The 26 Best Restaurants in Panama City | Eater

"The renowned gesha coffee variety, originally from Ethiopia, has found its ideal terroir in Panama’s mountains, solidifying the country’s status as a producer of some of the world’s finest beans and inspiring a wave of specialty coffee shops across Panama City. Among them, Sisu Coffee Studio, located in a colonial-era house in Old Town, stands out as a trailblazer. Owned by the Lamastus family, who are also coffee farmers, it combines Nordic-style furniture with the charm of original adobe walls. Meticulously brewed pour overs and bold espressos feature various bean varieties, and the shop hosts immersive cupping sessions." - Jorge Chanis

Plan a Trip Around Panama's Geisha Coffee

"Sisu Coffee Studio, located in Panama City’s Casco Viejo, is a sophisticated café modeled after Scandinavian cafes. Opened by the Lamastus family, the studio offers pour overs of Geisha coffee and tender pastries from chef Ariel Zebede. Visitors can also book a cupping class, the coffee equivalent of a wine tasting." - Lauren Mowery

Very small portions and quite overpriced, though understandable as it’s in Old Town, a popular tourist area. We got the Nutella bread, coffee roll, and the cinnamon square toast. The toast was the best but so so small and was gone in a few bites. We also got their famous geisha coffee, which was 10 PAB, and a matcha latte for fun. The matcha was regular, not bitter at all though. Their coffee was also a small portion and tasted very light, almost tea like. I would not likely order it again because I don’t get the hype, but some may enjoy the light aroma. Another thing to note that was quite annoying was that they were out of ICE! As a coffee shop, this is unreasonable. Overall the food was pretty decent but everything was so expensive considering the portion sizes.

Aesthetically phenomenal spot. But $10 for a geisha pour-over, personally I just can't justify the value. It was good, don't get me wrong...just wasn't that good. There are other places you can get geisha pour-over for less. Note: they are a NO-Cash business.

Pretty interesting coffee studio, went there to try the Geisha, and it didn’t disappoint. I don’t usually drink pour overs, but it’s definitely recommended for Geisha beans. One small downside for me was they don’t have any stickers for the coffeeshop; as a traveler, I love collecting them. They also don’t sell their Sisu cups, which look really cool. I know it’s not really a rating factor, but just something the owners might want to consider.

Google
Nice minimalist coffee shop to try the Panamanian Geisha coffee. At Sisu, they have it here for $10 a cup. The coffee has a slightly bitter, sour favor profile. While originally from Ethiopia, Geisha coffee's fame is largely tied to its rediscovery and cultivation in Panama, particularly in the Boquete region. Geisha coffee plants are notoriously difficult to cultivate, with lower yields and a need for specific high-altitude growing conditions. This rarity, combined with its exceptional quality, leads to its high price. Uodate: after drinking this cup of coffee, it made me want to poop. So it's great for those who may be constipated

Everything was incredible. You must try the geisha pour over. A real specialty coffee. The melted cheese also was good. The service was great.

Chic shop with excellent local coffee. Granola bowl and house-made sourdough are excellent as well.
