She started knife sharping at fish markets on the Jersey Shore in 1974 and after a stint working in California with a master woodcarver she took over the Samurai Sharpening Service and brought it to New York. Chefs and cooking aficionados bring their knives to her wrapped in knife cases, cloth, and in some cases, butcher paper. Margery unwraps each one and inspects it by hand before determining the best course of action. Some need more care than others but every knife gets the care it needs.
