The former Blue Ginger space looks more rustic and lived-in, and more private to boot, with seating spread out and private rooms now added. In addition to the bar facing the front windows, there are bar seats facing the kitchen, so if you enjoy watching the action, it's another form of dinner theater.
Burger: Dry aged sirloin and filet beef blend, loosely ground and cooked to the requested medium (I prefer medium rare, but was sharing). Despite the lack of pink (more due to the aging than the cooking temp), this burger was extremely juicy. The beef funk from aging was detectable but not as pronounced as in others I've tried. The feel of the burger was beyond reproach. Bacon strips, cheese, an offshoot of mayo, and lettice and tomato all did their thing without fanfare and without masking the beef itself. Served with fries (ordinary, possibly frozen) and coleslaw (excellent).
Bacon: A giant slab of pork a little taller than a computer mouse and about three times as long, very marbled and very bacony with hints of hammy thrown in. Very juicy, very fatty, but easy to pull the layers apart for optional discard.The macadamia nut butter and apple pieces as condiment were unobtrusive, letting the meat shine.
Ribeye: A large cut of dry aged beef, extra marbled, which means the best pieces will be fabulous but the worst pieces need careful cutting to avoid eating large gobs of fat. Worth it in the end, because there's still an enormous hunk of beef. This was all about the contrast: ordered medium rare, it had a very sturdy blackened exterior, pink hues a little further in, and a fully red, juicy center. Large flakes of salt provide ample seasoning.
Sides: Mac and cheese, brussels sprouts, and ginormous onion rings were all impressive, but the best side of all was the Yukon potatoes with garlic butter and diced bacon. Outstanding.
Service: Karen was outstanding, outlining the menu, making recommendations, and following up as needed.
Overall, a solid first visit. It's steakhouse pricing, so don't expect bargains by any means, but the apps and sides seemed reasonable. I'd definitely go again, adding it to a rotation of steakhouses that includes Morton's, the Palm, and Grill 23.
