This is one of those very fashionable, design-led butchers that clearly believes atmosphere can substitute for basic fairness. I was charged by weight for steaks that were weighed including fat, despite asking for that fat to be removed. The trimmed portions were taken away, yet I was still charged as though I’d received them.
At these already inflated prices, that isn’t a minor technicality—it’s a glaring problem. If you’re going to market yourself as a premium, modern, artisanal destination, precision and transparency are not optional extras. Charging customers for product that is intentionally discarded feels less like craft and more like opportunism dressed up as cool.
Style is not a defence for overcharging, and “hip” is a poor substitute for honesty.
