Sixty Vines Partners With Ridge Vineyards to Sustainably Keg Fine Wine | Eater Dallas

"A wine bar built around kegged wine and sustainability, it keeps 60 kegs on tap (each keg equals about 26 bottles) to reduce bottle waste and make wine-by-the-glass more approachable. Founded by Randy DeWitt and opened in 2016, the concept moved from inexpensive house wine to curated, better-known labels after the current CEO began courting notable vineyards in 2020; the chain now averages about 315 kegs consumed per week across its locations, saving roughly 8,000 bottles weekly (about 425,880 bottles a year). Its roster includes an exclusive kegging partnership with Ridge Vineyards—whose head winemaker confirmed the kegged pour tasted true to the house—offering Ridge’s Three Valleys blend by 2.5-ounce ($10), 6-ounce ($20), 8-ounce ($30) pours or a full bottle ($98). The operation also collaborates with producers such as Sesenta Cava and importer Olé & Obrigado, and pursues upcycling efforts by converting used bottles into glassware, candles, and water bottles. We tried sixty vines today on a Friday afternoon, and LOVED the service, atmosphere, food and drinks. The espresso martini was top notch; I enjoyed the espresso (or chocolate?) salt on the foam. We indulged in everything we wanted and the bill was surprisingly reasonable: drinks, apps, the pork chop (the best we’ve ever had), and dessert. They validate parking for the nearby garage, and they have the most gorgeous seating arrangement. We’re definitely going to have to return soon for dinner.

I recently spent two weeks in Charlotte for work and in the two weeks I was there I ate a LOT of great food. I ate at Sixty Vines TWICE because it was phenomenal. I dined with coworkers and we all agreed it was one of the best meals we’d had in the city. Our server TJ (both times!) is a sommelier and made excellent wine recommendations based on our food choices and wine preferences. He gave honest feedback about menu items and when he tells you the pork chop is a 10/10, believe him. The filet was excellent as well. Between the visits we had a charcuterie board and the burrata with prosciutto for appetizers. Both were great. We also tried 3 desserts. They were all excellent as well but the affogato was my favorite. The GM Robb visited our table to ensure everything was great and we couldn’t have been happier with both of our dining experiences. I can’t wait to have one open closer to me so I can go more often! Until then, it will absolutely be on my “must visit” list when I’m in the Queen City!

Wonderful oasis in the center of Charlotte. The food was fresh and flavorful but needed just a pinch of salt to finish. Service had some kinks but were smoothed out very quickly. KC the manager was amazing.

Snagged a last minute reservation early in the evening and my guests loved it. Great selection of wine, all on tap and available for small pours. Food was delicious, will definitely be back!

Food was amazinggg! I loved the roasted chicken. It had a hint of spice and I never knew chick peas could be so flavorful! Even the burrata and pesto.. I’d go back simply just for that. Service was good, our waitress was very sweet and choose every single wine for our flights! Restaurant overall was very pretty, well lit and gave a nice grown kind of vibe.

This was our first visit to this establishment. The food was delicious and the place was buzzing with other parties…even prom dates. We had the salmon with broccolini and truffle fries. The four of us enjoyed our time there. Our server, Frankie was engaging and knowledgeable about the menu items. Highly recommended!

I want to be as fair as possible here. Grayson, our server was great. He was kind, attentive and helpful. The atmosphere was also lovely. You’re able to sit outside or inside, it’s curated and they had no problems with us taking our time after eating which we all really appreciated. The food was a different story and to put it kindly, suspect at best. Three of the four of us ordered salads (pictured was the Caesar salad with chicken). This salad consisted of 4 lettuce leaves and this was a $20 salad. I was in utter disbelief. Another salad was soggy and wilted. If you want to come here for a drink and friendly staff, you won’t be disappointed but do not come here for the food. There are plenty of small businesses in the area with phenomenally talented chefs who will knock your socks off. This place is not it.
