Stara Loza is such a unique restaurant who fully deserves their Michelin nod- the few bad reviews have all been people expressing that they didn’t enjoy certain dishes, and after my experience I believe it’s because they are really trying new things here! Very exciting, things that on paper sound insane, but once you try them- you have that “Aha! I see it now!” feeling.
The best example is during their special set menu Collab dinner with Fat Bastard Pub (a beloved local pub) every dish either incorporated their craft beers, or was paired with them (or both!) - the desert legitimately scared me at first - it was a chocolate brownie with nuts, made with dark stout beer, and ice cream- totally normal, right?
Not so- the ice cream was beetroot, and there is also a generous dollop of cheese- not cream cheese or dessert type, actual savory cheese! I thought this can’t possibly work- but once I tried it with a bit of each element, paired with their Darkness chocolate caramel stout, I was gobsmacked by how brilliant, earthy, tangy and sweet all morph into something you’ve never experienced.
You may never get to experience that specific dish either, unless they bring it back someday- this makes it a magical moment in time I shared with this passionate and professional crew. I didn’t mention every dish was remarkable, with one or two elements that may make you raise an eyebrow- believe it when I say, trust the Chef, shut up and enjoy.
From plating to service, Stara Loza is doing their thing with style and grace, a spot René Redzepi or Anthony Bourdain would have found charming and thrilling! I will find a way to return, mark my words- thank you to last nights crew, Živjeli 🍻
