"Opening April 28 as more of an online shop with a pick-up counter than a full dining room, Sushi Dept offers a tidy menu of classic rolls and creative specialties using the same sustainably sourced fish that made Dayan’s upscale Ryú reputable, but at a more accessible price point. In addition to makis, nigiris, hand rolls, and poke bowls, the menu includes a light, airy popcorn shrimp, a “club sandwich” alternating tempura shrimp and scallop with avocado and crab stick, and a lineup of “crispy rice” (mini rice cakes topped with raw ingredients) such as avocado with truffle and a yuzu-flavoured salmon tartare; the Wasab Hamachi Maki ($13) is presented as a pared-back, more affordable take on Ryú’s popular Hamachi Baby. Prices are kept down by eliminating indoor service and simplifying labor-intensive finishing touches, and the sushi is packed in splashy neon-pink and eco-friendly bento boxes designed to travel; orders can be delivered by an in-house driver team or through third-party services.
