I recently had a family event not too far from Taco Bamba, and all the positive Yelp reviews convinced me to try this place out. I was in town for the weekend, so I got to try Taco Bamba twice, once for breakfast and once for dinner. There is a lot to praise about this establishment so why only 3 stars? Read on...
Let's get the positive established first because there is a lot of it. Taco Bamba is a taco joint that features a bar and a party atmosphere. The music is thumping and the night I went for dinner there was a line that went right up to the door (about 10 people's worth of space) and it never quit the entire time I was there. The crowd was eclectic and the space was nicely decorated and clean. Seating ranged from bar seating to regular tables to high chairs at taller tables near the car. You go in, order from the cashier then proceed to a pick up counter on the other side of the restaurant. Near that is the soda machine and a bar with several different kinds of salsa ranging from mild to very spicy. There are small cups if you just want to drink water. It is a nice set up and I really liked the way the restaurant is intended to flow.
I tried three items for dinner:
The Jeneral, a taco featuring seared ahi tuna, sesame salsa macha, pickled ginger slaw, guacamole, esquites aioli, Fuego Taki Furikake, cabbage cup. This dish was fantastic. The tuna was perfectly cooked and the flavors were on point. Also, the structural integrity of the taco held up well. It's always sad when you take one bite of a taco and the whole bloody thing falls apart. This did not do that and I was very happy about that.
I also tried two flavors of their wings. The buffalo flavored ones were okay, not the best, not the worst, just right in the middle. However, their dry rub wings were *fantastic*. They are grilled so they have a nice smokiness to the and the dry rub was wonderfully savory with a bit of a kick. I would order the dry rub wings again any time.
So, what's the problem? Frankly it is service. After getting my receipt from the cashier, I went down to the end of the counter to wait for my food.
And waited.
And waited.
I actually timed it after a while. From the time indicated on my receipt to the time I received my food, 28 minutes had gone by. Meanwhile, order numbers both before AND after me received their food. Now, 28 minutes is not bad if you're at a sit down restaurant but this is fast casual, not a steakhouse. And clearly they were able to get orders that came in before and after mine out, so it was frustrating that my order took so long.
Now, I did indicate earlier in this review that they had a lot of people during the evening. Fair enough. The staff was definitely hustling in the kitchen and doing their best. So, let's go to the next morning when I went for breakfast.
Yes, Taco Bambas has a really nice breakfast menu. I had the Huevos rancheros (tostadas, black beans, salsa ranchera, crema, cotija, cilantro, avocado & two fried eggs) which was *delicious* and I would eat it again any time. However, once again the service proved lacking.
This time however, there were not scores of people waiting for food. It was just me and my friend and that's it. We were the only people in the place. And still, my food took almost 20 minutes to prepare. Indeed, they seemed to have completely forgotten about it until I walked up to the counter and asked where my food was (my friend had already finished most of her taco by the time I did this). They confessed that my ticket had apparently dropped to the floor and been swept up so they...forgot? Ignored my order? I don't know. I eventually got it but after the previous night's performance this was most frustrating.
Taco Bambas has excellent food, a great atmosphere and I like the format. Unfortunately, their service leaves a lot to be desired.
