I'm so excited about dining at Sugarra because the food here looks exquisite and the setting here looks luxurious, which is different from the rustic ones at most Español restaurants in Singapore. So I immediately put this restaurant in my wishlist and come here at the first weekend after I’m back from an overseas trip. Every dish here is so meticulously made to look absolutely beautiful, with light, balanced beautiful taste. There is full exploration of different types of taste profiles through the different dishes. I’m absolutely impressed. The interior is very impressive: classy and modern, with s touch of opulence. Granite tables, soft lights and illuminated walls, a stylish bar and Español music really sets the place up to be a swanky location for wine and dine. The service is awesome too, sealing the deal for this restaurant as a must-visit. I squeak in delight when I first reach the table to see this incredibly beautiful display of appetisers, Tapitas. So gorgeous, so thoughtful. I feel like a VIP with this welcome display of delicious small bites. My favourites here are the paella rice with scallop, savoury panna cotta and foie gras with eel. Tortilla De Patatas "Spanish Omelette" makes me go, “Oh my Potato!” at first bite because it is so delicious and unique. Consisted of potato in various forms, such as Confit Potato, Sabayon, Potato"Espuma" and topped with Black Truffle, this dish presents sweetness in different levels and forms: toasty sweetness, milky sweetness and foamy sweetness, with touches of savoury goodness. Remolacha is Beetroot Tartare with Mix Herb Salad and Beetroot Sorbet. This is like gastronomic feast from the garden. The crunchy texture juxtaposes so well with the cold sorbet. Thr sweet and tangy flavours are so refreshing. The fresh herbal taste of the herbs makes it even better. Arroz De Verduras Del Desierto tastes so delightful and satisfying. Bomba rice lobster consommé Desert Vegetable like ice plant al dente rice with a good bite super umami Crispy Oyster surprises me by how good it is light and crispy on the outside, soft and pillowy on the inside Txuleta Charcoal Grilled "Vintage" Beef, Piquillo Gel,Smoked Garlic Mousseline Meaty sweetness with additional deep nutty sweetness different in taste slight spiciness of pepper perk up the taste Yogurt Y Bergamota combines an amazing combination of components, such as Bergamota Sorbet, Yogurt "Espouma" and Fried Dried Yogurt, to yield milky, yet tangy and refreshing taste. Dessert of Chocolate. Parfait, Cherry Sorbet and Aerated Chocolate in honeycomb form has such good mouthfeel due to the different textures present. The restaurant even gives patrons a bottle of Sugarra specialty Olive Oil. Wow! Thoughts: Absolutely Exquisite and Wonderful Cuisine

Beautiful new (Feb 2025) restaurant designed by Steve Leung, given a green, brown and gold theme. And interesting bottles of olive oil aligning the walls at the entrance. The Basque-centric, northern Spain food was just as beautifully crafted by Chef Aitor Jeronimo Orive. Executive chef is Aitor Gonzalez. Starting with tapas inspired from regions around Spain, they were displayed in a garden liked platter, looking too lovely to be eaten. My favourite was a Swiss roll looking cake stuffed with ricotta cheese. Unique too was a beef tartare sandwich. As for the mains, their version of Tortilla was a creamy comfort in the mouth and small cubes of roasted potatoes provided a different texture. This will be my Spanish version of comfort food. I had the pork belly too but I felt the different textures of apple were a bit too mild to cut the fattiness of the pork. The belly was well done with nice crispy crackling. For a Spanish restaurant, their coconut dessert was a huge surprise to me. We normally associate this fruit to our ASEAN countries but their interpretation of this fruit was really delicious. Chef even added sago pearls bringing to mind the Peranakan dessert. Lastly, great service came in the form of Marcus. He was articulate, knowledgeable and humorous. A gem to Sugarra.

Absolutely blown away by how each dish combined simplicity in presentation with remarkable depth of flavor. Every plate told a story of the chef’s culture and passion, expressed with elegance and restraint. Service from Jocelin and Jessica was impeccable—they made us feel at home from the very start. Kudos to the chef for making our anniversary meal truly unforgettable. We even left the restaurant remembering that the chef’s favourite food is olive! Park at resort world, not the hotel.

I ordered the experience tasting menu and every dish was perfectly seasoned and beautifully presented. Suggara offers more than just a meal, with storytelling woven into each dish for those who wish to listen. The Tapitas were exceptional, and their creative take on the Spanish omelette was a delightful surprise. The beetroot dish stood out as fresh, inventive, and thoroughly enjoyable. Every course delivered rich umami flavors, and there was not a single dish I did not enjoy. Special thanks to Markos, May, and Gavin for their professional service and warm hospitality, which made the evening even more memorable.

The best Spanish fine dining experience in Singapore. Chef used to have restaurants in Singapore name call “Basque Kitchen by Aitor” All the dishes here were well thought and service staff explained me very carefully and detailed. Very fun & interesting restaurant.
