Shine Distillery & Grill Will Open on North Williams in Portland | Eater Portland

"I'm intrigued by a working distillery and restaurant coming to North Williams that aims to deliver the classic brewpub experience with a focus on local craft spirits: Shine Distillery & Grill. Owner Jonathan Poteet, an Alameda Brewing alum who spent 20 years in local breweries, says he's trying to copy the 'brewpub formula' and wants food that's 'not necessarily date night food; it's Tuesday night food.' The two-level space with a rooftop patio will serve an assortment of burgers, sandwiches, and salads alongside house spirit flights and a wide assortment of Oregon-distilled liquors, and on weekend mornings will offer simple brunch fare like eggs Benedict, Denver omelets, and bloody marys. Poteet—who says distilling is 'a bit of a family tradition'—has hired fourth-generation distiller Matthew McLain (formerly of Swallowtail Spirits) as master distiller; the distillery will sell bottles and cocktails of house spirits including gin, vodka, whiskey, and rum, plus seasonal specialties such as brandy and infused rums and vodkas made with local blackberries. We were heading to the Schnitz for a show, but with an hour to kill thought we'd check out this 'whiskey bar' in The Paramount Hotel. It's a really comfortable space, and the bar staff are really great. While they don't have the same level of offerings as MWL or Scotch Lodge, they do have a good mix of bourbons and single malts and the bartenders are quite knowledgable. Some really good Happy Hour bar food too. Need to make this a regular stop when downtown.

Bricks, boards, and bourbon. This is a neat mix of a sports bar, speakeasy, and modern tavern that's quite cozy to chill and hang around in, particularly if you're staying in the attached hotel. The staff is friendly, knowledgeable, and quick with the drinks and food. The calamari are pretty good, though the burgers look delicious, too.

This place is great. Its not the cheapest bar, but they have a tremendous whiskey selection and some very decent food. Their happy hour is great and the staff is friendly and knowledgeable. They also mix up some super tasty cocktails. I really like the strawberry sangria with infused moonshine. It is kind of weird that you have to go outside and then downstairs to use the bathroom, but its in a hotel? Oh well

This location is in the atrium of a hotel. Service is always a 5. They were excellent in accommodating our group size and the servers were timely, and incredibly kind. The atmosphere was definitely noisy making it a little hard to talk, which for us was fine but could have been a challenge for someone with hearing difficulties. Food was unremarkable for the price point.

Pretty descent happy hour. Recommend the pulled pork sliders. Brussels sprouts were ok. I feel they could add a bit more acidic flavour to it 😅 The drinks were good but nothing stands out amongst other happy hour places in Portland. Our server was tentative and friendly.

Had a wonderful dinner in this rustic place while enjoying the view of the city out their spacious windows. Soup of the day was a pot roast that was absolutely scrumptious and perfect for this blustery day in November. I followed that up with steak bites and steamed veggies that were also scrumptious and perfectly done. Service was great. Definitely one of my favorites spots in downtown PDX!

You walk into a low light with an amazing vibe. It was walking distance from our hotel. It's a beautiful whisky bar with a great vibe and music. Our waitress was fantastic, she recommended everything we tried and it couldn't have been better. If in town come by and enjoy the Kobe beef sliders they are amazing and a whisky flight.

What a delightful experience here after seeing a show at Keller. My group of 4 enjoyed: --professional and pitch perfect service --wonderful cocktails. I ordered Smoke in the City, based on the server's recommendation. It was a perfect smoky old fashioned. I'll return for another one in the future --delicious meals. I had the wedge salad. It was delicious with ample bacon to make it decadent but not too heavy. My friends had steak and frites and a burger. Everything was well prepared and tasty --light-inspired ambience with large west and north facing windows. Our table felt intimate and we could easily hear each other We arrived about 5 pm on a Saturday and were quickly seated. I know the word will get out about Swine, and it will be harder to just drop in. But for now it's a wonderful restaurant within easy walking of the Keller auditorium.

Take a walk into the natural world in eastern Oregon and smell the sage. With that in mind - Black Maple Hill rye whiskey distilled at Stein, small batch distiller, in Joseph Oregon - sip it straight. Soak in spice, pepper, vanilla and that sage that dances on my tongue. This ain't no prohibition, bootleg whiskey! Bottoms up! I appreciated chopping it up with Brian, bartender, who knew his way around whiskey and spirits. At Swine you can get the spirit with some spirits! Oh yeah!

A lovely tavern like bar. I had the strawberry fields made with moonshine, lime and mint. It was well-balanced cocktail. The hubby had local lager and we split the nachos, which were yummy...the cheese was topped with pork and served with a creamy cilantro dip. Service was friendly and prompt. Watching the bar tender make cocktails was a show.

Had a show to go to on a Saturday at the Schnitz. Portland was busy this day. As there were multiply shows going on. It was nice to see so much energy. This place had a nice casual vibe to it. Close proximity to the venue. Service was great. Everything came out in a timely manner and looked great. The ceasar salad was just ok in my opinion. I would have like to see actual croutons rather than a crumble. The flatbread was pretty good. Tasted light and fresh. And the pretzel was pretty good too. The cheese sauce struggle to stay creamy as it hardened up pretty quickly. But the mustard was really tasty. We had three different drinks and there were all great but one that stood out the most in my opinion was the strawberry something.... It was tasty especially on a nice hot day. Go check them out

We got a $10 discount for staying in the hotel connected to the Swine so we decided to check it out for drinks and to catch up with a friend. The drinks were wonderful, I got a sangria. We had such a great time that we stayed from happy hour to closing time. Our server was wonderful in helping us and being patient while we chose what we wanted. We had some nachos and fries on the menu, which were great. If you're looking for a place to drink and chill, Swine is the place to go!

Happy Hour!! This bar was right below the Paramount Hotel. Since we were spending the night at the hotel, we got a $10 discount at the bar so we had to check it out. We went for the happy hour from 9:30 pm to closing. It was a dark but fancy place, and we were immediately greeted by a man who seated us down at a table. I personally got the Ricky Sue, which was very sweet and tasty. The Tavern Chips along with the swiss fondue, cilantro cream, and salsa paired perfectly with the drinks. I recommend this place if you're bar hopping in the Portland area!

Such a great place - we rolled into town late, and Swine was thankfully open until 11pm. As a bonus, there was a late night happy hour that made the delicious food and excellent cocktails an even better deal. Highly recommended for late night sips and munchies.

My date and I were heading to a show at the Newmark. The location is great when walking up from the max stop at Pioneer Square. We had salads and a side of calamari. Salads were fresh with just the right amount of dressing. We'll coated with swimming it it. The calamari was some of the most tender we have had. They were not those huge rings like you see so often. There were a mix of small rings and tiny whole squid. The interior is quiet and intimate. Service was stop notch.

The restaurant/bar is located inside the Paramount Hotel. For staying we get $10 off the bill. Also great happy hour in the afternoon and late night. They are not stingy with the happy hour cutoff time....we thought since we got there about 5min before happy hour closing we wouldn't be able to order but pleasant surprise got handed the happy hour menu Stayed on 2 separate occasions dyring our trip and was so impressed the first night that we came back a second time. I tried the ricky sue, blackberry sangria, truffle fries and radicchio and smoked pistachio salad. Both drinks were delicious. I foundbout I'm not a fan of radicchio. I didn't know what it was otherwise the flavor wasn't bad. The bartender was super nice. Not sure if he's the owner but we were very pleased with the service. Whenever we would ask a question about drinks or the menu we got great explanations and he was so patient and friendly. Go for the food...or go to chat with him haha. It's a very welcoming vibe inside.

Happening happy hour spot. We went on Tuesday night for a quick bite before seeing a show the Schnitz. The place was packed at 6 pm but we got a couple bar seats. Bartender was very friendly and provided quick service and made a tasty N.A. cocktail for my partner. I enjoyed a couple of delicious cocktails, one from the happy hour menu and one from the standard, both were great. We also enjoyed some food which took a long time to come out. Since we were in a time crunch to get to the show, that was a little disappointing but it wasn't an unreasonable delay so I don't blame the kitchen. Give yourself more time if you're trying to go here before a show. The space itself is very cozy. I would love to come back when I wasn't in a hurry.

A fine place to grab a late night meal in town. The food was good, the drinks were okay... the ambience was pretty darn awesome, though, and our server was very kind and nice. The little sliders are honestly so choice that it's hard to argue in favor of a bigger entree. They were juicy and tender and really tasty. The other food we got, including the portabello....kinda meh. The mushroom was totally saturated, so a bit spongy despite being tasty. It's worth coming for their extensive whiskey collection alone, but in crowded evening meals are pretty nice, too.

What a cool place! It's warm and friendly with lots of space and ambiance. The focus here is the bar and the selection is immense. I'm not a drinker so I just popped in for dinner. The menu is short and sweet kind of a bar food menu. It was acceptable but not mind blowing. I got the beef sliders and they were just okay. The nachos were served in an attempt for an upscale presentation. The queso was thick and pasty but it was delicious. They really short change you on the pulled pork and the side salsa. I used that salsa and queso on the burgers to help combat the dryness. Overall the bar food is fun and tasty, I'm sure you'll enjoy the menu but this place is more for cocktails and no doubt they know what they are doing.

Totally been sleeping on this spot! They've got a very very solid happy hour menu from 4.30-6.30pm and 9.30pm to close with everything under $10. Although sub-10 bucks, their happy hour cocktails were creative and enticing, so much so that we ended up trying four of the out. My favorite was the Gray Escape. I love the slightly sweet profile but it wasn't overwhelmingly sweet and the bubbly added to the drinking experience. They have other cocktails on their regular menus as well, equally exciting but at slightly higher prcies of around $13-15. We also got the Parmesan Truffle Fries to split and they were fresh and hot. Crispy through and through with real parmesan cheese and tasty garlic aioli. Love the cozy and quieter vibe the place got. The staffs were very hardworking and everything came out quick. A great spot for a date night or a lowkey hangout with folxs.

Okay this place was packed despite mediocre food, and decent cocktails. The room was very warm, great ambiance and friendly service. Had a hummas plate served with what they called crudités but was just a pile of cherry tomatoes cut in half and some fried slices of pita bread. We also ordered their "jerk wings" worst version of jerk wings ive ever had. Not a detectable speck of jerk seasoning just some pre/ bottled goop probably from sysco foodservice. Terrible ! The hummus tasted like something straight outta a plastic tub full of preservative. They are clearly mailing it in and get a "C" for culinary effort. Pretty sad for such a beautiful space. . .

We arrived just before 5pm on a Thursday evening so that we could take advantage of Happy Hour and have plenty of time to enjoy drinks and food before heading to a concert. We were greeted immediately upon entering and were told that it's open seating so we could take our pick. We opted for a 4 top since we were expecting friends. The vibe was super chill & the staff was approachable, friendly and attentive. Also they were playing my kind of music, hip hop & R&B which also added to the vibe. This bar is a perfect location to meet before attending an event at the Arlene Schnitzer and on this occasion we were going there to see Common perform with the Oregon Symphony. Because of this, many other guests were also attending the concert which kept the atmosphere of the bar fun and vibrant. We ordered cocktails and appetizers of which my favorite were fries and the sliders - perfectly seasoned, cooked and the portion size was great for our party of 4. But everything else we ordered was great too, the calamari, the Brussels sprouts crab cake and chicken wings. It's a great place to gather with friends or for a date night & have a enjoy a bunch of light bites, conversation and good music. Something to be aware of: the restroom for the bar is located inside of the hotel that it's connected to, one level below the bar. You need a code and have to walk through the connecting hotel lobby & take the elevator to get to it. Not a deal breaker but plan ahead if you are a frequent restroom user. :)

Only giving 2 stars because my server was friendly. I walked in at around 840pm and sat at around 845pm. There was only one waitress and the bartender from front of the house. I can't imagine why, when they offer late night happy hour. The waitress was managing the tables on her own while the bartender managed the patrons sitting at the bar top. I ordered at 9pm and didn't get my food until 935pm. What I ordered was seared ahi tuna. Barely cooked fish... with some micro greens and diced tomatoes. Some of the pieces were overcooked and they were small, about 2 inch pieces. It was not worth the 35-minute wait for basically less than a salad. There was a person who came after me, got a burger, fries, and some other dish, and left before me. Maybe they're great any other night. But this particular night was very disappointing all the way through.

My hubby and I came here for a date night. I don't review any place I've not been to at least twice. Out of the gate, Emily, our server was super friendly and attentive and even remembered us from a few weeks back. We ordered the amazing fried chicken sliders. I would continue to return here just for these. I don't know what kind of crack they put in the batter but I'm here for it and I'll be back for it. The calamari is nice and crispy and the creamy horseradish dip is sooooo gooood. Tonight we also tried the tavern chips. The Queso with the pork .. delish! The cilantro crema was a perfect dipping sauce as well. It wasn't terribly busy so that gave us time to chat with both Emily and the bartender, Joe. Great staff and great people. Portland needs more places like this.

I heard about this place from other Yelpers when I asked about places to visit while in Portland! I am so glad I added this restaurant/bar to my agenda because it was really delicious! We arrived on a Saturday evening and had a seat at the bar. There were 2 guys working the bar that night and they were both so friendly and helpful. My hubby and I were eager to try some of their cocktails and so we looked over the menu and each ordered something to try. We also ordered some food since we were both hungry. I have to say that I love a good cocktail and this place did not disappoint. I honestly don't remember the exact drinks I had, but I do know that one of them was named Taylor street which was so good. I asked for the shrimp tacos, and we shared the truffle fries and the little gem salad. The food was really so good and the fries were piping hot and nice and crisp. The service guys were super helpful and we enjoyed talking with them as time allowed. I appreciated their recommendations on drinks and things to do in the area. Definitely a nice spot to enjoy some drinks and snacks.

Came here with a friend when we were attending a show at The Schnitz. The server was ON POINT! So fast and friendly! Food was SO GOOD! We got kobe beef sliders, and also this fondue with pork belly... SO DELICIOUS! I ordered a virgin margarita because I am a recovering alcoholic, it was so good! My bff got a Tito's and soda with pineapple and she said it was delicious as well. Love the low lighting, and the comfy seating, definitely a place I would take a date!

Yelp always asks, "do you recommend this business." I can state with absolute authority, that I do. I suggested to my girlfriend that we go for happy hour. I wanted to go to Pope House Bourbon Lounge. She sent me a screenshot that showed their event for Derby Day at $25.00 per per person was going on that day. I quickly changed my tune. I told her to pick. Parisa suggested we go somewhere we haven't been before, Swine Moonshine & Whiskey. I was totally down for checking out someplace new to us. The restaurant is located inside the Paramount Hotel to the right of the entrance. It's in the space of a former sushi restaurant, it's name escapes me. It's very spacious with lots of bar seating. Parisa and her boyfriend Jody met me there and our server was right there asking if we would like to order something to drink. I had the Gray Escape, St. Germain Crème de Violet, Lemon, and Prosecco. Amazing! We all shared the Smoked and deep fried calamari. Amazing but somewhat stingy on the portion. My second cocktail, Backyard Sangria, White Wine, Strawberry Moonshine, Orange Liqueur, and Elederflower. Not as great as my first drink, but still very potent and delicious. My order, chicken sliders, were very good. I could only eat one. They were served on a soft buttermilk bun with togarashi aioli and pickles. The chicken was perfectly crispy with a nice, spicy kick. I could only eat one. My friends Parisa and Jody shared the tavern fries. To me, they looked disgusting and smelled bad. But because they liked scallions, pork belly and jalapeño sauce, they were delighted and gobbled them down. I forget what Parisa ordered except for her drink. Jody ordered the Cubano, and was very happy with it. It was Mojo Pork, Black Forest Ham, Gruyère, Pickle, Yellow Mustard, Lemon-Garlic Aioli on the perfect Ciabatta Bun. Just because I couldn't eat anymore didn't mean I couldn't drink anymore. Me an Parisa ordered each other's drinks. As I mentioned before, I ordered the Backyard Sangria. By the we left I felt slightly tilted. After just two drinks. I don't know when I became such a lightweight, but I'm glad for it. It doesn't cost me much when I take myself out. They have an EXCELLENT happy hour here! So, I stopped in for that and to see what their cocktails were all about. Service was excellent, very friendly and helpful. The venue is beautiful, with timber throughout and stave bar stools. They offer quite a bit for happy hour, all at decent prices. Their chips and fondu was excellent! Their Ricky Sue cocktail was nicely done. Stop in and enjoy happy hour... maybe more!

Food is pretty good loved the fries. Asked for burger without alioli and it was on there. So, not the best attention to detail. Several of the whiskies listed on the menu were out of stock. You are better off going inside and looking at the bar to pick out your drink, though the staff will make recommendations if you give them your flavor profile. Still, a really fun vibe to the place and the staff are very friendly.

The whiskey flights were great! Queso was really tasty but the sliders were surprisingly bland. It was really crowded and loud but service was good.

Stopped by on the way back to the car after the Art Museum and dinner and am so glad we did! We had a great time doing a couple of flights each and talking with bartender Clint. This place has both bar, table, and sofa seating which makes bringing friends together here a real possibility. They have pub-style foods available for munching on, but it's nothing spectacular. Clint is very easygoing and knows his alcohols and was very willing to chat with us about them. It was great to listen to his information while tasting the flights he had put together for us. I love doing tasting flights, so this place is perfect for me! We will be back next time we are in the area!

Nice relaxing atmosphere. Food was good poutine type Pork Belly fries were delicious but would have liked the pork belly cut in bigger pieces, it was crunchy and I prefer it moister. Highly recommend the Calamari and Dessert fruit tray with honeycomb!! Both outstanding, we enjoyed every delectable bite. I'm a Whiskey lover and was looking forward to trying a few new ones, sadly they are out of the first 2 I requested. Maybe supply chain issues or shoddy work on the management part for ordering. Will give it another try next time and see Overall an enjoyable evening and good experience !

We were staying at the paramount and read great reviews about the bar downstairs and since we were ending the night we wanted to give it a try. We ordered the old fashioned - which was average, nothing amazing. I got the citrus drink with tequila - I forget what it's called but it was pretty good. We also ordered the Korean wings which were sweet and tangy with soy sauce dipping sauce that was not too overpowering. And of course I had to order the Parmesan truffle fries which came with aioli sauce which was bomb. A lot of these places in Portland serve shoestring fries but here, the fries were thick and they were crispy and cooked to perfection. Truffle wasn't overpowering either! Staff is super nice and welcoming and I think it's a great place for a bite or just to chill with friends!

Had the best experience at Swine. The restaurant was super busy when we showed up. The staff couldn't have been nicer and were so quick to make sure our experience was fantastic. The restaurant felt incredibly well run, and everyone was happy and working hard. That's unique to see these days. We actually came twice today, and the server remembered us from earlier when it was super busy. All the drinks we bought were fantastic and the food was also very good. We actually ordered seconds of the truffle frys.

I was only here for drinks during Happy Hour, so I can't attest to the food. The bartenders were very nice and attentive. It was pretty crowded and social. There were only two small TVs, so if you're looking to watch a game, this wouldn't be the place. There was a limited selection of Happy Hour cocktails. We ordered the Midday Collins and Gray Escape. Both drinks were good! I'd probably swing by if I was in the area, but I wouldn't specifically go there again for Happy Hour.

One star for the friendly service and the other star for short wait time. I put in an order for tavern chips ($14), calamari ($15), and ahi tacos ($14) for take out. With the menu being small I thought they were trying to put a focus on the quality of the food and I was wrong. Tavern chip is just nacho with a very small amount of braised pork shoulder. The calamari was the biggest disappointment being so skimpy and stale. Easily being the worst calamari we had ever had with the size of the squid being so tiny and barely battered. Offered no flavor. The tacos were mediocre, We have been in Oregon for 5 days and this is the worst food we have gotten so far. Not recommended.

Great food, service, whiskey, wine; but the beer is quite possibly the worst in Portland. Started only serving some McKenzie brewing crap, worst beer I've ever had. Not sure how much of this garbage they are getting for free, but hope they bring some good NW beer back.
