So, I almost hate to review these guys because I hate waiting in long lines for bbq and it's just a matter of time before he has lines going around the block without any help from me. But here we go. This place has damn good bbq. Period. It will hold its own against Hutchins, Pecan Lodge, and quite frankly might best them because this pit master is not scared to show his skill by breaking tradition a bit and putting his own spin on his Q.
So, I have eaten here twice now. The bbq is legit. He serves his brisket sliced thickly, most places cant do this because their brisket is not tender enough. This brisket is tender, juicy, and flavorful enough that it would almost be shameful to use sauce on it. He slices it nearly an inch thick and it still pulls apart perfectly. Seriously, his brisket is on point and Im a bbq snob.
The ribs are outstanding and smoked to perfection. He has concocted a very subtle yet very flavorful cherry glaze. The ribs and that glaze are for real. Screw convention, I want more of those cherry glazed ribs! I started craving them again on the drive home. They are for real. Not the usual offering in Texas bbq but man they are good. And I love to see pit masters show off their skill by stepping out of the box every now and then. Simply put. The ribs are on point enough you will never forget them.
Mac and cheese is good! But what I really loved was the greens. Man those greens are good. I could make a meal out of those greens alone.
I write this having just returned from diner there. And Im already finding myself looking at the fridge where 4 more of those cherry glazed ribs are that I smuggled home. Seriously, they are that good.
