13 New Bib Gourmands Announced for MICHELIN Guide Tokyo 2025

"The origins of Sushi Mikata go back to a standup sushi bar the chef went to with his father when he was a boy. Aiming to be a place where people could drop in casually for sushi, he emulated this standup format. Guests can order in amounts as small as one piece at a time." - MICHELIN Guide Japan

"The origins of Sushi Mikata go back to a standup sushi bar the chef went to with his father when he was a boy. Aiming to be a place where people could drop in casually for sushi, he emulated this standup format. Guests can order in amounts as small as one piece at a time. Both fish and vinegared-rice portions are generous, to impart the delightful feeling of filling one’s mouth. The chef runs Sushi Mikata with his wife, whose rolled Japanese-style omelettes are a hit with customers. The good-humoured banter between husband and wife keeps the atmosphere light." - Michelin Inspector

Go here if all you care about is the taste, and want solid sushi without a 2hr long omakase. The atmosphere is nonexistent because the chef is focused on churning out sushi at a crazy pace. 15pcs of nigiri in less than 50mins is impressive. Everything is ordered through AirRegi, even gari refills, so the only “service” here is the occasional grunt and neta name, lol. If you order extras aggressively, the price starts adding up — my bill came up to ¥14,000. Many people reasonably expect some kind of warm service at that price point, as it’s kinda a splurge, so if you come here expecting that, I can see why it’ll be a disappointment. But if you take it as a time efficient way to compress a sushi omakase for your holiday itinerary, while saving a modest few thousand yen, and compromising on the brusque service, it actually ain’t too bad. For what it’s worth, I’m more likely to come back here than almost all the other tachiguizushi I’ve tried, as the taste doesn’t disappoint. Maybe only maybe 3 nigiri were markedly inferior to their equivalents in an average dinner omakase in the ¥15-20k range (the shima aji esp was rather nondescript, and the straw smoking on the buri was too strong).

Of the many wonderful, delicious meals one can have in Japan, this standing Edomae sushi restaurant left one of the deepest impressions and gave me a newfound understanding of refined, premium sushi. With incredible value, each skilfully prepared morsel has layers of complexity in texture, flavour, and subtle seasoning that unravels with every chew. At least for me, it was a rather life-changing experience compared to the sushi I have had before. During my visit, the 10-piece Omakase menu included: - Haruko sea bream - Squid - Horse mackerel - Pickled tuna - Medium fatty tuna - Young gizzard shard (kohada) - Black mutsu - Scallop - Smoked mackerel, and - Conger eel (anago) Serving around seven customers at a time, reservations are necessary as walk-ins are rarely accepted. Dining is also limited to an hour per person, and the chef serves up each sushi at a well-paced speed that allows you to enjoy without feeling rushed. I certainly hope to return to this gem again.

Reservation recommended, maybe required. Can book on autoreserve (Japanese) or omakaseje (English). Course is either ¥6600 (8pc) or ¥8800 (10pc). Large size old school nigiri. Can add on via ipad at each seat. 60 min time limit. Awesome concept, solid sushi, excellent value.

We went here on our first night in Tokyo after finding it through the Michelin guide (Bib G). Loved it! It is simple yet delicious - exactly what we hoped for. Couldn’t have asked for more after a long travel day, and it was the perfect start for our trip. Recommend!

We came here for the good reviews we had read and found it through the Michelin proposals. The experience was a bit disappointing for me. The sushi itself was nice and was prepared with care. The service and atmosphere were a bit cold. Also please be mindful that there are no chairs, so you eat standing. So an overall okeish experience, but I think there are better places for sushi of the same quality/price range.
