Solar powered coffee! During a 6 hour drive from Denver to Santa Fe, I asked Cassey if we could get some coffee since I was ready for some caffeine. We were in-between towns and Pueblo was the next one coming up so I got to googling and yelping real quick to see what was approaching. Solar Roast Coffee was the ideal candidate as it was just a bit off the interstate and it wouldn’t delay us too long. We pulled off the highway and grabbed an open spot a block up the road from the coffeehouse. Its hard to miss Solar Roast due to the vibrant colors and giant painted wall. We walked in to a friendly and welcoming atmosphere and were quickly greeted by the barista behind the counter. While Cassey was asking a few questions, I was oogling over the baked goods in the display case and scoping out there stickers available for purchase. I don’t remember what Cassey got but I got my usual americano and a snickerdoodle cookie. We decided to take a stroll around the area while we enjoyed stretching our legs and being out of the car for a few minutes. In this area of Pueblo, it seemed like a dying area held up by a few big businesses like Solar Roast but we felt safe since it was about 11am when we stopped in. The americano I got was pretty good! Its just espresso and water so it’s not too hard to make wrong but doesn’t leave a lot of room for flavor being added. Cassey said her latte was pretty good. I saved the cookie for the rest of the drive and it was gone about 2 hours later. It was good, too, if a bit light on the snickerdoodle flavor but that could be a regional difference. When going to type up this blog, I learned Solar Roast Coffee gets their coffee from roasters who use solar power. In this day and age of climate change, its really cool to have been able to support a business who is going against trends to bring us some cleanly grown coffee. If you find yourself in Pueblo and need coffee, Solar Roast is the place to go and helps keep your coffee consumption as green as possible.

Was getting service on my vehicle so thought I would find a place to get some coffee and a bite to eat while I waited. I walked a few blocks and found this coffee shop. Initially, I thought this was a great find. I ordered my coffee and a burrito and waited. I got my coffee pretty quick and sat on the patio waiting for my burrito. Some people were getting their food delivered and some people were getting called to the counter. Not sure what the difference was, but figured it would all work out. After about 15 minutes I asked a person behind the counter about my burrito. They just said it probably wasnt ready yet and went back to their business. Another five minutes goes by and I ask again. They just shrugged their shoulders and walked away again. Eventually, I was done with my coffee, they had a long line and I didn't feel like being dismissed again, so I just left. Hope someone enjoyed my burrito. Could have been a really good local place. I loved the atmosphere but the service was lacking. Great potential for a really nice place. I am from out of state so they probably don't care since I won't likely be a repeat customer anyway.

A cool little coffee shop in downtown Pueblo with a cozy interior, good coffee, but only average food. It’s a nice location, right next to a great bookstore and record shop, and has patio seating if the weather is nice. I enjoyed my coffee, but would have passed on the food for the price. The WiFi seemed to limit my access to a certain software I use for work, so might not be the best place to come if you’re trying to get some work done, but it is a nice spot to meet up with a friend or grab coffee.

Great work space, solid WiFi, and helpful staff. Drip coffee was ok but nothing to write home about. The alternative milks they use are all Silk brand (aka added sugars and such) so I skipped out on my usual latte. Got a bacon and egg croissant which looked bomb in the photos but lackluster in reality...2 pieces of not fully cooked bacon and one egg that looked like it might have been nuked in the microwave and not fluffy at all...I get that eggs are pricey now, but one egg barely covers half of any bread-vehicle. Making the sandwich mostly croissant. The saving grace was that it was a damn good flaky & tasty one. Decent spot when needing to get some work done while passing through, but not somewhere id go out of my way to try

Stopped in around 10am on a Monday. This was my second attempt visiting with the first being a no go due to no parking and not having time to circle the block on the one way streets. Although, the parking on main was full again today there was plenty of parking on 2nd street. I was greeted kindly and had my order taken upon arrival. Plenty of space for dining in with a nice cozy ambiance. I ordered a seasonal special, maple white mocha, which was excellent and served expeditiously. Will definitely be back to try their food offerings and other coffee drinks.

I'm so sorry, but I have to be honest--20 minute wait for a microwaved cinnamon roll..... I guess just operationally difficult??? We stop here every time we come through pueblo, maybe 8 times a year--we keep saying we're not going back but then we do. coffee is marginal HOWEVER-staff is awesome:friendly and accommodating. Anyway, take with a grain of salt-go check it out

Solar Toast is another one of my must-stops in Pueblo. They have a few locations, but this one is my favorite. It has an eclectic atmosphere and feeling to it. The staff is superb and the food is tasty! I generally get the tofu burrito. There are vegan, vegetarian and meat options so there should be something for everyone. And bonus - 10% off if you check in on Yelp or ride a bike!

Tucked away in a little corner not far from the convention center is a cool little coffee shop. I was in dire need of a cup of joe before all my conference meetings. The building is an old vintage structure that's being renovated on the outside. It's cool to see people still care about the history of old buildings and nostalgia like this coffee shop. There are a bunch of seating inside and there are accordion doors that open up everything to the fresh air & cool breeze. As soon as you walk in there is a nice little counter filled with pastries and breakfast burritos. Up on the wall is the menu with an assortment of foods and drinks. The servers are very helpful and assisting you with you food & beverage choices. I opted for the large Pueblo Mocha w/ oat milk. This is a fantastic morning drink w/ chilis and 4 shots. The following morning I got the same drink and two bacon breakfast burritos. They came with amazing green salsa and sour cream. They were really good too. They sell an assortment of coffee beans. They also have CBD infused coffee. If you are in town and want a good cup of coffee stop on in.

what a gem of a place in Pueblo! i really appreciated that they had their own coffee and i ended up buying a bag of the 'Solaris' which was recommended as i like to make cold brew at home. i was able to talk to friendly staff members who were knowledgeable about the different kinds of coffee that they have for sale. the location is nicely placed on a corner, making for a nice sized outdoor seating area. there was even a guy who set up our front and played guitar! such an inviting coffee shop that you could spend hours at (and we did!). the coffee was really good and the food was as well! i got the pesto sandwich, served on a perfectly flaky and delicious croissant. 100% this is my kinda place, i visit a lot of coffee shops and this is up there as one of my all time favs!

When in Pueblo, Solar Roast Coffee is the spot for a pick me up, caffeine jolt. I've been here twice now during various road trips and haven't been disappointed. According to their website, they are the world's only commercial solar-powered coffee roaster. Pretty cool, right? I encourage any coffee nerds out there to read the owners "about us" page to see how this phenomenon came to be! Like I said, I've been here twice and it's mostly been for quick pit stops. It'd actually be nice to sit in the cafe if I have the time. It's cozy, filled with locals and nice art on the wall. Baristas are very friendly and kind, working hard to fulfill orders quickly. Lots of organic coffee and pastries available (especially in the mornings). It's located on a quaint corner of Pueblo's downtown Main St. If you're passing through it's super close to I-25, so you're not making a huge detour if you're on the road. Freshly roasted coffee for the win! PS, rumor has it they have a shop in Colorado Springs, too!

Coffee is absolutely horrible. Can't really order anything else but black coffee or else you will basically get a cup of sweet milk. Food is great, breakfast burritos are good, bagels are good. Truly the only thing keeping me at 3 stars. Restaurant is very clean, very lively. Everyone is very nice and respectful.

We stopped by for breakfast. We each ordered a mocha (solar roasting the beans makes the coffee taste so much better and richer) and a NY bagel sandwich, both were delicious! They did make mine incorrectly the first time but the lovely staff immediately fixed it and there was no problem. Service was quick, the small shop was clean and cozy. It would be so much more fun to go in the spring or summer to take advantage of the patio with downtown views. Locally owned and when I'm back in Pueblo I will be there frequently!

Drinks were good. Their matcha tasted different from other matchas I've had, cortado was alright, real star of the show was the blueberry vanilla latte. Tasted so much like blueberries. I would recommend this place for the in house syrups. MUST GET THE BREAKFAST BURRITO. SO GOOD.

Came ALL the way down from Denver to Pueblo to get my first COVID shot today (oh boy, I had a hard time getting appointment(s) for it in my direct neighborhood and thus Pueblo!!) As soon as I strolled down downtown Pueblo and saw this cute cafe I realized it was totally worth my time and energy! The service is EXCELLENT at this store. The young lady who took my order was above and beyond. And the speed of service until my cappuccino was made was very fast. However, by the time I got my drink and sat down at one of the tables, there was a line of people who, all of a sudden, streamed into the shop. Did I draw the crowd or what?? This shop has a very open feeling as well. Since the weather is/was very nice outside, all the doors/windows are/were wide open. BGM (background music) is/was at the right volume which added to the overall ambiance to make the patrons feel comfortable. My cappuccino and blueberry scone were delicious. I will definitely come back here upon my second shot in early May. I now have a reason to look forward to making another field trip to Pueblo!

Super cute place. This is on a corner and lots of outdoor sitting. They also had a few tables inside too. the employee that took our order was super nice. I got the chai tea granita. She asked if I wanted nutmeg or cinnamon powder sprinkled on top. Uh yes! I got cinnamon. Thanks for asking!! We took our coffees outside and sat for a bit. It was delicious!!! we also spent time walking through the music shop next door. They have a few stores that are all owned by the same as the coffee place. I bought a vinyl and it happened to be on a first Friday sale! Score! We liked this little hidden gem. My fiancé finished his drink and then asked to finish mine since it was so delicious!

4.5 stars.I loved this cafe and will definitely come here more often. We got here on a Saturday morning and it was pretty busy! They have so many interesting choices of food and drink! Read the board because the online menu doesn't quite have everything. We got the New Yorker sandwich, a flat white and the Pueblo mocha with 2 shots instead of the 4. The sandwich was delicious! My friend and I shared it but honestly I wouldve eaten it all on my own! Croissants make everything better! The Pueblo mocha was definitely interesting. Not quite sure if I like the mix of chocolate, coffee and chili, but I liked it at the time. Def recommend coming here and enjoying the experience!

Sweet little shop in the heart of old Pueblo. I was traveling and wanted some great coffee for the road. I took a bit more time and found this great place. It literally has a buzz about it because as you park and get out of your car you realize that most of the people are headed to the coffee shop. I got a really good coffee to go and an amazing danish.

We had the spinach quiche and vegetarian breakfast burrito which were great (comes with a green salsa that was rather spicy and has a great flavor that works well with the burrito). Plan to come back to try their lighter roast.

We live in Denver and order bulk bags of coffee shipped to our house every few months. We've done this for years and it is awesome that Solar Roast offers that option! They recently had a considerable price hike (50% on 5# bags of beans means they are now $75 instead of $50), but this option is still more economical than buying individual 12oz bags at the grocery store. When we've been in Pueblo, we've visited the coffee shops and the service has never been great, but the downtown location is a quiet spot to read, listen to music or have a conversation. The south side location serves drinks scalding hot, and it really ruins the coffee. We're really just in it for the beans though and skip in person visits now that we know which coffee we like best and can order it.

Solar Roast, this place isn't just a run-of-the-mill kind of coffee shop a person just casually walks into, this is the future, and I gotta say, the future is lookin' bright! BUT I'll get into that a little later... FIRST THINGS FIRST! Solar Roast is located in the heart of Pueblo, literally right smack dab in the center and two things strike me initially based off of that: it's away from the huge influx of people that gravitate towards the Riverwalk and thats still fine for them because people go out of their way to come for their coffee which is saying something about the place already! I've been to both locations and they're both top notch and friendly places to come and enjoy your day at or pass on through. Take time to explore the neighborhood around here and admire the huge walls of art the city of Pueblo has to offer, it's truly a hidden gem of a city and I'll always take time to acknowledge that well deserved matter-of-fact. Speaking on the huge wall of art on the side of the building, notice that person in a chariot with rays sticking out of his head, leading a horse forward? Take a look at the bio on their website and you'll learn that's the sun god Helios which is the name of the machine that the founder's of Solar Roast created to not only roast their coffee, but to also power their business! This, my friends, is innovation at it's finest, and is why I have such high regard and respect for this business, they're really pushing the ceiling to new heights! Don't just take my word for it, check out the website for photos on the awesome Helios V they use to power their operation because to be very honest, it doesn't get more organic than using the sun which drives life on earth as we know it! Walking in on a bright, sunny, Sunday afternoon, you'll find people sitting outside enjoying conversation or inside with a nice cup of coffee, a newspaper for the local happenings of the week or one of the shops tasty burritos. Personally I've enjoyed the Sausage Eye-opener with a hot Caramel Latte for my Saturday breakfast starter and it was simply satisfying! They didn't burn the bread, the sandwich itself wasn't overly filling and settled nicely. Only thing I'd say would be bigger portions please! They also had some baked cookies I treated myself to and the latte had a good balance of sweet and caramel! I can't say I know really anything about wines but they do have their very own barrels to sell! Overall opinion, this is a great one stop shop for coffee, brunch, and studying. Highly recommend if you're in the area!

Popped in for a latte & it was the best hazelnut/almond milk beverage 8 have had.... outside of my own kitchen! Isaiah was so genteel and was happy to give us suggestions of things to do while we were in town. (Riverwalk, reservoir, thr Station...). The lemon bar was tastey, too! I will try their quiche and baklava the next time we are in town. Check out the sign on the bathroom door.

I love this coffee. I live in the San Luis Valley and every couple of months I order five pounds from Solar Roast. My first order (7 years ago!) came with a note, "You are awesome" which was, uh, awesome. It was silly but also sort of sweet. I started with my old favorite, Guatemalan, discovered the Colombian was amazing, moved onto the dark roasts (I used only to drink Lavazza) and now I'm drinking Zeus though I'm not the "dark and moody" character described in the blurb for this roast. Coffee is an important aspect of my morning and my life. Everything I've ordered from Solar Roast has been delicious -- though, after this long, I have favorites. Great company, wonderful service!

I lived in Pueblo West for almost 5 years before coming to this place and am so full of regret that I didn't spend more time here before moving! The ambiance is hip but homey. Like... not so hipster you feel like you're constantly being judged, but it could hold its ground in a place like Portland. The employees are super friendly and make you feel so welcome! The coffee, aside from being roasted via solar power (so cool!!) is delicious and they have a great variety. (Pro tip: if plain iced coffee is your thing, go with the iced Americano instead of the plain iced coffee- much stronger.) One of the best surprises was how delicious the food is there - up front is a display case full of in-house made goods, both sweet and savory. I had a slice of morel mushroom quiche and a lemon bar and they were both totally outstanding! Even though I've moved, I'm always going to want to make a stop at Solar whenever I find myself back around these parts!

Probably the best coffee in Pueblo. The place is huge with indoor and outdoor seating that goes a ways down the sidewalk because it looks like they also own the bar and book/record stores right next door. The artwork and decor are fun. The Wi-Fi is good, I come here often to get work done. The strong brews are strong, their pumpkin latte is a sweet treat. Bagels are FIRE - soft and warm. Chocolate chip cookies are prepackaged but so so so good. I don't know what brand it is. They have another location in Pueblo west that is smaller, with the same great items. I def prefer this one.

Downtown is easy to walk. I took a stroll from the Springhill Suites, past beautiful murals and edible gardens. On the corner of Main and Third I found Solar Roast Coffee, a friendly morning oasis. The breakfast burrito is offered three ways: with bacon, without bacon (vegetarian), or vegan. I opted for vegetarian and was not disappointed. The scrambled eggs were fluffy, nestled inside a toasted tortilla with diced potatoes and some black beans. Served with a side of tasty, with enough heat green salsa, and sour cream if you like, it was a comforting and filling breakfast. I had a decaf mocha cappuccino which, along with my burrito, will pull me back there tomorrow. The staff is friendly and helpful. The restaurant is clean and inviting, and there are also tables outside amongst the blooming flower boxes. A peaceful way to start my day, with breakfast at Solar Roast Coffee.

Stopped by for a snack and drink to enjoy on our drive home. The premises looked clean and had visible markers to make sure you socially distance. The staff was super friendly. The menu was extensive enough but not overwhelming. Love the location in Pueblo. This is my favorite block :)

Although I like their CO Springs location a bit better, I love love the vibe of this place!!! It is such an old school coffee house with great people and delicious coffee. The atmosphere is really wonderful and being able to sit outside when the weather is ok is a real park. If you want good coffee, with a great atmosphere, I highly recommend this place. Plus, the coffees are to die for!!!!!!!!!!!

Very sweet little place. The coffee is lovely, the breakfast bagel ("tomato eye opener" with green chili cream cheese, multi-grain bagel, garden fresh tomato, and an egg) was DELICIOUS, and the staff was friendly and fun. It's in a cute location - historical and eye-catching - and the atmosphere is quiet and pleasing. If we lived here, I'd write here.

What a great place to get an organic cup of coffee I love everything about this place I love the downtown one far more than the Bessemer one they're polite it's a nice space very clean everyone's smiles and the product is delicious you must try out solar coffee!!!
