On the Grid : Samurai Sharpening Service

"Do you have a knife that is not cutting like it used to? Then you should come here! Margery is a woman with extensive knife sharpening experience. She started knife sharping at fish markets on the Jersey Shore in 1974 and after a stint working in California with a master woodcarver she took over the Samurai Sharpening Service and brought it to New York. Chefs and cooking aficionados bring their knives to her wrapped in knife cases, cloth, and in some cases, butcher paper. Margery unwraps each one and inspects it by hand before determining the best course of action. Some need more care than others but every knife gets the care it needs. Margery is also an avid sculptor. You can find a link to her work on her website." - Alisha Austin

Google
Genuinely baffled by the electric grinder comment, none of that there from what I saw. Margery was phenomenal in getting our beaten up knives back to the day we got them. The work was fantastic and she took the time to fix a broken knife tip for us too. This will be my go-to spot in the future!

Margery is such a gem! My boyfriend saw her set up in Chelsea Market months ago. He was so impressed by her work that we made a special trip today just to see her and to get his knives sharpened. He was thrilled with the job she did- she was quick, professional, and friendly. I loved chatting with her about her amazing career. Congratulations Margery, on 40 years of Samurai Sharpening!! You are the real deal!

I want to preface this by saying that I do not write this lightly. I really wanted to support a local business woman, and Margery seemed like a true gem - full of wise words beyond the knives. However, I seem to be the outlier here in terms of results, so I wanted to add my experience to the list. I love my knives but they had become dull as can be. I was so excited to have found Margery, and I was really looking forward to having my knives sharpened. I took five of them in, dropped them off with her, and then came back later to retrieve them. The cost was $50, which I thought was a total bargain and paid cash. I took my knives home with my spirits lifted, ready to take on whatever culinary tasks I could find. I made an extensive Instagram post about Margery and her business - unfortunately that was before I tried the knives out. Today I finally had the opportunity to use the newly "sharpened" instruments. None of them feel like they've been sharpened a bit. They are the same as when I dropped them off, maybe even a little duller. The large chef's knife had difficulty even cutting a lemon. I was crestfallen. At this point, I think they are even dangerous to use. I am out $50 but the disappointment makes it even worse.

DO NOT SHARPEN YOUR KNIVES HERE!!! When I first arrived, she was grinding a Japanese knife with a table top electric tool. I asked, why is she doing that? She said it had huge gashes and needed it. I told her under no circumstances use an electric grinder on my knives. I dropped off my 4 Miyabi knives, very expensive stainless steel, and they got ruined. I paid so much attention in making sure they are in perfect condition, and within a few careless minutes, this person scratched and deformed them. She definitely used the table top electric grinder, the even shaved the back of the knives to give it a pointer tip. DO NOT GO HERE.

Not at this location currently (Jan 22, 2020) The craftsman does incredible work. The small nicks were removed from my blade while removing the minimum amount of steel. The blade was honed straight and maintained the same cutting angle I had before the sharpening. Excellent work. She is currently at a store in downtown Brooklyn (Whisk) and works on Tuesdays.

She did a great job in fixing up two expensive Japanese knives with broken tips. Well worth the reasonable price she charged to have those knives back in service again!

Google
Not sure what the review about an automatic grinder is talking about. Knives were returned in perfect condition extremely sharp. Highly recommend.

Google
Excellent work -- and I have high standard for knife sharpening, this she was the best of the four I've been to. Not sure what the previous reviewer was talking about, she did all four of my knives by hand!

Yelp
DON'T! LET ME REPEAT, DON'T SEND SCISSORS THAT YOU CARE ABOUT TO SAMURAI SHARPENING SERVICE!!!! WHAT A DISASTOR!!! I so agree with the other 1-star reviewers. This woman doesn't know what she is doing. I sent my 9" Hoffritz sewing shears to Samurai Sharpening Service via Whisk (197 Atlantic Avenue, Brooklyn, NY.) where she picks up orders. It took from Tuesday to Tuesday to get them back which was okay. The blades and tips weren't particularly dull but just needed a bit of honing to sharpen the edges. I had no idea this woman was pretending to sharpen scissors. When I got the scissors back, they wouldn't cut room temperature butter. There were blunt dull spots along the blades and the tips didn't nip the fabric edge at all. In short, the scissors don't cut at all now! Whisk refunded my money on the spot so they are not responsible for such shoddy work. Be forewarned, nothing with this business owner is worth your frustration, time, money, scissors or knives. Keep looking and find a more reputable and knowledgeable company to handle your sharpening needs. Which I now have to do.

Yelp
She did an excellent job for me. I brought her two knives just purchased in Pairs at E.Dehillerin. They had almost no edge. Sharp, unmarked, just perfect work. Two knives, $16. Bring your knives here.

Yelp
I had multiple knives sharpened and Margery did them quickly. They all cut like magic now! I barely had to put any pressure on it making dinner today. I am so glad to find this service and will be back again.

Yelp
I brought her my Chinese chef's knife I bought in Hong Kong and my Wusthoff knives. All were relatively sharp to begin but after sharpening they were razor sharp. I've tried a couple of sharpening services and this is by far the best.

Yelp
Margery restored several of my old chef's knives razor-sharp, quickly and at a reasonable price.

Yelp
Yikes. Brought several knives to Whisk to get them sharpened by samurai sharpening. They came back still dull, but the serrated ones had been ground down so that you could barely see the serrations. In short, $85 later and my knives are worse than when I sent them in!
