"When a typhoon wiped out the garden behind fashion designer Ronald Villavelez’s atelier in 2021, he decided to build an immaculate white dining room in its place. Today, Sialo hosts couples celebrating anniversaries and solo diners pacing themselves through one of the 13- to 29-course menus split into five “acts,” representing everything from seafood to staples of rural food culture. Dishes spotlight uncommonly used ingredients and crops, presented the way you’d encounter them in nature. For example, the humble takyong (local bush snail) sits on rocks and dirt made up of heritage grains like tinigib, a regional white corn, and kabog, a variety of local millet. That means you don’t have to fiddle with your fork to figure out what’s edible or not. The warm, near-whispered service makes the room feel like a small sanctuary, and from your seat, you have a full view of the kitchen where chefs prepare each course with a kind of careful reverence." - Chandra Joshua

I honestly came in expecting the food to be just okay - but wow, was I wrong. I was blown away by how beautifully each course was crafted. Every bite was a clever balance of flavors that delighted the palate and stirred up cherished memories of childhood meals. Despite the fine dining setting, the ambiance was relaxed and comfortable. We felt at ease, free to forget about everything else and simply savor the gastronomical journey unfolding before us. The staff took such thoughtful care in serving and explaining each dish, adding even more meaning to the experience. Our dinner lasted about two hours, and it was time - and money - truly well spent. We have absolutely no regrets choosing Sialo to celebrate our 13th wedding anniversary. If anything, we’re grateful for the 13-course journey that mirrored our marriage so far: rich, surprising, and deeply fulfilling. Thank you, Sialo, for making our anniversary extra special - definitely one for the books.

I am a Filipino who does not like Filipino food because I find the flavors too boring, one dimensional and overpowering. Sialo is the first thay truly serves authentic Filipino flavors with delicate balance and finesse. I have always hated utan bisaya for it's ve4y overpowering taste, slimy soup, and the crazy amount of vegetables in a bowl that really adds to the poor texture. We had the 19-course dinner and if it wasn't part of the menu, I would never have ordered it. It was easily the beat utan bisaya I have ever tasted. The flavor is authentic but the balance, the texture, the presentation was just perfect! All of their other food screamed perfection on a plate. Sialo set the standard in terms of how Filipino food should evolve!

First we really appreciated the vegetarian menu and the very friendly staff. Some of the dishes were great in taste but some really weren't - most of the time they looked better than they tasted. Overall it was a beautiful demonstration but not really worth the price..

Average food, inconsistent service The food at Sialo was okay overall. However, staff attentiveness was generally poor and inconsistent, which affected the dining experience. The only exception was one male waiter who was attentive and professional, and we appreciate his effort. Unfortunately, the rest of the service did not meet expectations. With more consistent service standards, this could be improved, but as it stands, the experience felt underwhelming.

It exudes a certain elegance, though the reception could benefit from a more refined greeting to set the tone. On the other hand, the service was impeccable—attentive, professional, and thorough, elevating the overall experience. We indulged in the Handurawan Hak-ab, a 13-course tasting menu. With a name like Sialo and a bit of research, I anticipated a celebration of local flavors. While some dishes certainly delivered on this promise, others veered in a different direction. I particularly appreciated their modern interpretation of SuTuKil and Bistek, which showcased both creativity and respect for tradition. However, not all the courses made a cohesive impact. For instance, the shrimp paired with mango and passion fruit sauce leaned heavily into dessert territory—too sweet for an entrée, leaving a strange impression. The menu, as a whole, is a bit of a hit-or-miss experience, with the entrées standing out as the highlight, followed by the desserts, and the appetizers trailing behind in terms of excitement. The cocktails and mocktails, however, were nothing short of spectacular, complementing the meal wonderfully. This place isn't for the faint of heart or picky eaters—its adventurous take on Filipino cuisine is certainly for those willing to step outside their comfort zones. As for whether it deserves a spot in The Michelin Guide, I would argue it does. The chef's bold approach to reimagining local dishes speaks to a level of creativity that warrants recognition, especially for those food adventurers seeking new, exciting flavors. Is it worth the splurge? Our total bill amounted to over 12k, and while there are undoubtedly more affordable options where you can savor a meal just as enjoyable, I don’t regret the experience. Sometimes, the journey of culinary discovery is worth every peso.

The experience at your restaurant was just out of the world, and just the best restaurant i've ever been so far. I was full of my heart as well. I am so glad I chose to come to you as a last dinner in Cebu to feel the Cebuano cuisine with such an amazing philippino hospitality. I lost my words for each the dishes. My favorite dishes were nasaag sa kalasangan with egg fruit as it was well balanced of sweet, creamy and salt, and the taco with jack fruit... it was my best taco ever. I also love the fake peach mango egg yolk on the spoon🥄 just so many flavors in this course. I felt I was exploring the Cebu in just one night. So grateful for all of chefs and waiter/waitress for the best efforts. As I'm also a chef , this experience really inspired me. Just wanted to say thank you🙏♥️🤌🏾

We had an incredible experience. My partner and I decided to try this place out as it was on the top of our list of upcoming restaurants in the Cebu food scene. It didn't disappoint. The food is well thought through, they extract flavours naturally from local products of the Philippines, even included ingredients I completely forgot about because they have become less and less common. Even many of the more mainstream flavours tasted subtle and delicate because the cooks at Sialo make many components completely by scratch, fermenting them with time, attending to them when needed. I went through a journey of nostalgic Filipino flavours but at an elevated level and was well worth the price. The restaurant is situated behind a house, the entrance is an experience in itself, we questioned it but it brought us into a beautiful extension of the house that becomes the restaurant. It was like you were entering a speak easy, something only insiders knew about. It was quite special and we learned that the reason being was because the chef wanted to use the space for his passion of cooking after a super typhoon hit Cebu. We cannot wait to come back with more of our friends, we would send more visitors over their way and don't hesitate to make a reservation. The chef and staff work very hard and you can tell how passionate they all are, we wish you all the best!

It was a great discovery of this hidden treasure restaurant - Sialo Cebu. The restaurant is like a culinary school, from kitchen staff to servers, everyone is trying to practice their best knowledge learned from the school to their customers. I did not know that the Philippines traditional foods can be this delicious and elegant. The taste and the presentation was impressive. We also had a bottle of German Riesling from Mosel, it complimented the entire course meal. Highly recommended.
