Sambal Restaurant offers a confident modern take on Penang classics, with refined plating and flavours that largely respect tradition. The menu is thoughtfully curated, and the friendly service stands out, with staff taking time to explain each dish clearly and with genuine enthusiasm. The prawn vermicelli was the undisputed star of the night, deeply savoury, aromatic and full of umami, showcasing excellent stock work and balance. Several seafood dishes were also well executed. However, the cocktails were disappointing. Both the chilli padi and nutmeg cocktails lacked balance and restraint. Overall, a strong kitchen and warm service, but best enjoyed without the cocktails.
