"Located on the Venetian's pool deck, the latest restaurant from John Kunkel and 50 Eggs Hospitality Group — Spritz Restaurant & Bar — introduces a Malibu, California–themed style to the Mediterranean-influenced pool scene and will open June 4 when the resort reopens; it will join Wolfgang Puck’s seasonal restaurant Solaro. I note the sophisticated setting was designed by locals Novus Architecture and offers seating for 88 under a shaded canopy chilled by ceiling fans plus 15 seats at a standalone bar, with options for table seating or raised daybeds overlooking the pool. Scheduled to be open daily from 8 a.m. to 6 p.m., the drinks menu centers on three $18 spritz Champagne cocktails: the sherry and green tea Sencha #2, a cynar and passionfruit Como Spriz, and the Wimbledon made with Pimm’s, citrus, cucumber, strawberries, and mint. Breakfast is served 8–11 a.m. (pancakes, bacon and eggs, coconut or acai bowls, avocado toast, pastries and juices), with lunch until 6 p.m. offering snacks like chicken wings, edamame hummus, crispy shrimp and a turmeric tonic; salads and flatbreads; and entrees including a Skuna Bay salmon poke bowl, a truffle burger with Parmesan fries, a grilled beef tenderloin and ciabatta sandwich, and a Nashville hot chicken sandwich with spicy slaw.
