The 26 Best Restaurants in Panama City | Eater

"The renowned gesha coffee variety, originally from Ethiopia, has found its ideal terroir in Panama’s mountains, solidifying the country’s status as a producer of some of the world’s finest beans and inspiring a wave of specialty coffee shops across Panama City. Among them, Sisu Coffee Studio, located in a colonial-era house in Old Town, stands out as a trailblazer. Owned by the Lamastus family, who are also coffee farmers, it combines Nordic-style furniture with the charm of original adobe walls. Meticulously brewed pour overs and bold espressos feature various bean varieties, and the shop hosts immersive cupping sessions." - Jorge Chanis

Plan a Trip Around Panama's Geisha Coffee

"Sisu Coffee Studio, located in Panama City’s Casco Viejo, is a sophisticated café modeled after Scandinavian cafes. Opened by the Lamastus family, the studio offers pour overs of Geisha coffee and tender pastries from chef Ariel Zebede. Visitors can also book a cupping class, the coffee equivalent of a wine tasting." - Lauren Mowery

Everything was incredible. You must try the geisha pour over. A real specialty coffee. The melted cheese also was good. The service was great.

Nice minimalist coffee shop to try the Panamanian Geisha coffee. At Sisu, they have it here for $10 a cup. The coffee has a slightly bitter, sour favor profile. While originally from Ethiopia, Geisha coffee's fame is largely tied to its rediscovery and cultivation in Panama, particularly in the Boquete region. Geisha coffee plants are notoriously difficult to cultivate, with lower yields and a need for specific high-altitude growing conditions. This rarity, combined with its exceptional quality, leads to its high price. Uodate: after drinking this cup of coffee, it made me want to poop. So it's great for those who may be constipated

Extremely good coffee. My cappuccino was full of flavour, They used the geisha bean and both the aroma and texture were exceptional. It’s very modern, trendy and comfortable inside. The atmosphere is calm and relaxed. The staff were very welcoming and friendly. Highly recommended! 😊

Best coffee we had all week. Snacks were tasty. Staff was helpful. The space was big with a lot of seating. Beans are a fair price as well and taste just as delicious at home!

Siru strikes a distinct tone with its minimalist ambiance—clean, calming, and intentionally curated. That same ethos extends to their selective menu, which I appreciated. It reflects confidence in doing a few things well rather than overwhelming with choices. Taking the lead from others’ recommendations, I ordered the Geisha coffee and the cinnamon croissant. Both delivered. The Geisha, in particular, had a smoother finish than previous versions I’ve tried—delicate yet complex, with a subtle elegance that lingered. Their attention to presentation deserves a nod. From the way the coffee was served to the plating of the pastry, everything felt intentional and thoughtfully done. Overall, Siru is a place for those who appreciate quality over quantity, both in environment and offerings. A refined stop for a mindful coffee break in Casco.

Overpriced coffee, which wasnt tailored to our taste. Very bitter and sour taste profile. Im sure other people like that, but we didnt. The waffle was way overpriced, dry and old. Not worth 10 USD. Im sure its a great quality spot, but we might have caught them on a bad day.

The geisha coffee was too strong for my liking compared to the regular pour over which was good. The brioche grilled cheese was delicious but the earl grey waffle was dry and the cappuccino was ok. The chocolate babka was good as well.

If you are looking for some good coffee, definitely the place to go! Their pour overs are exceptional
