The Twin Cities’ Best Ramen Shops | Eater Twin Cities

"Local food hall Eat Street Crossing’s stand-up ramen counter, Ramen Shoten, recently closed, but a new spot, “Staff Meeting,” has taken its place. Las Vegas-based chef Louross Edralin, a Season 4 alumni of Hell’s Kitchen, has switched up the menu but is still serving three steaming, savory ramens: a spicy black garlic ramen with pork chashu; a vegetarian ramen swimming with charred cabbage and fried tofu; and a creamy chicken chasu ramen." - Justine Jones

I can't imagine giving less that 5 million stars. The food here is something special. The drowned dumplings are magically addictive. The fried rice has a ton of depth and flavor and remains moist, not dry. That was a first for me. The chicken wings are huge. It's a reminder that chickens are descendants of dinosaurs. They have a glorious crispy fry with a sweet heat that's perfectly balanced. My son who does not eat spice devoured them. Chef Lou, the gregarious and welcoming chef, pushes everything about this place over the top in exceptional style. If I lived in Minneapolis, I would eat at The Staff Meeting on the daily.

Such an amazing gem. I love the fun references of their menu. We got the Regoku ramen and Gon n Killua ribs. First ramen I've had that is spicy! The ramen is packed with flavor and toppings. The ribs were so tender and I love the garlic oil and the sauces it comes with. The vibes of the food hall makes it even better. Highly recommend and will come often.

Google
Chef Lou is very friendly, the ramen is delicious and the chili sauce we had on the side elevated it even more. Them take out wings were crispy and had a nice sauce on them. I wasn’t a fan of the drowned dumplings because they were a little cold but I’d definitely visit again

If you're a fan of food that's made with love and care, this is the place for you. Not only is the food incredible, but the actual environment is very authentic feeling. It gives off a very modern vibe with traditional roots, which I found very appealing. It also shares real estate with a few other businesses, including a great Boba tea and ice cream shop, and a bar. On to the food! The Blaze of Rengoku was rightfully spicy, but very TASTY! The egg was perfectly jammy and the pork had the right amount of crisp to it while soaked in the broth. My personal favorite was the fried chicken, Chef Louross must have made an especially crispy batch for us because it was spectacular. Very well seasoned even in the batter, not too greasy while still having that mouthfeel you'd expect from that kind of food. Overall a wonderful experience and I will most definitely be returning when I'm in the area! My father and I drove from Duluth MN to try the place and it was well worth it. Additionally, the head chef and people working were exceptionally nice, and seemed to go out of their way to create a truly wonderful dining experience.

The owner was super kind and made the experience so memorable. To top it off the food was amazing. The Gon and Killua Ribs were so tender and well seasoned, it paired nicely with the Mom's Fried Rice. Also had the Tonkotsu Ramen which was delicious. Everything was amazing, would definitely come here again!

Google
The wings Wow they had an amazing crispy crust and the flavor was simple and savory. The Dumplings YUMMY i would recommend and not share. Keep them all for your self. I had the Kurimchikin. Wow has a great spice but you can taste all the flavors. The Classic Tonkotsu you can't go wrong with. So creamy. Had to end with the Sesame Balls for dessert. What a great way to end the meal.

Google
I visited Staff Meeting and tried the chicken wings and the classic ramen. The wings were decent—crispy with a good crunch and decent flavor, though nothing particularly standout. Unfortunately, the ramen was disappointing. The egg was overcooked, the chashu was dry and lacked flavor, and the broth was overly salty with the garlic oil overpowering everything else. On a positive note, the atmosphere was nice and inviting, so I might return to give other menu items a try.

Google
Such a cool place! Ordered the dragon breath chicken as well as the ramen. The food was pretty good! Very well prepared and the presentation was very pretty. There’s tons of outdoor seating as well as indoor seating. I recommend checking it out. The menu is fairly small but the quality is pretty good! I would suggest rideshare as the area is kind of sketchy and parking is pretty limited.

Yelp
This has been my go to for Lunch. Chef Louross is an excellent chef and person. Not only do I come back for the food but for the great conversation and atmosphere. Highly recommended!

Yelp
Great and friendly service in a cute little ramen place that's location in Eat Street Crossing. I love how you can get some ramen and go enjoy it with a drink at the bar inside. We got the tonkotsu ramen with Marshall law spicy sauce on the side to add. It was most definitely spicy but oh so delicious! The ramen was the perfect size and we both thought it was one of the best ramen bowls we have had in MN. The broth is flavorful, the pork chashu plentiful, and the toppings like the mushrooms were the perfect touch to the yumminess! We will be back.

Yelp
Great food, superb communal place, ambiance was amazing. Loved their spicy ramen, the chef is super nice and accommodating.

Yelp
Staff Meeting lived up to the hype! I had Moms Fried Rice with the "take out" wings! Both were phenomenal! I typically don't love and won't order "Whole Wings", these wings are an exception to that rule! They are crunchy, flavorful and have the perfect amount of meat! The Fried Rice was also packed with great flavor and perfectly tender cooked rice! The service was quick and friendly and the food hall concept made for a unique experience that allowed everyone in our group to find something they liked! The parking can be a bit challenging to find on a busy day, but I was able to find a street spot!

Yelp
The fried rice mom style was so basic that it was delicious. It doesn't need a lot of different flavors. It was basic to where I feel like I was kind of at home eating my mom fried rice. The tornado fries were alright. I honestly thought it was something else, I should have done a better job at choosing the right item to try. The chicken wings were decently a good size. It wasn't big, but it had enough meat. The chicken wasn't dry, and it was crunchy. The services, they give you a buzzer to grab your food. However, the front person was great and welcoming. The place/ ambiance can get crowded fast, and it was a good place to sit and eat. The only problem about this place is the location. There isn't any good parking to get to this Eat Street space with all the food.

Yelp
I have been hearing amazing reviews about this place so I just had to try it out. We ordered the Blaze of Glory because I love spice! I wish I was hungry enough to have tried so many more things off their menu because so many things looked amazing. The staff was friendly and they had a little mixup but they were kind and quickly fixed it! The ramen was not as spicy as I thought it was going to be but it still had a good level. I understand that most people do not like very intense spice so this is more of a me issue. The chashu was amazing. Some of the best ive had in Minnesota. Honestly could've added on multiple pieces. The egg was well cooked, the toppings were great, and I loved all the scallions. While this wasn't my favorite bowl of ramen of all time, it was pretty damn good. We finished all of it and left very satisfied. Can't wait to come back here and try more things off their menu!!!!

Yelp
Stopped by here before heading out to a play at the Children's Theater. My daughter is a ramen fan so of all the places at Eat Street Crossing, we decided to try out this place. We ordered the Kurimichikin (chicken ramen) and Dragon's Breath (chicken karaage) to share between the two of us. The food didn't take too long and you could see them making it. The staff was super helpful and pleasant and looked like genuinely enjoying what they were doing. We sat on the bar stools on the counter. The place is very casual and you can sit in the main hall or outside if it's nice or in the restaurant itself. The food came out hot and and presented very well. The karaage could be a little bit more crunchy but it was well cooked. The taste was good and it wasn't as spicy as I expected. The ramen was tasty and had good flavor. The egg was a little more hard boiled than I am used to but tasted good. Overall I would say not the best karaage or ramen I have had in the cities but a decent meal which was quick and reasonably priced.

Yelp
One of my favorite spots to grab a bite, and one of my favorite bowls of Tonkotsu Ramen in Minnesota! My go-tos: - Tonkotsu Ramen. Many ramen shops here MN, the ramen is either too salty or lacking in flavor. Staff Meeting is one of the few spots that does ramen right. It's also not a copy cat tonkotsu ramen. Their tonkotsu ramen embodies subtle unique and delicious flavors. One of my favs for sure. - Gon and Gillua Pig. Pork Ribs that I believe is deep fried, yet is still moist and tender. This is how SouthEast Asians do ribs, so I love this and would highly reccomend. - Moms Fried Rice. This is a sleeper pick here. Cheap. Simple, yet delicious. This paired with the ribs is a perfect combo. - Drowned Dumplings: Dumplings/Gyoza covered in a chilli oil, topped with crispy onions. A perfect combo of flavors and textures. Not like your usual boring gyoza in MN. Chef Louross (a bit of a flex, he's a Hells Kitchen Alumni), and his team, likes to do Friday specials too (more so showing the community his background), and they always look delicious.

Yelp
Blaze of Rengoku ramen - Best ramen of my life!! Rich pork broth with chilis for spice, tender tasty pork slices, super fresh toppings, and dumplings on top. Food came out quickly, hot and fresh Lovely and helpful staff Will definitely return!

Yelp
Staffing meeting? What's that.... We'll its a great place to get ramen. The broths are so rich and the chill sauce on the drowning dumplings is kicking. Staffing meeting crew if you make your own chill sauce I'd buy it. Js keep the great food coming.

Yelp
I had the opportunity to visit the Staff Meeting at Eat Street Crossing. You are greeted with the wonderful aroma upon entering their small establishment. The staff was very friendly and patient as it was my first time visiting and wanted to pick up food for my husband. For a take-out, the food was very well packaged. It was in a paper bag with handles. The staff helped label the containers so I didn't mix them up. There were disposable utensils available. The ramen was nicely placed in a disposable bowl with a plastic cover. The broth was in a half-quart container. I wish I had a little bit more broth. I might fit in the provided disposable bowl, but I used my Asian soup bowl so the volume might be different. I also should note that there is a 6% service charge since the establishment is located in the Eat Street Crossing. Them "Take Out" Wings: Very delicious and flavorful. There were five pieces. Spice level was perfect for someone who doesn't eat spicy food. The wings are probably a little bit darker in the photo because I did warm it up in an air fryer at 350º for 10 minutes since I live 25 miles away. Blaze of Glory ramen: Definitely has some kick to it with the chili flakes, garlic, and onions! Classic Tonkotsu: A classic ramen, creamy broth, also flavorful. Overall, I would like to come back. The ramens were good, but I would love to order more wings!

Yelp
This is some of the best ramen I've had in MN! We ordered the blaze of glory and were mind blown. The flavor is rich and spicy and the pork belly is charred so well. Wings are delicious as well!

Yelp
Was in town and Eat Street was highly recommended online. Ordered ramen that was okay. My tonkatsu had a creamy broth, which I wasn't used to.

Yelp
Went to Eat Street Crossing and had to try the ramen from Staff Meeting. Loved the rengoku ramen, the tom yum and tonkatsu base was fantastic. Would definitely get this again. Also tried the chicken wings and they were good but enjoyed the ramen more. Recommend checking this place out for their ramen! Will come back for sure to try their other ramen dishes.

Yelp
Everything was amazing, and the chef running the whole show was such a cool guy! We had the chicken ramen and the classic, the broth is seriously the best! The ribs were fatty and crispy in all the right spots, and the sauces were both great. The dumplings were also crispy and chewy, with really great flavor. So glad we stopped in- perfect for this cold snap!

Yelp
Eat Street Crossing appears to have an upgrade as Ramen Shouten (*another* contender chasing the ramen fad) got replaced by something much more dynamic with a name that's potentially cause problems in search results: "Staff Meeting" is by Vegas transplant (and originally East LA native) Chef Louross Edralin -- who previously competed on Gordon Ramsay's "Hell's Kitchen" (you can't miss his signature twirly mustache), he's joined by Chef Thai Nguyen. The name is based on the idea of comfort food that people in the restaurant industry eat after a 12-hour shift, from pan-Asian cuisine. I tried the Japanese curry with chicken Katsu (on the menu it's written, with quotes as "Curry" with Shot Boi) and it was the best version of katsu curry I've had since moving to the Twin Cities. This is what you get in places like LA, but with tweaks that don't undercut what makes the dish special. The chicken itself was *fantastic* and an improvement over traditional katsu. The dunked gyoza was also very good. It was a quick changeover for the soft opening, so the changes from Ramen Shoten are minimal, mostly signage--which works. Edralin has some more cosmetic plans for the space. I plan to go again. This is easily the best option in Eat Street Crossing. Try it now that patio weather is here!

Yelp
Food was great service was amazing and ambience is so chill I was just in awe this looks so delicious and let me tell you it was can't wait to go back this time I'm not planning nothing just going to and relax

Yelp
Stopped by this eatery to grab a quick bite for dinner and was pleasantly surprised by how tasty everything was! Tried the Drowned Dumplings (6 potstickers) and also the Kimchi Fried Rice, and both were packed with flavor! Sprinkling some charred lemon juice (charred lemon not pictured) on the dumplings took them to the next level! Would definitely come back and try some of the other dishes.

Yelp
Amazing food, staff and vibes! If you're looking for comfort food after a long day this is your place

Chris B.

Yelp
Some of the best ramen I've had outside of Japan. The gyoza was incredible as well. Highly recommend this place.

Maezing G.

Yelp
Excited to try Tonkotsu ramen in Minneapolis and was pleasantly surprised. It was different than what I'm used to in Chicago, but delicious flavor. I enjoyed all the toppings, especially the pork and the egg was cooked perfectly. The staff was friendly and engaging. I'm excited to try more things on their menu!

Hilary G.

Yelp
I went here before when it was Ramen Shoten and loved it, so I came back yesterday to try their vegetarian ramen but oy vey that was the most insanely salty ramen I have ever had and my sibling said the same. Dumplings were ok but definitely not worth the price

Stas M.

Yelp
The chicken was super crispy, the ramen was flavorful, and the drowned dumplings were to die for. Highly recommend this restaurant at Eat Street Crossing.

Lila Y.

Yelp
What a disappointment! I saw someone in the community's review about how good it was and let's just say their credibility took a freakin' hit. Got the wings and fries and their tonkatsu ramen... all too sweet. Where was the savoriness and umami?! All 3 dishes were overpowered by sweetness. It's like how thai people say that american thai food is too sweet. Just go for your franchise ramen if you're looking for a ramen fix. Fry your own jumbo wings at home. Just skip it. Blah

R X.

Yelp
I had their tonkastu ramen dish and dumplings! The ramen has a well balanced noodle texture and the soup is creamy. They even give you extra spices and pepper on the side to make sure it's not overly spicy for you. The dumpling super tasty too and love the crunch they add. Very unique! 10/10 would go back again.
