It is a SIN that I've taken this long to write Sapor a review. Why, you ask? Because for FOURTEEN MONTHS I've been (proudly) drinking their coffee every. single. day. And not a day goes by where I don't proverbially drop to my knees in ecstasy at the first sip. It's the best coffee in Denver. It's the best coffee in America. It might even be the best coffee in the world, and no, I'm not pulling your leg. Yes, I've had espresso in Italy, and France, and Spain. Yes, Sapor is better. Don't @ me. I don't know what they do to this stuff - it must be made with magic.
Sapor is one of those coffee places where the coffee itself is as pretentious as it gets, but the shop and the lovely humans who work there are the farthest you can get; super high ceilings, bright white walls, well placed and well cared for plants, comfy seating, and floor-to-ceiling windows that flood the space with natural light. If you go on the weekends, they sell these local donuts that are unique and bonkers good - my boyfriend demolishes them and then pouts for an hour that he ate them too fast.
Sapor is owned and run by a couple who are just GOOD. Passionate, kind, and incredibly dedicated to their craft. The shop has been open for a few years and they NEVER take more than their Sunday's off. They have one additional barista, Jeremy, who is like sunshine in a person. We only see these folks for 5-10 minutes every day, and yet they feel like friends.
I'll leave you with this: about 5 months ago, the bf and I looked at finances and thought "hm. Maybe we should get an espresso machine and save some money". So we researched, bought the best one we could find, and the folks at Sapor supported us, told us about the coffee beans, and helped us troubleshoot when we were tinkering on our own until we managed to make the best shot we could get on a home machine. Instead of saving money, we now roll out of bed, make our *first* espresso at home, and then walk to Sapor for their liquid magic. And baby, it is SO worth it.
