SOURCE at Gilpin Hotel

"Set over a number of intimate, contemporary dining rooms is this flagship restaurant of the charming Gilpin Hotel. You’re guaranteed a warm welcome and have the choice of the lounge or champagne bar for a drink before dinner. The cooking is based around local produce, some from their on-site vertical farm, and harmonious tastes and textures run throughout. Dishes have a clean, sophisticated look and deliver great depth of flavour and a little originality, without ever being showy or over-worked." - Michelin Inspector

Obsessed! The meal was faultless start to finish. Service was charming and professional, food was unbelievably tasty and detailed, wine list was super interesting and varied. Even if you lived next door, I would recommend staying. The attention to detail in the room was phenomenal, we were treated like family and our dogs were welcomed so sweetly by the team, even the alpacas. Would go back tomorrow if i could!

Every mouthful was sheer heaven. I am not a big fan of fish and I was offered alternatives, but decided to go with the 10 course menu as it was. I am so pleased I did. There were a few fish dishes as well as meat but each course was Divine. The flavours and textures were exquisite. Each course beautifully presented to us by knowledgeable staff who clearly love what they do. We opted for the wine pairings which were fully explained to us, adding to the wonderful experience. I can’t wait to go back.

Such a beautiful experience, wines paired with food, don’t be afraid and try to go adventurous with wines, as Francesco will point you to right direction and give you experience of lifetime. Service is immaculate and serving staff are full of knowledge. Bar man makes excellent cocktails and drinks. From the moment we walked in everything felt like experience. Definitely will be back.

Fabulous dinner and great value considering the calibre of the meal. Highlights were the lobster and the venison dishes, the latter of which was delightfully rich with black truffle. All dishes were delicious and some spectacular. All dishes were elegantly plated and the flavours were balanced and sophisticated. Inclusion of local ingredients was welcomed. It would have been interesting to hear more about the food sourcing from the waiters, particularly given the name of the restaurant. For a 9 course tasting menu, this is a lighter meal. The portion sizes are relatively small, but to me this is preferred, as it allows you do enjoy the meal fully up to the petit fours. It’s a nice touch to be able to enjoy petit fours in the lounge area. The service was friendly and cheerful. If I were to give any constructive feedback, the decor of the dining rooms is slightly dated and less sleek than the contemporary food presentation. With an upgraded interior and slightly elevated service, SOURCE could absolutely be 2* worthy. However, for those primarily there for a culinary experience, the restaurant provides incredible food at a very reasonable price.

Genuinely one of the best tasting menus we've had, even at higher Michelin stars. Cannot recommend this place enough. We had the longer Source menu. Rather than being fixed, you get to select one or two of the dishes are key moments. As a vegetarian the main dish had only one option. Whilst I prefer to have a fixed set of dishes, forcing me to eat foods I may not naturally choose, I did appreciate the flexibility. The balance of flavours, across the dishes and within each, was excellent. There were some where I anticipated a fairly uniform experience but was very pleasantly surprised at the range and depth. A broad bean hummus, that could have been dry and flat, was a stand out surprise. Closely followed by the broccoli with a surprising range of flavours. I feel like I need to repeat this: both the vegetarian and pescatarian menus were almost flawless. I was genuinely surprised that there wasn't a dish I could complain about! Normally I expect one of the savory courses to be off, or a dessert to be out of place. But not here. The staff were excellent. As my wife is deaf we had asked for them to face her when explaining the dishes. It's not an easy thing to maintain eye contact with someone for extended periods of time but they did it from start to finish. Nowhere else has done that for her. They also provided a detailed print out of all courses. I don't know if SOURCE will get a second star. But it definitely deserves high praise.

Really great meal. I love the combination of tasting menu and A la carte. Our waitress was brilliant. One recommendation would be more soft furnishing as the room is echoey.

A Brilliant Evening at Source at the Gilpin We’ve been lucky enough to visit a number of Michelin-starred restaurants over the years, and Source at the Gilpin really stood out. From the food to the service to the atmosphere—it was a joy from start to finish. We were looked after so well by Elle, who was warm, friendly and really thoughtful throughout the evening. And Francisco, the sommelier, was excellent—full of knowledge and passion as he talked us through each wine pairing. Every glass felt carefully chosen, and each one brought something new to the food. To start, I had the Cornish Lobster. It was rich, perfectly cooked, and beautifully balanced with the peanut bisque and roe sabayon. Then came the Cornish John Dory, served with golden caviar. This was a highlight—delicate and luxurious, and plated with real care. It was great to meet the section chef who made it. You could tell how much pride went into the dish. For dessert, I chose the Gariguette Strawberry with Pink Peppercorn. Light, fresh, and just the right touch of sweetness to end the meal. The petit fours were also a treat—playful and full of flavour. We were invited into the kitchen afterwards, which was a lovely touch. Meeting the chefs and seeing where the magic happens made the evening even more special. Everyone was kind and clearly passionate about what they do. The only thing we noticed was that the pacing of the courses felt a bit quick at first. But as soon as we mentioned it, the team adjusted and slowed things down, which we really appreciated. It didn’t take away from the evening at all—in fact, it showed how attentive and flexible they were. All in all, a wonderful experience. Delicious food, thoughtful service, and a really memorable night. We’d happily return.
