"Established in 1989 with his cousin Martin Shaw in the Adelaide Hills, Shaw + Smith was founded on a principle of sustainability that Michael Hill Smith has carried throughout his winemaking. From the start he emphasised respect for the environment, reducing one’s footprint and leaving vineyards in better condition, and he produces notable chardonnay under the Shaw + Smith label — a variety he highlights as one of Australia’s most interesting, now being planted in cooler sites and made with less new oak to achieve a bright acid line, a complex core of flavour, and refined intensity and length on the palate.
