There's a lot to like about Sparky's - a rich history of a small successful business in the heart of Hatch, New Mexico, Chile Capitol of the World. The employees are awesome, friendly, and courteous and their food is renowned as being nothing short of special.
So why 4 stars, and not 5 (actually 3.5 rounded up to 4). Well to begin, it's important to know they're only open Thursdays through Sundays, 10:30am - 4:00pm. So when I rolled in on my Harley at 3:45pm on a Saturday afternoon, the ordering line was about 12 people deep, and the place was PACKED! No worries though as I'm always happy to see a successful business in action, and so I patiently waited in line, and it went fairly fast. 10 minutes later I ordered their World Famous #1, a 7oz Chile Cheeseburger with side and drink ($12.49). For my side I chose the pineapple coleslaw, and for my drink, water.
It took about 20 minutes (and two water refills later) before they called my name. I received my styrofoam box meal and walked over to a shaded picnic table ready for my long awaited and eagerly anticipated Chile Cheeseburger meal. When I opened it and saw my sandwich, I was surprised and disappointed to find my World Famous Chile Cheeseburger sans the green Chile - ughhhh! The thing is, while waiting near the pickup window, I remember seeing a customer come back with his sandwich with the same issue - no green Chile on his sandwich....
Another trip up to the pickup window, an apology from the employee who gave me a small plastic container of green Chile (so I could put it on my sandwich) and then back to my picnic table. By the time I actually was eating my sandwich it wasn't hot any longer. Minus 1/2 Star+ for this. The other 1/2 Star+ is for the bun which seemed a bit too dry for my taste - probably because it was the end of the day and who knows how many buns they must go through? I will say the pineapple coleslaw was awesome - definitely get this as a side!
So, yes, I'd recommend you give them a try, but I'd highly suggest you arrive early, rather than later, in the day. They're worth a visit.
