Portland’s Hottest Bar Food Trend: Upgraded Cup Noodles and Ramen Hacks | Eater Portland

"When visiting the tucked-away Statera Cellars tasting room in Southeast Portland, I noticed the smell isn’t restricted to just wine; alongside the bright acidity and effervescent fizz of Oregon whites and pet‑nat I picked up kimchi, maybe crab, and the salty, almost yeasty steam of a disposable cup of instant noodles. Below the wines by the glass and a five‑wine flight, Statera lists a “Market Price Cup of Noodles” with a rotating cast of add‑ons — on past visits I encountered spicy Vietnamese prawns, cuttlefish, and sesame oil — served in the cup it comes in as a shelf‑stable, low‑prep snack, which co‑owner Luke Wylde says taps into a universal millennial/Gen Z nostalgia for boiling water and instant snacks." - Brooke Jackson-Glidden

New Portland Natural Wine Tasting Room Statera Opens in Inner Southeast | Eater Portland

"Tucked in a Salmon Street warehouse up a flight of stairs and down a nondescript hallway, this tasting room (opened January 17) has spare walls, a mirror that doubles as the menu listing bottle prices, a few tables and bar seats that look out over the Stumptown roastery, and a gargantuan globe of stuffed animals—built by co-owner and winemaker Luke Wylde from Goodwill “Bins” plushes attached to a chicken-wire sphere—that looms over the tasting counter. Wylde and co-founder Meredith Bell started Statera in 2015 to showcase the region’s chardonnay (single-vineyard wines, pet nat, and occasional blends) using grapes from biodynamic and organic vineyards, particularly Johan Vineyards along the Van Duzer Corridor near Salem; they also pour Bell’s Est. Wines (pinot noir and sauvignon blanc) and Wylde’s Lares Wines. The space aims to be approachable and playful—hosting book clubs and Dungeons & Dragons nights, offering flights, glass pours, and half-glasses from bottles listed on the mirror, and serving a rotating selection of Korean and Japanese snacks plus upgraded instant noodles (topped with crab, squid, premium sesame oil, or kimchi) and occasional congee—because, as Wylde puts it, “as much as we take wine seriously, I don’t need people to take this seriously.” The vibe is intentionally speakeasy/subway-bar and meant to feel a bit private and safe." - Brooke Jackson-Glidden

Absolutely phenomenal wine, with a very fun and kind owner in a space with great vibes! Impressed by the dedication to the craft as well as excellent sustainability practices and commitment to equitable and inclusive labor. I tried 5 wines (love that half glasses are available!), all of which sung with great flavors, especially the skin contact offerings!

The wine here is amazing, and and there are uncommon varieties you won't find elsewhere! Cute atmosphere and cool Asian snacks. The D&D evenings are a blast and very welcoming to people completely new to the game. Luke is incredibly entertaining, and if you're on the fence I encourage you to jump in!
