From the start he emphasised respect for the environment, reducing one’s footprint and leaving vineyards in better condition, and he produces notable chardonnay under the Shaw + Smith label — a variety he highlights as one of Australia’s most interesting, now being planted in cooler sites and made with less new oak to achieve a bright acid line, a complex core of flavour, and refined intensity and length on the palate.
