"This interesting new restaurant in the historic heart of Mantova takes its name from a phrase in local dialect with translates as “sour” sugar. The cuisine here is regional yet modern, served in an informal dining room where traditional Mantuan sayings are written on the ceilings. For some months now, the restaurant has also offered an interesting caviar menu." - Michelin Inspector

This very professional restaurant offers updated Mantua cuisine, with many special touches. The wine list is superb, with reasonably priced bottles from all the main wine regions of Italy and also featuring prestige names (priced accordingly). We enjoyed the Mantecato di storione Bianco-Rosso and the BIS di Tortelli (sweet pumpkin and bitter herb stuffings) and the pappardelle with duck sauce were excellent. The umlauted name of the restaurant (Sücar Brüsc) is the delightful word for salt in the local dialect (literally "bitter sugar"). The service is very nice and professional. We were not seated in the airy and elegant dual restaurant rooms but rather in a small, tight in-between space. On the positive side, our close neighbors at the next table were engaging and informative conversation partners.

Absolutely fantastic tasting menu with paired wine. We loved every dish and every wine. Great that you can select your own tasting menu from the list as long as the whole table has it. Great service too. Only thing I would change is the lighting was too bright for my taste for a special meal.

We had a tasting menu with wine pairing. This meal was a real treat and it was our best meal in Italy this trip. The items offered were varied and different from the dozens of other restaurants, which have a "copy and paste" menu. Good value for the price.

I problably had too high expectations due to the many good reviews and the Michelin stuff they print on their door, but I ended up having a rather "meh" dinner: both first and main course were recommended from the waiter, and they both looked and tasted somewhat bad. Wine pairing was also a disappointing. I wish I went to a more down-to-earth restaurant in town instead.

Creative modern Italian cooking which produces intense, delicious flavours. Reasonably priced for the quality, especially the wine. But a few weaknesses detract from the pleasure of eating here: bread is poor - underbaked and slightly stale. Millefeuille pastry (in the stunning chicken liver and plum dish) should be much crisper and lighter - maybe assembled too far in advance? Poached peach was hard/under ripe. Papadelle stuck together in places so undercooked. Stir the pot! In a place like this, pasta should be perfect but sadly we didn’t feel that even our gentle mention was welcome. A mobile phone ban would also be good! Customers walking in on their phones, taking calls at the table spoils the atmosphere. Even so, the memorable flavours and creativity make this restaurant a special experience.

Really good experience here. Food is elevated but not complicated. Extra delicious pumpkin tortelli. We had a local wine - Vittoria - recommended by waiter and described as Bordelaise (half Cab/ merlot) It was absolutely gorgeous. Waiters were knowledgeable and friendly. Highly recommend.

Buonissimo. We had a lovely dining experience and would definitely return. The pasta we had as primo was very tasty and refined, the pork meat as secondo was very tender - I can highly recommend! Also the desert was very delicious. In addition, staff was also very friendly!

I tried their 4-course menu, and every dish was amazing! The tortelli di zucca was hands down my favorite—if I hadn’t gone for the full 4 courses, I would have definitely ordered a second plate. The ambiance is elegant and beautifully set, creating the perfect dining experience. The staff were incredibly welcoming, and a special thanks to Alessandro, who provided exceptional service. Truly a memorable evening!
