Nobu Matsuhisa on the Disaster That Nearly Ended His Career

"Under the mentorship of Tadayuki Nakane, a young trainee learned the technical fundamentals of sushi—how to make rice, cut fish, and stand properly at the counter—along with a philosophy of service that treats the sushi bar as a sacred, private space: answer customer questions and make recommendations when asked, but do not chatter or interrupt the experience." - Adam Robb

Amazing omakase experience: 22 courses with each dish executed exquisitely, truly one of the best omakases we had in Tokyo. Service was attentive and also personable. Go for the sake pairing - generous portions and unique sake from different parts of Japan! Value for money and left feeling extremely satiated (and slightly tipsy :p)

Shinjuku Sushi Hatsume delivers an exceptional sushi experience with some of the most unique dishes I’ve ever tried. The chef puts real creativity into the menu, offering flavors and combinations I haven’t seen anywhere else. Everything tasted incredibly fresh, the presentation was thoughtful, and the staff were warm and attentive. It’s a great spot if you want high-quality sushi with a surprising twist. I’d definitely come back.

I secured a reservation for the six of us at Sushi Hatsume several months in advance of our trip. The communication from the restaurant was excellent; they were responsive and efficient throughout the booking process. We selected the 22-course Omakase menu with the wine and sake pairing, which proved to be an absolutely fantastic experience. The staff was meticulous in confirming dietary restrictions and allergies, and their ability to explain the menu details in fluent English was greatly appreciated. Overall, it was a memorable and enjoyable culinary experience, and I would highly recommend Sushi Hatsume to anyone seeking a top-tier Omakase dining experience.

Very exciting food and experience. We loved trying different types of sake and authentic omakase. Every course was different and delicious, a wonderful end to our trip. Host spoke excellent English, making questions about the meal as well as conversation so easy. Highly recommend sake pairing and extra uni!!

Delicious omakase, welcoming atmosphere, top notch service, and affordable. What more could you want. Courses change of course but we loved the Steamed Crab/egg dish and various toro, mackerel, and eel nigiris Manager Masato was very wonderful/attentive and spoke great English. 22 courses - left full and happy. Definitely make reservations in advance - expect this place to be booked out most nights. Highly recommend!

What an insanely worthwhile experience. Authentic omakase served with the freshest ingredients in a very intimate setting. Everything was so tasty and the staff/chef are very knowledgeable about the food and pairings. While it’s not a cheap eat, the price is very worth. Highly recommend a visit.

If this were my last meal on earth, I would die a happy man! This omakase has ruined sushi for me in the US. The freshness of the fish is next to none in Japan but the chefs carefully curated flavors of each course is out of this world! This has been the pinnacle of my sushi omakase experience. Service is wonderful!

My first Omakase experience and it was amazing. You need a reservation. From my understanding they only do 2 Omasake an evening. We got the sake+wine pairing which I wouldn’t skip out on if you drink. The experience was unforgettable. I would recommend this place to anyone who’s asking, especially for those who might be a little nervous about trying something new (raw fish). The fish was fresh, the flavors unique and exciting! One in a life time experience( and for a reasonable price. We will be back.
