Roman-Style Al Taglio Pizzeria Opens in to Park-Ex | Eater Montreal

"Roman-style al taglio (by the slice) pizza has made its way to Park-Ex with the opening of Segreta on the relatively industrial Beaumont Avenue strip last week. Owner and pizzaiolo Richi Ourichian is effusive about the rectangular pan pizza style—characterized by a crisp yet tender crust, interspersing air bubbles, and a thickness designed to sustain virtually any topping combination—and insists “it’s all about the dough,” calling Roman pizza “a canvas you can put anything and everything on.” He offers half-meter slabs studded with toppings like spicy Italian sausage, diaphanous potato slices, smoked caciocavallo cheese and a drizzle of extra-virgin olive oil; the pies are baked in large rectangular cast-iron trays and artfully displayed alongside a small selection of Italian grocery items (imported organic pastas, Calabrian dried rosemary) in his 900-square-foot corner space on Hutchison. A local resident since immigrating in 1978, Ourichian left a long career in shoe cobbling and began seriously baking during the pandemic—posting to social media and making some 200 pizzas in two months—before opening his first restaurant. He uses a drawn-out cool fermentation of 72 to 96 hours for a high-hydration, airy yet sturdy crust that he says is easy to digest (“when you eat our dough, you won’t bloat...you’ll digest it in 30 to 40 minutes”), a technique he learned in 2019 at the Roman Pizza Academy in Miami under Massimiliano Saieva. Segreta Pizza is truly a hidden gem in Montreal! Their pizzas are soft, flavorful, and cooked to perfection. I tried the Margherita, Giardiniera, and Funghi pizzas — the Funghi was hands down my favorite. Since most of their meats are pork, I went for the vegetarian options and added burrata cheese with a spicy honey drizzle — absolutely phenomenal! Prices are fair for the portion size, and the quality is top-notch. The only downside is the small space — it gets crowded fast, so takeout might be the way to go. Definitely one of my new favourite pizza spots in the city!

This place came highly recommended, so expectations were pretty high going in. It’s mainly a takeout spot with a few window seats available. The menu is small but well-curated. We went with their Roman-style pizzas—one classic pepperoni and another with burrata cheese and hot honey. It might sound like an odd combo, but it actually works really well! The pizzas were delicious overall, though I found the pepperoni a bit on the salty side. I personally lean more toward Neapolitan-style pizza, but my date absolutely loved it.

Tried their pepperoni slice since that’s what everyone seems to recommend, and also grabbed a sandwich with arugula, mortadella, and cheese. The crust on both was light, airy, and crunchy. After eating both, I felt full but not heavy or greasy—even after those oily pepperoni cups. The pepperoni slice had way more flavor; the sandwich was decent but kind of flat. They’ve got a bunch of other options I’d like to try next time. Nice vibe inside—Italian music, merch on the wall—and the neighborhood’s great, with two parks nearby if you want to sit and eat outside.

Our first time at Segreta! We ordered 3 different slices: - Amatriciana (7/10) - Pepperoni (with added burrata and hot honey for $5) (9/10) - Funghi (9/10) - Dulce De Leche donut (8/10) The mushroom/funghi pizza was definitely our favourite for sure! I loved the options for pastries/desserts which is great for a sweet tooth. I would definitely be back for another visit.

It is a great traditional Italian pizza place. I tried Margherita pizza and mushroom pizza and they both are just amazing. I really enjoyed the food here. The place is a bit small and crowded. It is more like a take-out place.

Tried a mix of slices and they were all delicious . Dough was super crisp, and you can taste the quality in the ingredients. The margherita and mushroom ones were my fave—fresh, flavorful, and just right. Pepperoni had a kick, a bit too spicy for me, but still tasty. Tomato sauce was on point. Would definitely go back for more.

We decided to try Segreta Pizzeria after seeing it all over Instagram ,it looked so good that we made the trip from Laval to Montreal just for it. The pizza was definitely tasty and very fresh. We tried the one with pepperoni, fresh mozzarella, and honey. It was good, but I barely tasted the honey, which was a bit disappointing since that’s what makes it unique. Still, it was delicious overall. We also tried two other kinds, which were solid as well, though I definitely preferred the first one. The ambiance was nice, and the food lived up to being good, but honestly, it felt a bit overhyped compared to what we saw online. One small comment , the cashier spoke very little French. It wasn’t a big issue, but worth mentioning for those who might expect easier communication. All in all, it’s a good spot with fresh and tasty pizza, but maybe not quite as mind-blowing as social media made it seem.

Great pizza. The dough is what makes it. It is light and not heavy. The pepperoni burrata pizza has gone viral but their sausage and potato pizza is also great. You can’t really go wrong here.

Hands down the best pizza in Montreal. Visiting Segreta was like going back to Rome. Authentic pizza al taglio (served by the slice). Very limited seating and it gets extremely busy on the weekends so plan accordingly! We tried the pepperoni with fresh burrata and hot honey. I mean do I need to say more? Absolutely incredible. You gotta come visit!

I stopped for an esspresso and canoli, which was very fresh and the coffee truly Italien, not 3rdWave-sour, thankfully. My only criticism is the card-only method of payment, which is problematic and i would add, unethical (not everyone has plastic, or the means to pay with plastic.e.g. the homeless, children from low income families.) Also it enriches the banks and credit card companies. 2nd criticism: I was not asked if my order was to eat in or to take away. My order was packaged to go, but I didn't want to take it to go. I don't order food to go as a general rule in order to avoid creating garbage. Because of the no-cash accepted I won't be returning. Sorry Segreta. Make cash an alternate payment method and you will gain more loyal customers. Otherwise, i will not be recommending this establishment.

Best pizza in Montréal, hands-down. I unfortunately wasn't able to photograph the other slices, but they were even better than the pepperoni (very pepperoni forward, but you know that getting into it). The best slices were mushroom based and did not have cheese. These stole the show. The mushrooms had a great sort of like savory marinated pop to them, and the crust was heavenly... very doughy on top, almost like the underside of a flour dumpling but with a nice light and fresh tomato or oil sauce. And then when you bite into the crust a bit more it gets pleasantly airier and drier with almost like a lightly cooked grill cheese sandwich crunch at the end. I'm just realizing this now, maybe these ones without cheese were vegan? I'm not vegan, but these still rank as some of my favorite slices of all time. Beware that this is not your traditional pizza, it is more artisan and creative, rotating menu, etc. I didn't try the cannolis, but the doughnuts were a bit stale. But don't worry about that... come here for the pizza!! BEST PIZZA IN MONTREAL

Lovely gem in Parc Extension serving Roman style pizzas. I stopped by today to order a box and they ran out of pizza as they are a victim of their own success. They sell by the slice or by the box but best to pre-order. Although I didn't have the chance to taste their pizza, I had the chance to taste their cannolis and they were great. Staff was extremely friendly and kind. Really looking forward to passing by soon and trying their pizza. Stay tuned for more :-)

If I could I would give 0 stars. Unfortunately the quality of the pizza just doesn't cut it. Whoever served us gave terrible service. We asked to have some spicy oil and he told us we had to buy it?? What kind of pizza place doesn't give spicy oil along with their order? There wasn't a garbage in sight. So we had to give him our trash before leaving. I tried two kinds of pizza one was the onion pancetta and the other one was a mushroom pizza. The mushroom pizza had absolutely no taste - what did I pay for? Other slice was OK but really nothing to rave about. I don't know how this place is still in business but avoir at all costs. Complete waste of money and time. We went at the end of the night and all the pizza was still there - feels I felt like they had not even sold a slice all day the pizza looked old and rotten

Good pizza. I got the pepperoni and the truffle mushroom. The pepperoni was the better of the two in my opinion even though I normally prefer truffle mushroom. The pepperoni was slightly spicy and the tomato sauce was flavourful. The mushroom slice was unfortunately lacking in truffle flavour. The crust and cheese were both decent.

This must be the most overrated pizza place in Montreal. I can name 20 places with much better pizza off the top of my head . I bought 2 whole pizzas right out of the oven... 1 pepperoni and 1 cheese with sauce and olives ... they charged me by the slice ... not by the pizza. $150.00 for 2 pizzas (yes you read that correctly) .... this is an overpriced rip off. If it was amazing Ok but it nothing other than mediocre... soggy dough, gross location and very arrogant staff. This is another example of an overrated social media driven phenomenon... lots of bells and whistles but no substance. There is better pizza in a food court ... this pizza was served at team sporting event ... other people brought Dominos and Il Focalio pizza .... The only pizza left over was yours. The prices you are charging are absolutely outrageous for an average but much overhyped product. Hopefully Dave Portnoy will never visit you!
