Overall I would avoid this restaurant.
The food did not taste bad but the “food science” only seems to detract from the food. You can tell the chefs have talent but the purées and imagined style brings down rather than elevates each dish, the food was too salty, heavy, and over sauced.
The presentation is the highlight of this meal, but I can’t taste with my eyes. Though when you realize a lot of the dishes are upside down bowls and cups it just cheapens the experience.
While not bad, when paying over 125 euros per person (without drinks), I just expect a higher standard. With so many amazing restaurants in Amsterdam, you’re better off eating elsewhere.
P.s. - the staircase down to the bathroom is an accident waiting to happen. If you do the wine pairing be careful or you’ll end up in the hospital
