Interview: Michael Hill Smith MW on the evolution of wine - SilverKris

"Established in 1989 with his cousin Martin Shaw in the Adelaide Hills, Shaw + Smith was founded on a principle of sustainability that Michael Hill Smith has carried throughout his winemaking. From the start he emphasised respect for the environment, reducing one’s footprint and leaving vineyards in better condition, and he produces notable chardonnay under the Shaw + Smith label — a variety he highlights as one of Australia’s most interesting, now being planted in cooler sites and made with less new oak to achieve a bright acid line, a complex core of flavour, and refined intensity and length on the palate. Hill Smith also stresses that a good wine must be free from fault while showing a sense of place, distinct personality and individuality." - SilverKris

Shaw+Smith has always been one of my absolute favourite wine selections when hosting events, and being a Brisbane girlie on holidays in the Barossa I couldn’t give up such a wonderful experience and visit the winery itself! From the walk up the path with manicured lawns and gorgeous vista, to the meticulous eye for detail in every aspect of the outdoor and indoor tasting settings you simply felt welcomed and made feel valued and important! The staff were attentive and friendly with bountiful smiles and super knowledgable about their wines and tasting selection! I couldn’t resist, I bought the Shaw+Smith artwork to feature back home in Brisbane, the tote bag and of course a selection of divine wines! A must visit for those who enjoy memorable gems! Thank you to the team!

Our visit to Shaw + Smith was incredibly upsetting. We arrived as an Asian family group looking to browse and purchase some wines. From the moment we walked in, the host lady made us feel like an inconvenience, showing zero interest in serving us. When we went to the retail area to look at the wines, the male manager (or senior salesperson) was just as dismissive. When we asked about the wines, he responded with a visible frown and an air of arrogance that felt deeply discriminatory. It was clear they did not value our business. While a kind salesperson at the counter told us it was fine for some of our group to sit for a moment while others finished buying wine, the host lady became extremely pushy. She told us we had to leave immediately because the table was 'needed for a booking right now.' However, as we walked out, the table remained completely empty. It felt like a blatant excuse to get us to leave. This experience was marred by what felt like clear racism and a complete lack of basic hospitality. We will not be back and hope management addresses the behavior of these specific staff members.

We had Will walk us through the tasting and he really made our experience. He tailored his knowledge to ours and seemed like he had a genuine passion for wine. We already loved Shaw + Smith wines (plus the other brands) but more so now. Their M3 Chardonnay is killer, the rest of the wines are also top notch. Will be back next time we are in South Australia for sure 🙂

Shaw + Smith was such a lovely experience from start to finish. The setting is absolutely beautiful – panoramic vineyard views and a modern, relaxed vibe that makes you want to linger all afternoon. The wines were fantastic. I especially loved the rosé – crisp, refreshing, and perfect for the sunny afternoon. The tasting was well-paced and thoughtfully curated, with each wine introduced by the friendly and knowledgeable staff. The food was just as impressive. The goat’s cheese with honeycomb was a standout – such a clever pairing – and the burrata was unbelievably creamy and fresh. Everything was beautifully presented and full of flavour. Great service, gorgeous scenery, and top-notch wine and food – definitely a must-visit in the Adelaide Hills!

Visited Shaw + Smith for a tasting and the best part of the whole experience was chatting with Tristan, who was extremely knowledgeable and, being from the area, proud to share his expertise, which he did in an accessible way for us semi-novices. He made us feel very welcome and his sense of humour went a long way! We went there for the Sauvignon Blanc but we enjoyed all of the wines on offer in the tasting, particularly the Riesling. Thanks Tristan for making our afternoon an absolute pleasure!

We had a wonderful tasting with snacks during our visit to Shaw + Smith. We chose the classic wine flight and enjoyed all the wines, as well as our selection of cold larder (burrata, duck rillette, and bresaola). We were seated with beautiful view over the vines and the staff were knowledgeable, friendly, and attentive. We visited on a Sunday and it was busy so highly recommend booking.

Amazing wine, possibly the best of the Hills with engaging staff set in a stunning location. A must visit.

Google
Shaw + Smith is a step up in the wine tasting experience. I would like to leave my very special thanks to Will from the Cellar Door which beautifully welcomed us, managed to get us a tasting time when the times where sold out when I explained Shaw + Smith is my wife's australian favourite wine and during the tasting immersed ourselves through the notes and aroma of high quality wines. Will also provided suggestions of places to visit which we followed and it was everything we needed while in Adelaide for the weekend. Great wines, beautiful space and friendly staff. That's how I would describe Shaw + Smith.

Yelp
A lovely place for wine tasting with a bite to eat (charcuterie platter). They were friendly with our kiddos and the ambiance was relaxing and easy.

Yelp
Aloha, as we ubered through the Adelaide Hills wine-tasting, our last stop Shaw & Smith. We've had these wines before so were happy to sit down for a small charcuterie platter with our wines, nice. We did 2 tastings of the higher end & regular, both were very nice. A beautiful modern building, so nice to sit & sip looking out over the hills of vines. I felt so happy & peaceful here. An absolutely beautiful setting. Mahalo

Yelp
Great overall experience. You actually pay for a wine tasting here, but around $18 gets you a "flight of 5 wines", paired with 3 local Adelaide Hills cheeses in a nice sit down restaurant setting. We came on a Saturday in autumn and didn't book. Friends have booked a private room here. Both excellent experience. Again, a fairly small winery, great tastes, friendly and knowledgeable staff. And a lovely view!

Yelp
There's no denying that I love Shaw & Smith's M3 Chardonnay, so to go and drink it at the source was a highlight of a recent trip to the Adelaide Hills. I knew in advance of the $15 tasting fee, which was okay by me because I then knew I wouldn't feel obliged to buy something. I normally always buy something at a tasting, as I visit places that I'm sure I will like and that will offer a selection that I can't buy at my local bottle shop. In the case of Shaw & Smith, I can buy the M3 just about anywhere so I knew that I wasn't going to buy any there and that the other variatels probably wouldn't rock my world as much (related note: I was surprised to hear that Shaw & Smith sell mostly Sauvignon Blanc! I believe the said he made for 70% of their sales) At $15 for a generous tasting of four wines matched with cheese this is a great afternoon snack stop. They're pretty flexible if one of your party doesn't want to taste the full range or is driving. What really sets this tasting experience apart is the gorgeous view. From the moment you arrive, you can set your peepers on rolling hills, carefully manicured lawns, vines and a lake filled with birds. The walk up to the tasting room feels like a procession and to be greeted warmly when opening the door was great. Inside it's all very clean lines, almost clinical, but I liked it as an alternative to the ramshackle wood and rustic charm that we normally experience at cellar doors and enjoyed the minimalist setting for what was a relaxed tasting.

Yelp
Great winery would definitely recommend a stop in here. $15 for a taste of 4 wines (Sav Blanc Chardonnay Pinot and Shiraz) with some very yummy cheeses or $10 without the cheese. Great view as you sit to taste. Very good wines too. A great experience and well worth the price.
