Truly great things take time, effort, and skill to make. The years of training and experimentation required to master a craft are often forgotten by people on the consuming side of things, but it's impossible to forget the artistry when you taste a beer brewed and blended by Sour Cellars.
Their barrel room is a mixture of old-world tradition and modern science, leaning strongly towards the old traditions. All beers are both fermented and aged in wood barrels, a process which creates a depth of flavor, smoothness of texture, and clarity that is nothing short of remarkable. Each blend is carefully crafted from a variety of barrels, of differing ages and characters, in order to present the best of various attributes present in each barrel. (When fermenting and/or aging in wood, each barrel will develop a different character over time even when filled with the exact same initial recipe.)
Every beer they make is wonderful, unique, and magical. No two batches can ever be exactly the same, and yet there is a consistency to the quality that makes these differences something to be treasured rather than a point of critique. Few brewers are willing to spend the time required for beers such as these; beers which are so splendid that they can be enjoyed even when they warm to room temperature require years to create as opposed to the weeks/months-long cycles for your typical "craft" beer. Their process is full of patient risks and adventurous experimentation, and the results speak for themselves. Highly recommended for fans of the world-class Belgian blenderies such as Cantillon, 3 Fonteinen, etc. I'm quite sure that these drinks will hold up against such legendary competition.
