar was fantastic and so knowledgeable. He guided us through our experience seamlessly and even brought out a couple complimentary glasses of champagne and sorbet for my birthday! Absolutely loved everything about Salt + Ash, great vibes and food. Can’t wait to visit again!

I booked our stay at Hawks Cay the moment I found out that Chef Jeremy Ford had opened a restaurant there—and I couldn’t be happier that I did. The dining experience was phenomenal from start to finish. Every dish, from the perfectly prepared yellowtail snapper to the mouthwatering smash burger, was perfection. Add in the exceptional service, and it's truly a must-visit. Definitely going back!

I finally got around to putting my experience at Salt+Ash into thoughts and words. This is my most unusual experience, I was in indescribable delight with the food and could not tear myself away from this spectacle of flavors. Everything from the serving to the interior immerses you in the enjoyment. A special mention goes to server Rebecca, who accompanied me on this gastronomic journey and made the experience truly unforgettable. She took care of me and my comfort throughout the wonderful dinner. I hope that everyone who will have the opportunity to visit Salt+Ash will be able to experience the unforgettable range of emotions that I was able to experience there

Cannot talk this place up enough!! A must go-to if you’re in Marathon and especially at Hawks Cay. We got the pleasure of meeting the world renowned chef Jeremy Ford and he was an absolute beauty. Don’t even need to say more about the food. Just go, trust me. Look at the pics. I got the swordfish which was incredible and go with the cauliflower side. Cookies and milk for dessert, are you kidding me?! Phenomenal. Faith took unbelievable care of us. Ask for her. Matthew the manager hooked it up, too! Kenroy and the entire staff were beyond amazing. The wood fire oven for pizza is a delight, as well. Best meal I’ve ever had.

Google
We recently dined here twice and had an excellent experience both times. Our server, Faith, was outstanding - friendly, attentive, and ensured our water glasses were always full, which we appreciated. The food was exceptional, and we highly recommend the: - Coconut ceviche - Truffle potatoes - Butternut squash agnolotti - Charred Maitake Overall a wonderful restaurant to have lunch and dinner. We’ll definitely be back.

We had an incredible meal and experience at Salt & Ash. The food and the service were phenomenal. We started with the Spitfire Cocktail which was artfully curated with Ford Farm’a hibiscus paired with Bulleit Bouron. I ordered it first and it was so good that my sister had order envy and decided she needed one as well. Three of us shared the Coconut Tuna ceviche and raw oysters. Our server informed us that the tuna was speared the day prior by their in house spearfisherman. Can’t get any fresher than that! The oysters were cold water PEI Oysters. They were so delectable, we ordered a dozen more. We also had the Cacione Pepe Cheese Puffs which were soft and full of flavor. For entrees we ordered the Butternut Squash Agnollotti with a brown butter crispy Sage. They were pillowy, smooth and outrageously delicious. We also ordered the 14 oz. 35 Day aged Bone in Strip Steak. It was cooked to perfection. It was so perfectly aged and prepared that it was able to be cut with a butter knife and needed no sauces. We ordered the Charred Mushrooms with a Kung Pao glaze. The umami flavor was tangy amd the mushroom variety paired perfectly with the steak. The Crispy Polenta Bites with Sour Cherry Miso sauce was a non-negotiable. They were crispy on the outside and soft/creamy on the inside. The cherry miso sauce was sweet, tart and just the right amount of sweet to match the savory of the bites. Finally, we ordered the chocolate lava cake. Laava cakes often come out cooler than I’d like but this was a mini dutch oven filled with hot, chocolatey, gooey goodness. Our server Rebecca was phenomenal. She was attentive, fun, and was super knowledgeable about not only the menu but the resturant’s beginnings and Michelin Star Chef Jeremy Ford’s impressive resume. It was evident that Rebecca was passionate about her work and helping guests have the best experience. The ambiance was perfect for a evening of good food and drink. Salt & Ash is a MUST try if you are in the Florida Keys. You will have a divine experience.

Google
Salt & Ash is by far the best restaurant in the Keys. My boyfriend and I live here and we have been to countless restaurants, resorts, and bars. Don’t hesitate to book a table or sit at the bar (and hangout with the bartenders, who are wonderful.) The plates are chef’s curated masterpieces and the cocktails are divine.

Google
Yes. Amazing food. We ate here 2 times. Only remembering to take a pic of the pizza. we had the mushroom pizza. You have to try it. From the crust to the sauce it’s unique and one of the best pizzas I have ever had. We also had the whole fried Snapper. Excellent fish was 3lb a perfect size. Also ate the steak and Tuna Cerviche. Highly recommended.

Yelp
We booked this for my spouse's birthday during our stay at Hawk's Cay and we were not disappointed! The menu was limited but DELICIOUS! Our waitress Faith was fantastic! She was very well versed and navigated our food allergy like a champ. We will definitely be returning to Hawk's Cay and to Salt and Ash. We were impressed with Chef Jeremy Ford's menu. Thank you!

Yelp
Came here with my bf to celebrate our anniversary and his birthday. Getting into the restaurant there was a resort attendant that gave us a hard time that we weren't allowed into the pool area not being a guest but we said we had reservations to the restaurant and he eventually let us pass by the area... weird. We were dressed up and didn't have any indication that we were going to the pool. The restaurant itself is gorgeous and the circle layout made it feel very intimate. Our server Rebecca was great. Really attentive and friendly. As soon as we sat down she offered us some champagne on the house to celebrate our birth-iversary! To start we ordered the cacio e Pepe cheese puffs and the truffle jalapeño fritters. We both enjoyed the cacio e Pepe cheese puffs more, they were pull apart soft and very light. The truffle jalapeño fritters were kind of bland, just okay not as good as the other appetizer. As my entree I ordered the olive oil poached Atlantic swordfish and my boyfriend ordered the dry aged steak. Although the steak presentation wasn't special it tasted delicious. We both really enjoyed the flavor. My swordfish was delicious as well. The broth with the peppers and onions really made the dish it was very refreshing. To share we ordered the Jerk Charred Carrots and the Whole Charred Cauliflower sides. Both of these were spectacular. We both said the carrots were the best thing we had the entire night. The cauliflower was great as well like I said but those carrots.... The citrus flavor with the creamy yogurt... 10/10 loved it. Instead of dessert since we were stuffed we decided to ordered some espresso martinis. They were delicious here. Really enjoyed the presentation of them and the flavor. Overall, I enjoyed our dinner here a lot and can't wait to come back and order more dishes off the menu.... And the carrots again!!

Yelp
Incredible! This newly renovated space is well done with ambiance and style. The food was insanely delicious and full of fresh herbaceous flavors. I started with the ford's farm organic tomatoes and wow. Perfect mix of dill, mint, stracciatella, pear and tomato. The tomatoes were perfectly ripe with full flavor of a garden tomato. Next was the hamachi crudo. Another favorite, with perfect saltiness, insane herbs complimenting the cucumbers and green beans. I did all but lick the plate on this one. Finished up with a sautéed tilefish with bok choy, cauliflower and lemongrass coconut curry. The portion was GENEROUS! There was a crisp on top which I love in a fish dish to balance out the softness of a white fish. I am not ashamed to say I sopped up the curry with every last ounce of food. It was perfectly done. All paired nicely with a glass of Pinot noir. The best part. $99 bill. The servers were friendly and professional. Highly recommended. I will be back!

Yelp
The space and the food was delicious. Where they fell short was in timing the courses. Mains came out before salads and appetizers, side dish came out after all that and we ordered a dessert for a birthday but it didn't come out. We had to see the server after the check was paid. If it weren't for these mishaps, the food would be a 5. Mushroom side dish and olive oil cake with berries were both winners.

Yelp
Had our anniversary dinner here. First off the place is beautiful. The staff that we interacted with were top notch. For the food. My wife had the triple tail cooked to perfection with a twice baked potato. Excellent. I went with the olive oil poached swordfish with charred carrots. Unbelievable. For a perfect evening I can't recommend this place enough.

Yelp
I would give it five stars, but I'll explain why I did it later. I'll start off by saying that the place is beautiful. It's very warm and inviting a nice for a date or a large group. The food was absolutely delicious. I was very worried with all the reviews that I was reading, but I'm very glad I ended up going. The staff was very attentive and our way to Cassandra was on point. We started off with oysters. When I first ordered, I was skeptical because they're from Florida and well they don't have the best reputation but these Florida honey oysters were absolutely delicious. The minouette used Was spectacular! We then had the Caesar salad, which was one of the tasty Caesar salads I've had. Speaking of tasty. I don't know what they do to their old-fashioned but my God it was delicious. For entrées, we had the beef cheek pasta, which was so flavorful and comforting. I then went with the snapper, which was a very healthy portion And delicious as well. Overall, we had a wonderful experience. The reason I'm only giving it four stars is because my husband's entrée arrived before mine and it did not seem odd to the waiter that delivered it. That was a little bit disappointing but overall, it was a great experience. Glad I went and I would definitely go again to try the steak. Their pizzas also look amazing Considering they have this humongous wood-burning oven. Definitely worth a visit!

Yelp
Venue is very nice. Attached to a resort and near to pool and water. Food was excellent although portions were surprisingly small, we had the steak, burger and the pompano. The steak and the pompano both looked like appetizer portions. They were however very tasty. Service was dreadful. Our waiter took our orders and then disappeared. Some one else brought the food and he only returned at the end to collect his $30 tip... I was annoyed as wanted a drink and also surprised at a nice restaurant not to be asked if everything was good with the food. It's a great place and worth a visit, but I suspect that they are doing well and have forgotten to focus on some of the basic essentials that maintain a good reputation.

Yelp
Food was good, pretty pricey for the servings and quality. Not worth a repeat visit at the price point

Becky W.

Yelp
There are mixed reviews and I have no idea why. We were guests of the resort and had dinner here with our grown daughter. Service was excellent. Basil was our server and was entertaining, attentive and very efficient. He added to the experience. The restaurant is beautiful and very inviting. The food was superb. From the appetizers to the dessert. We can't find one thing to complain about. Fast and presentation were wonderful. Hotel restaurants are usually MEH but not Salt & Ash. Photos have descriptions of dish.

Yelp
Was very excited to find out this new restaurant had opened at Hawks Cay resort! We came here one of our nights for dinner and found it to be so pretty! The high ceiling and light made the place very beautiful. We made reservations and our table was changed from a high top to a regular table to help better fit our children (needed a high chair). Our waiter was extremely helpful and explained every dish to the tee. Our drinks were delicious! We really liked how the mixture that topped the drink was slightly warm. Our appetizers and meal for our toddler came first like requested. We loved the potatoes and crudo was great but a little on the salty side. I loved my entree, the agnolotti was delicious. My husband enjoyed his fish as well but absolutely loved the puree (my son devoured it). The cauliflower was great too but also on the salty side. Overall, great meal, maybe just cut back on the salt for those two dishes.

Yelp
Amazing amazing fresh food and ambiance. Service was great. Very cool drinks. Everything is from a local farm so it's fern to table. 10/10 reccomend!

Yelp
I have been following this restaurant opening and was VERY excited to travel from Texas for the experience. Our server, Rebecca, was attentive and apologetic about our experience. Everything was far out of her control and we loved dining with her. The food was all over. The wahoo crudo 10/10, Swordish 9/10, snapper 5/10 (it was over cooked), cauliflower 8/10, pizza 10/10, steak frites 10/10 (my kids devoured it and would have loved another order) The poor experience was due to the fact that we ordered everything together and was told they'd course it out. For Jeremy ford and the price - this is a no brainer!! But the pizza, apps, kids mac n cheese came out moments after our cocktails. Then over an hour and half later the 3 entrees came. Now we are wildly patient but the issue I had was that Rebecca was the only one to apologize and try to make things right. Never, not during or after, did one manager come over to say anything to us. We took 3 kids to a 7:45pm reservation and didn't walk out until 10:15pm because of the time it took for those 3 entrees. Rebecca did comp cocktails and discount our food because of the insane wait. Apparently they had a bunch of walkins, but I booked that reservation the day I could. Overall, disappointed because of the management. I would go back without children and just for a drink and apps. Don't waste the money if you have other places to go.

Yelp
Let me start off with the positives the resort and the restaurant are absolutely visually stunning. My issues were with some of the food items we ordered. For example :the butternut squash pasta, the carrot dish, cheese, puffs, and potatoes side dishes and other items we tried , had the same heavy hot spice profile, So everything morphed into one note and not described as such on the menu. The steak and chicken entrée were good. However everything else was very disappointing. But I have to give a shout out to the Keylime dessert it was delightful. So if you're looking to have an enchanting evening for the views and the salt air, just be careful ordering from a menu that doesn't match the description accurately. Not worth the price the overall food experience.

Yelp
Probably one of the worst restaurant experiences I've ever had. Being advertised as a new and fancy restaurant, I expected more from the quality of food, service, and attention. The service was absolutely horrendous, and the food was poor quality for the price. While the restaurant looked cool and cute, I will never go back or recommend this to anyone. For your knowledge, it was my birthday. They were told only three times, and didn't bring out the dessert with a candle. The only good plate we ordered was the ceviche. Oysters were not tasty, swordfish was overcooked, and don't even get me started on the cheese puffs. Freezing cold and frozen plate. Overall, not worth the $219 bill and that doesn't include the terrible service!!

Michael D.

Yelp
If you are looking for something a little more elevated in the Keys this is your place to go! A great addition to Hawks Cay!

Yelp
During our stay at Hawks Cay Resort my wife, daughter and I decided to have dinner one evening at Salt + Ash. The restaurant is decorated beautifully and the atmosphere was inviting. We were seated quickly and our server "Basil" promptly waited on us. Basil was truly a great waiter and host. We all ordered appetizers. I had the jalapeño poppers, my daughter the diver scallops and my wife had the Caccio y Pepe puffs. All of us enjoyed the appetizers and they were gone pretty fast. For entree's I order the fish of the day which was a triple tail in curry sauce with jerked carrots, my daughter had the beef cheeks pasta with polenta bites, and my wife had the margherita pizza with a Caesar salad. All of our entree's were great. Lastly we had dessert and we ordered the roasted blue berries with an olive oil cake and a key line tart with blood orange gelato. Both were fantastic but I do admit the olive oil cake was a different experience. We truly had a great experience and highly recommend that you try this restaurant.

Gretchen E.

Yelp
Very disappointed. Food cold, steak frittes so salty and meat chewy. Service was subpar. This is sold as a Mitchell star restaurant. I think not. Stay away.

Leianna H.

Yelp
Food was amazing and fast. Drinks were very creative and smooth. service was amazing. Our server Omar was great! The atmosphere was beautiful and inviting.

Renee R.

Yelp
I'm a big fan of Jeremy Ford so I wanted to try one of his newest restaurants. He did not disappoint. The food was amazing! We started with a wahoo ceviche and shrimp appetizer. Both were delicious and fresh. We had the snapper, pompano and cowboy steak as our entree with a potato and charred cauliflower as our sides. The portions sizes were perfect. We indulged and ordered a keylime pie and chocolate lava cake for desert. Basil was our server and was very attentive. Highly, highly recommend you make the trip to the beautiful Hawks Cay Resort and enjoy this amazing restaurant. It is truly an unforgettable culinary experience!

Jeannette C.

Yelp
Last night we had a very nice dinner at Salt + Ash. Our server Rebecca made it extra special, great service (attentive) and the new cusine was very good. We had Hogfish (as the fish of the day) and it was cooked to perfection. We live locally, catch our own fish, and know how to cook fish so it's greatly appreciated when a chef knows what he is doing. The Caesar salad was tasty and big enough to share and the polenta bites were very good as well. Highly recommend, we'll be back.

Allie C.

Yelp
We ate here twice for dinner while staying at Hawks Cay Resort. Both times the food was incredible! The kids loved the cheese pizza from their pizza oven too. The key lime pie was our favorite from our entire trip to the Keys (including key west!)

Tom P.

Yelp
Was excited to dine at this new, "high end" restaurant at Hawks Cay. Was utterly disappointed at the service. Took 15 minutes to place drink order and 15 more to get it served. Recommended fish dish was over done. My wife asked for a condiment that never came...more did the server. Over priced and underdelivered. Would not recommend.

Yelp
Ok, so. we three ladies, I'm a senior and my two companions are close behind. We were first met with an unhelpful bell person while we tried to find parking. My one companion had a recent heart transplant, and there is no handicapped parking. If there is, we were not made privy of this. That is on Hawk's Cay resort, not really Salt and Ash, but I digress. Eventually we had no choice but to valet the car. We found our way and were pleasantly greeted by the host staff. Sat on the deck, nice table, we were happy. We have Rebecca as a server. She was very pleasant and did a good job. We ordered our cocktails, one was incorrect, they fixed it quickly. We ordered the Butternut Squash Anglioti - it was AMAZING! So delicious! I will return just for this dish. We ordered the mushroom pizza, which we also like very much, and the Cauliflower, and that one, wasn't "bad' but, meh. The seasoning was not anything special, and the very tart hummus under the head was good and very smooth, but did not pair well with the cauliflower, maybe consider a cheesy cauliflower puree unstead? Now, as an ex-F&B director of a major hotel brand as well as GM for a well know Steak House, I am going to share here a few issues I see that can be addressed and make the service go much smoother. #1, re-number your tables and assigned the chairs a number as well. I watched all night the food runners - not knowing where to go, and "auctioning" off food. Not one plate was placed down in front of a guest without a runner having to call out the item and most plates went to at least one wrong table before getting to the correct one. If you put the order in as, table 12 -seat b, table 12, seat A and know the way you're seating works - clockwise etc- this will end that disruption and your staff will feel better about it all too. The staff all seemed very nervous, and not in a "we're new and it's all new, kind of way, they seemed like they were expecting to be court marshalled. lol. I could see how on edge they all were. With the sent back French Marini, 3 different staff members were looking actually frightened. The bartender was made to bring out the correct drink, I don't see why that had to happen. Things happen, mistakes are made, correct them, apologize, move on. I do look forward to going back again when they have their full sea legs.

Marissa B.

Yelp
Plan on eating after your meal, very small portions. Poor/slow service. Server never checked on us once we got our food. Disappointed especially for the price..

Mary W.

Yelp
My husband and I didn't have a reservation and were able to sit at the bar with full menu service, which really added to our great experience. Rob was so great at explaining the menu and delicious farm-to-table with fresh fish options. Yaz was fabulous at making beautiful cocktails. We thoroughly enjoyed everything we ate and loved the experience and ambience. It really was the best dining experience we've had in the keys. Very unique and memorable evening.

Joe R.

Yelp
Service was great. The food was amazing and tasted very fresh. We were very pleased and impressed.
