"A pop-up bagel and deli project spearheaded by the coffee-shop owner, this operation focuses on Jewish-style bagels and sandwiches rooted in family heritage and hands-on technique. The baker wakes at 3 a.m. to mix, boil, top, and bake most batches himself, experimenting with fermentation, alternative flours (buckwheat, sprouted rye), and a one-to-one water-to-flour fermentation method refined with help from a professional baker.
