A Pastry Revolution Is Afoot in Australia's Southern Capital

"Launched from a home kitchen during the pandemic and later expanded to a brick-and-mortar location in 2021 by a pastry chef who won a televised dessert competition, this operation specializes in impeccably precise tarts sold by the slice, featuring both classic Australian flavor pairings like mango and macadamia and nostalgic creations such as a peanut “freckle” tart with caramel-soaked sponge, brown-butter-and-popcorn custard, and choc-hazelnut popping candy." - Melanie Hansche

Fantastic tarts as always. The pistachio cream in the pistachio saint honore was just a bit bitter but other than that it was perfect and had the perfect crust. The raspberry jasmine tart was also divine, with the jasmine flavour shining through and working well with the raspberry. The ube passionfruit tart was nice and had a yummy but powerful passionfruit flavour that overpowered the ube a bit. Coffee was unfortunately disappointing for me, with my citrus cold brew tasting like medicine. Also got a soy matcha latte that was not bad, but would probably prefer a stronger matcha flavour and creamier milk texture. Still giving 5 stars because this is a tart shop.

The Smoked Pecan & Butterscotch Tart is unreal—perfect balance of sweet, nutty, and smoky in a buttery crust. Easily one of the best desserts in Melbourne. Can’t wait to try more!

Wish I could try them all but only managed to try three - potato chorizo, pecan butterscotch, and pistachio blueberry. The pastry is thin and crisp and delicious. The pistachio one was the standout for me - tart shell was beautifully flaky with a smooth filling inside - not overly sweet and very creamy. Pistachio and blueberry make a fantastic flavour combo. The staff were lovely.

Delicious tarts! Full of flavor, great texture and not too sweet. And the staff is super nice. The place is very charming. Highly recommend.

This is the sTART of a new love…Bought 5 seasonal tarts today, just $11 each! The flavours are incredible and inventive, I don’t know how they manage to curate such lovely, quality flavours every month. No matter what you’re into, there’s a mix of traditional (lemon, tiramisu) and more niche tastes (sesame, bergamot) and they had one savoury one (parmesan x mushroom) today that I had with ice choc to-go! Only thing I would ask for is if there was more than 1 savoury offering.

Got the chocolate hazelnut tart today. It was silky smooth and full of flavour. It didn't feel heavy or too sweet which I loved. Perfect night time dessert for this hot summer heat. I'd come back and try some of their other flavours.

Absolutely delicious! The pistachio tart was so rich in flavour without being overpowering. The filling was dense and creamy, and paired so wonderfully with the thin and buttery tart shell. The pandan coconut tart had refreshing flavours but it was more cake-like, and not as indulgent as the pistachio one.

Very disappointing experience. The tarts are incredibly overrated in terms of flavour, particularly the tiramisu which was salty (it tasted like soy sauce) and the choc hazelnut which also was going for some sort of “sweet and savoury in one” but tasted awful… and not to mention the price you have to pay for each slice! The staff were polite but won’t be coming back, Melbourne has a lot more to offer.
