Chef Steve Brown Opens a Butcher Shop in Little Italy - Eater San Diego
"Brown is preparing to open the Butcher Shop by Swagyu Cattle Co. by the end of the month in Little Italy where it’s replacing Blue Box Butcher at the corner of Hawthorne and India Streets. With a partner, the chef runs Swagyu Wildlife Ranch in Ramona where they’re raising cattle and other animals on 50 acres of shared pasture that will provide most of the meat for the butcher shop, including American wagyu and grass-fed and grain-fed Angus beef as well as Berkshire pork and pasture-raised chicken and eggs." - Candice Woo
I was really looking forward to this burger and it isn’t a bad burger by any means, but those who are saying it’s anything above average must not eat a lot of burgers.
Maybe I caught them on an off day but not willing to drop another $25+ to try again.
The guys who work here are helpful and service is good. It’s attached to a butcher shop and that’s cool too!

Wage smash burgers are very good and the fresh are not bad. Very simple and delicious burger cooked perfectly. A little pricy but good.

Accidentally ended up here, but absolutely worth it! First of all the burgers were cooked to perfection; wagyu-tallow fries are a pleasant compliment without overshadowing the wagyu burger options. Fast, friendly, and personal service. Well worth stopping by for a stick to your ribs burger (wagyu and pork belly burger…say no more).

I’m glad my husband brought us here vs the chain down the road…
We had the OG burger (some of us had doubles) and they were great. The Pattie’s were not extremely thick, so there was room for French fries.
My kids loved eating and having the views of the airplanes landing.
Side note: we happened to run into one of the partners and I made the comment “oh wow, they also have steaks” and he shared information about the Japanese steak and Australian tom they had in stock. It is great to meet business owners that are passionate about what they do!

This burger is a 10, bun a 10, condiments 10. The fact they do tarrow fries just makes it perfect. Two perfectly cooked patties, VERY juicy. If you want a dry overcooked steak house burger this ain’t for you. Also the fries are perfect.

I got the smash burger and it was amazing. However, it was $23. The meat is quality but if a burger is going to be $20+ it better come with a side, like fries. The fries are an extra ~$10, which I think is crazy. Again, the food is delicious, but overpriced in my opinion.
