I think this is a good sushi experience for someone looking for vibes and/or that doesn’t really enjoy the taste of fish. Every piece is very westernized, which I thought took away from the pieces rather than elevated (e.g. toppings of herb butter, flamed bone marrow). I’ve done many of these in the U.S. and in Japan, and this one just doesn’t seem to fit with past experiences. It’s not bad quality, I’m just critical of the execution.
On drinks, I asked for a recommendation of a non-sweet sake. The bartender may have misunderstood and brought something very sweet. IMO what I tasted shouldn’t be on their menu as a high-end establishment. For beer, all they had was a German Pilsner and a Trappist ale. Great for a pub/fried food, but really out of place for this experience. An easy fix there would be to keep some Japanese beers in the fridge. One of the joys of an omakase experience is a sake and a Sapporo together.
Note, the staff were very kind and really tried to make it a great experience. There’s a lot of effort that goes into a meal like this, so I do think people should give this a try. It’s just not for me.
