First of all, the freshness of the ingredients and the way they were prepared were absolutely top-notch—truly delicious. However, the environment still has a lot of room for improvement. The bar area is in the front, and the actual dining space is hidden behind a curtain. When we arrived, we stepped into the bar and only saw a group of people drinking heavily and a large curtain. We had no idea where we were supposed to go, whether we needed to check in somewhere, and there was no staff to greet us.
Secondly, the dining environment was far too noisy. When we tried to converse with the chef, several times the loud noise from the bar made it impossible to hear clearly, since there was only a single curtain for sound insulation. As for the background music—American hip-hop and pop—it’s not really something to critique, since this is Tennessee after all, and even an omakase experience has to adapt to local culture.
Other than that, the cocktails, food, value for money, and service while dining all deserve a perfect score—absolutely outstanding. We spent ~$300 for two people including $65 course each and two cocktails each.
