How a New Orleans Pastry Chef Found Her Calling for Surrealist Cakes | Eater New Orleans

"Operating from a studio-like kitchen in a small Bywater building, Bayou Saint Cake is Bronwen Wyatt’s pandemic-born, one-woman baking business where she bakes and decorates alone, keeps a large commercial fan pointed at an old wooden table to cool cake canvases, and has grown a devoted online following for her signature ‘squiggles’—the ruffled buttercream toppings that launched her onto cake Instagram. I observed that she describes herself as a “goth baker,” prioritizes flavor and small-batch, organic ingredients, and experiments with inventive combinations (examples include zucchini and benne seed with burnt honey buttercream; olive oil chiffon with blueberry and elderflower preserves, fig leaf custard, and crème fraîche buttercream; and chocolate and rye with chocolate coriander mousse, salted caramel, and chicory buttercream). I note the squiggle began as a decorative interpretation of a plastic chicken nugget Happy Meal figurine and that she helped create coveted, unexpected Mardi Gras 2021 king cakes. The business also leans heavily on community: Wyatt uses Instagram for comics, illustrations, flash sales of cakes, pies, and cookies, runs cake raffles benefitting local mutual-aid groups (including Southern Solidarity and Imagine Water Works), directs portions of profits to causes such as the Pointe-au-Chien Indian Tribe and Red Canary Song, and takes custom cake inquiries by email at bayousaintcake@gmail.com; weekly Thursday–Saturday pickups in July are available via the Bayou Saint Cake Minimart website and she promotes sales on Instagram." - Clair Lorell

We decided to try sweet tooth since we both literally had a sweet tooth. Since we were trying it for the first time we really just wanted to try some stuff. We decided to try cookies and chose the chocolate chip, oatmeal raisin, and red velvet. We also ordered the red velvet and Oreo cupcakes, however the Oreo was out of stock so we were provided with a substitute. Pricing for everything was pretty good and we ordered through DoorDash a little after 430. Unfortunately, we didn’t care for any of it as they all tasted as if they had been sitting all day. We did say maybe we’d go back and try them again earlier in the day because I was most excited for the red velvet cookie. But we did agree the presentation, even for a delivery, was very nice!

Let me start off by saying “You can only please some of the people, some of the time”!!! Now that I got that out the way, There are simply not enough stars for this amazing place. And if you got anything negative to say about this place then you are telling a lie, I love everything about this place and how welcomed I feel when I come through those doors!!! As a black woman there are certain places I have been and was overlooked and treated as if I didn’t matter but when I come in here it’s like I’m coming to grandma house to eat and the ladies treat me as if I am FAMILY and that means ALOT in this cruel world. I had my 43rd birthday cake done here and it was AMAZING!! If you follow me on google then you know that I tell the ABSOLUTE TRUTH AND DONT HOLD BACK!! Just go check my girls out and I promise you won’t be disappointed. They take pride in what they do and you can taste the LOVE in the cakes and also don’t forget to check out the lunch plates that are made fresh to go in there. And the pita chips and dip is to DIE FOR!!!!

I recently moved to Florence from Charleston. I was planning on going to Palmetto Bakery to get my dad treats for his birthday. They were unfortunately closed for the entire week due to a wedding. I typed in bakery and Sweet Tooth came up. I ordered 3 cupcakes, 2 brownies, and 2 cookies. They were all delicious! Also got pimento cheese and it was SO GOOD. I will be going back and making this my new bakery spot. They also do special stuff around the holidays which is wonderful.

What a great place for not only your sweet tooth, but for a simple bit delicious lunch as well. I had a soup and chicken salad sandwich special that was delicious. I’ve been on two occasions and gotten a random selection of cake slices and cookies to bring home. They have cakes, cupcakes, cheesecakes, brownies, cookies, and the flavor options are tremendous. Everyone who works there is welcoming and friendly. There is plenty of parking!

Adorable little bakery with a multitude of baked delights to tickle your tastebuds. Owner is super friendly and personable and it is always a joy to stop in here for a treat! Highly recommend the Mississippi Mud Pie Brownie and the Death By Chocolate cupcakes!

Thank y'all so much for my birthday cake!! My birthday isn't until the 29th, but I absolutely adore this cake! It's literally perfect and tastes amazing, and I can tell y'all worked so hard on it! I especially love the lil frog on top, I've been trying to protect them so they don't get squished. Also, wondering if y'all named the frog? That would be absolutely adorable 🥰🐸

Honestly the best cookie I’ve ever had in my life! As the granddaughter of a legendary baker I am very hard to please. I was very pleasantly surprised. Go get a salted caramel cookie. It will change your life!!

Yelp
I have purchased delicious bakery items at Sweet Tooth Bakery previously. So, they were my "go to" when I needed a whole cake right away for a family to enjoy after a dear friend's visitation. Sweet Tooth Bakery had a beautiful, vanilla three-layered cake already created and for sale. But, it had sprinkles decorating it, like a birthday cake. Sweet Tooth Bakery was so nice and closely listened as I told them of my dilemma. They meticulously removed the sprinkles, which made the cake perfect for a more solemn occasion. I was delighted. Sweet Tooth Bakery exceeded my expectations. i will definitely be back to purchase bakery goods again. You should see the variety of delicious goods to tempt your palet.

Yelp
We were given an assortment of cookies from here and they were all fantastic. I had never had anything from there until these cookies, but let me tell you they are world class. I may have found a new go to place for local gifting.

Yelp
Bought 6 cupcakes from them to try to see which ones we liked for a shower. They LOOKED good but...The Oreo and turtle ones were very dry and weren't very good. They tasted like they were 5 days old. The carrot cake cupcake was ehh, but the icing tasted like when something absorbs the refrigerator taste- so gross. The only one we remotely liked was the pumpkin spice but didn't taste very much like pumpkin. For $15 it was a waste of money. I recommend going to food lion or Walmart and getting the "gourmet" ones. They're so much better and are worth the price. We had questions regarding sheet cakes, and they couldn't tell me prices or even # of slices without calling the owner. (Maybe they were new or don't generally do them at this location). Not sure if it's just the location attached to jack's or if the other one is any better- I cannot speak on the other location in Florence. I really hate leaving bad reviews, but this was just disappointing. :(
