We recently enjoyed an 8-course dinner at Signature Bangkok. We had a wonderful evening with delicious food. The staff is super friendly and explains the ingredients and how each dish was created. They really put a lot of care into it. It's striking that several ingredients come from France, but the overall experience is a mix of local and French ingredients. The flavors are delicious, and the overall experience has been well thought out. We opted for the 8-course dinner, but even a 5-course meal would have been more than enough. However, we do find the menu a bit pricey for an Asian restaurant. For the same price, you can enjoy a 7- or 8-course meal in a Michelin-starred restaurant in Europe.
That evening, we were the only guests, which we found a bit disappointing. Nevertheless, the service and the food were good.
However, for a Michelin-starred restaurant, we did find a few things disappointing. They have an open kitchen, which is a great idea. Make sure that if the kitchen isn't open yet, guests don't have to listen in on the chef's FaceTime call. That doesn't belong in a restaurant, any restaurant. Chef Thierry should also be focused solely on the preparation during the meal and not visible on their phone. Do that behind the scenes, or simply don't do it at all. Of course, things can sometimes fall over; that's human. But don't take too many risks when bringing tableware and cutlery.
One dish was missing an ingredient. We reported this, but they didn't do anything with it, which we found a shame.
If you don't use the accompanying wine menu, nothing else is offered. They could have accommodated this by offering something else. In this case, we had to ask for it ourselves.
Finally, we found it a shame that the chef didn't come to the table himself, chat, and then leave before the last dishes were served. He also clearly told his staff that. If you're the face of the restaurant, you stay until the last dishes are finished.
Despite the feedback above, we had a wonderful evening and would recommend dining here if you want the Michelin experience.
