The dining room at this joint is industrial, clean, and dark. I just ordered my first slice: pepperoni, red sauce, mozzarella and ricotta cheese. It's almost 10 pm and it's quiet here. I was told by the friendly guy behind the counter that they stay open till midnight, then on weekends until 3:00 a.m.
5 minutes later... The huge slice just arrived on a tray covered with a sheet of wax paper. The slice is bigger than my head. This could be a practical joke; where's the camera crew? It is easily the equivalent of three slices from a competitor. Even though this is New York style, I'm afraid I have to start with a plastic fork and knife because it's too big for me to hold.
The first bite of this thin-crust marvel is toasty and I look forward to the next.
2 minutes in and I have devoured half of the slice, the smaller half, so about 1/3rd of the slice. It's time to fold it and do a proper New York style pizza test.
The red sauce is good, but to me a little plain. It could use some garlic, perhaps, or a little more pepperoni. I wonder what my experience would be had I chosen the roasted garlic alfredo sauce, which is the only other sauce available if you're just getting a slice. Ricotta cheese is soft and tends to neutralize flavor, maybe ? I think I think should have just chosen mozzarella. Or mozzarella and Parmesan. Yes. This is a texture issue with the ricotta. That is my fault. They made it the way I ordered it. Forgive me, I'm from Texas. I don't know any better.
I almost forgot the dipping sauce. I opened it and enjoyed dipping it with the end of the crust. All's well that ends well.
Overall I'm impressed. I'll be back soon to try another slice.
