Mexican Asian Fusion Is One of North America’s Signature Cuisines | Eater

"Born in Oakland in 2022, the Tacos Sincero pop-up from Sincere Justice draws on experiences growing up in LA’s San Gabriel Valley to create eclectic plates like a konbini-style egg salad tostada, calamansi tinga, and a saag burrito, signaling a continued, curious mixing of regional Asian and Mexican-American influences." - Ben Mesirow

What Comes Next for Oakland’s Black and Latinx Bar Renaissance? | Eater SF

"I watched Meyer and Paez pivot to a delivery-only burrito-and-tamale popup called Chancho’s as a stopgap and community-building measure; Chancho’s has operated out of Itani Ramen and, more recently, Oakland’s Heart and Dagger Saloon, serving as an audible from their original bar concept while they continue to seek investors." - Kathryn Campo Bowen

Yelp
I got to try Tacos Sincero as part of a night market event that they were serving food at. I got the don camote and magic mushrooms tacos. Don camote: seared sweet potato, lime aioli, salsa verde, kashmiri mix. I liked this one, the sweet potato was nice and it was savory and decently spiced overall. Magic mushrooms: it was spicy and sour and had a very mushroomy tang that I didn't like; I'm pretty picky about the flavors of mushrooms. I would not get this one again.

Yelp
An excellent pop-up that will hopefully one day launch into a brick-and-mortar. The tacos are "fusion," but not in that sad 1990s way that you're thinking about. The tacos here use a collection of Asian spices but still feel very authentic - and surprisingly modern. It's difficult to judge service or ambiance with a pop-up, but I felt welcomed, and I felt appreciated as a customer. Please make a website - Instagram is not something I want to use to find food.

Yelp
If you need something to do today, it should be to go follow Sincere on his Instagram. Legitimately one of the kindest people you'll meet, PLUS he makes amazingly delicious food. I tried his tacos for the first time back in February before he had to take a bit of a break while adjusting his work schedule. And now, he's been back doing weekly menus again and the Bay Area is better for it. His food always tastes like there's so much intention and thought put into each aspect of whatever he makes. He combines flavors I'm unfamiliar with those that are, and it's alway such an awesome experience eating his food. He's been making burritos recently and his tortillas are handmade. They're so deliciously chewy and reminiscent of green onion pancakes for me. Anything you get, you won't regret. And I'm always so appreciative that he his veggie options are probably just as good if not better than the meat alternative. Can you tell I'm a big fan yet? Anyways, go give it a try if you are able!

Yelp
Sriracha tinga.... I'm in love. I have been really into food pop ups lately. There's something about limited orders, not your average location, and knowing that the people making the food are passionate about bringing something delicious. You can taste it in the food! I've had a bunch of the items off the menu - we usually get the whole burrito plates. The flour tortillas are SO good... and yes you might be thinking what??? the tortillas? But nawh theres just something about the tortillas and the unique combo of ingredients... I mean who thinks of mapo tofu burritos? Genius. I also got his calamansi kosho and i've been putting that on a ton of my food from bagels to noodles. Delicious!

Yelp
Tacos Sincero self describes as a "Chino Latino Experience". since no categories exactly fits, Mexican & Asian Fusion categories were chosen.. they do popups in the Oakland, S.F. bay area locale: Ichi Soba Popup (9/14) offerings: tacos with meats & veggie fillings, menu changes weekly. eats: michelada mushroom(5) "charred scallions, problano salsa, garlic confit, pecorino" -beef korma (5) "3 hour braised beef shoulder, korma spices, thai chile yogurt salsa". -served on grilled "hot" doubled corn tortillas-burning to the touch. umami flavors, not overwhelmingly spicy, *unique tastes, beware of running fluids which flow off the plate without notice... -fillings premade, assembled to order on site. -quick, courteous service, only tortillas need to be warmed. fillings already heated alongside grill.

Yelp
All the tacos were good (I liked that there was an option to get one of each). But the yam taco in particular was surprisingly excellent. Why do I say surprisingly excellent? (1) I don't really like yam stuff and (2) I've never had a yam taco.

Yelp
As far as I am concerned Sincere is a legend. I am always excited to eat his food and he always exceeds my expectation. Thank you Chef!

Yelp
Wow, what a gem. I was super curious about the Chino Latino fusion, and placed an order by subscribing to his weekly email list (via his instagram @tacossinero). I ordered a trio of burritos, and it absolutely blew my mind how the chef brought together flavors that typically live in separate worlds - whether referencing Korean bean paste flavors, spicy Chinese black pepper moments, or the comforting chewiness of a Mexican tortilla. (My partner described one of the bean burritos as having a peek into someone's childhood - like tasting their mom's homemade after school bean burrito.) This review is getting longwinded - but basically: support Tacos Sincero. The food feels homey, original, and personal all at once.

Yelp
My daughter has been raving about this pop-up and these tacos for the last year. Recently, after a Fox Theatre concert we were lucky to have these wonderful tacos at a pop up event in downtown Oakland! It was a yummy, delicious, and intuitive menu that we both enjoyed thoroughly. Look forward to having them again soon!!!

Yelp
$12 for one taco is too expensive. Plus, it wasn't that good. While the chicken was tender it was overly saturated with salt. Service was great but overall, it was not worth it. Glad to have tried but there are better options.

Yelp
We ordered a chicken taco at a pop-up market, not expecting much and ended up trying every taco on their menu after the chicken BLEW OUR MINDS. Every taco on the menu is absolutely incredible. Tacos Sincero by far makes the best tacos in Oakland, and I've tried a lot of them.
