Detroit Mexican Food Fixture Eddie Vargas Is Bringing Regionally Inspired Tacos to West Vernor | Eater Detroit

"Opening in Hubbard Farms in March 2025, this new taqueria from local chef Eddie Vargas and his father Jose will occupy 3970 West Vernor Highway after a months-long renovation that will give the space a subtle Tulum-inspired look with woven rattan lighting, neutral tones, and seating for about 40. Vargas — who is parting ways with the El Parian hospitality group — aims for a casual, friendly vibe reflected in the restaurant’s name and concept, featuring a rotating “taco-verse” that draws from regional Mexican cuisines: Sinaloa-style tacos gobernador (a griddled shrimp-and-cheese taco-quesadilla hybrid), Ensenada-style fried fish tacos, tacos de chile relleno, and seasonal ingredients like flor de calabaza and the delicacy huitlacoche. Expect snackable plates such as guacamole topped with crispy chicharrones, wings with salsa macha, elote, and egg-rolls filled with birria de res (and sometimes goat or lamb) made from his family recipe — an effort to bring more diverse, regionally focused Mexican offerings closer to downtown." - Serena Maria Daniels

Chef Eddie Vargas' restaurant is a home run! The food is amazing with his family Birria recipe front and center. I had the Birria Ramen which was amazing, so flavorful! Of course I had to add a Birria Taco because, you just have to. For desert, we had the Paleta de Jicama and what a refreshing summer dessert! Cannot recommend Tacos Wuey enough!!

Presentation was colorful and the flavors were just as beautiful! Even the homemade agua fresca was delicious. I’d recommend everyone to try it! You can tell the chef has so much passion into what he creates. I’m definitely coming back, the menu is so expansive, and there’s always something different to try.

I came here and opening day and wow! This place slaps. The servers were super friendly and having a great time dancing and genuinely look like they were enjoying themselves. The food was the best part though. The guacamole with chicken Chicharron was out of this world. I think the next best thing must’ve been the chicken wings. I will definitely be coming back here as soon as possible

Just tried Tacos Wuey for carry-out and WOW, I’m already planning my next visit! The food was phenomenal. I had a taco packed with shrimp, steak, and huitlacoche (I think it was called La Fina) and honestly, I wish I ordered more. Every bite was layered with bold flavor and cooked to perfection. The spot itself is small but swanky, beautifully decorated with an upscale vibe that still feels cozy and cool. It’s the kind of gem Detroit needs more of a perfect pre-downtown dinner stop or date night hangout. 10/10 would 100% recommend. Don’t sleep on this place. Go before everyone else finds out about it!

Chef Eddie Vargas is a gem. It you are looking for just regular tacos you may want to go elsewhere. Chef Eddie brings innovation to traditional Mexican cuisine! If you doubt me try the Birria ramen bowl. His famous barria meets fresh (not dried) ramen in some sort of mystical fashion (or so I am to gather from the slurping and muffled "omg so good" while eating from the other side of the table. Drinks were amazing (that Dragonfruit!). Vegan Jicama and sorbet dessert?! Heck yeah. As a bonus the staff were so knowledgeable and added so much to the vibe. Loved it. Can't wait for more!
