Former La Barbecue Pitmaster Dylan Taylor Wants to Open His Own Smokehouse | Eater Austin

"A catering company created as a way for the pitmaster to gain business experience and raise money for a future restaurant, offering classic Central Texas barbecue with German and Czech influences. The planned menu emphasizes brisket, ribs, turkey, pulled pork, and housemade sausages (including jalapeño-cheese varieties and more adventurous options like merguez and venison), with sides such as potato salad, creamed corn, pinto beans, and coleslaw—recipes he developed while doing vegetable prep at high-end restaurants. He welded a 500-gallon travel smoker with mentors and a custom fabricator, is forming an LLC to take larger bookings, and is accepting inquiries now while not rushing to open a brick-and-mortar." - Erin Russell

BRISKET IS SALTYYYY!!! WOW!!! At over 21 dollars a platter and beautiful smokers in the back with an incredible smell I was disappointed yet again. I’ve tried the brisket 3xs. The first time awesome the 2nd and 3rd time (3rd time tonight and my fiancé wanted it so I decided to give them another try ) I will not order again. I went against my better judgment and got it again and it’s inedible. I think who ever in the back cooking is a bit SEASONED SALT HAPPY. Sides get a 10/10 from me the collards, green beans, baked beans, Mac and Cole slaw is delicious. Brisket and Pork burnt ends are horribly salty and inedible. Do Not Do it.

Very disappointing experience. If I am going to pay $16 (rounding up) for a salad I want it to be good. I went to Taylors BBQ and ordered takeout yesterday evening. I am looking for places for catering for my team and thought I would try it out first even though their reveiws where on the lower side. As I walked into Taylor's it was aesthetically pleasing, however empty(in all fairness it was a Monday night). I figured okay this should be quick. I order my food on their carry out screen at the entrances and sat down. There were three employees there, and no one said anything to me for about 15mins. That is when I got up to inquiry about the Candied Bacon Cobb Salad I ordered. The employee said "Do you need help with something" I said "yes. I am waiting on a carry out order, a salad" she said "Oh, okay" and walks away. I am not sure if I was suppose to assume she was going to check on it or what but I stood there confused and said to myself just wait. Eight minutes later she came back with my salad. I said thank you and went to my car when something said check your order. When I looked at my salad I could not believe what I paid $15.50 plus tip for. It was upsetting after an 11hr work day. I went back into the resteraunt and stood at the register by the bar. The male employee working the one table ignored me and the other employee, who was on her labtop at the tablez by the kitchen door look up and went back to whatever she was doing. I finally raised my voice and said "excuse me, does anyone work here" her reply was "oh, sorry you need something" she hurried over and I explained that this $16 dollar salad was not close to what I ordered. The Candied Bacon, the namesake for the salad was non exitstent and where is the egg in my COBB salad. The employee looked at the salad and said what's the problem. I said where is the protein in my salad. She said do you want more candied bacon? I can do that I said yes. She proceeded to the back and started making a face and smiling. I was going to wait and send her back for my egg also, but at that point I asked for the manager. I told her this was not what I ordered and she said yes there should be more in the salad. I said just refund me I do not want it anymore, I came here to see if I could use them for catering but I saw enough. She then says oh let me stop the extra bacon, I guess that was the priority. She gave me a full refund and I walked out and went striaght to Mission BBQ. I have posted a picture of the salad online and one of what I got. If you looking for mediocracy at it's finest Taylor's BBQ is the place for you.

The food is absolutely amazing! My first time trying and it didn't disappoint. The Brisket was moist, coleslaw was so bomb, The Greens omg just so delicious and the yams. You can't go wrong with that. If you're in the area definitely check them out.

Lona T.

Google
I love Taylors BBQ! I have not had a bad experience dining in. Staff are amazing and always checking in. The candied yams are one of my favorites, however, they have been hit or miss lately. I primarily order to go. Sometimes they are perfect, other times very dry and not flavorful.

Went here for lunch during the week. It wasn't busy so we had our choice of seat. Our server seemed a little annoyed but not completely rude. My husband didnt get his water refilled, which for the price of the meal, I would have thought we could have more than one glass. My husband had the turkey BLT with Mac and cheese which was $20 and I had a rice bowl with Carolina pork and soggy green beans for over $16 because I was charged extra for sauce. The wet corn bread was over $5 for basically one slice cut in 4. Terribly overpriced and lackluster service will not have me returning.

Google
I dont know what happened when you all moved locations, but it has been a steady and steep decline since you did. Last night, I received a piece of chicken so inedible it defied logic. Half of it was so dry that the thigh muscle had actual split in half, while the other half was bloated in grease. Clearly, this had been prepared hours in advance and had spent probably most of the day sitting in a hotpan. Additionally, I didn't even receive what I ordered. I ordered the half chicken, but received only the Dark quarter. And when I called the store for a refund, they told me they can't because orders through THEIR OWN website are actually through a third party. They couldnt get me new food sent out that night, and instead offered me a gift card (as if I ever want your food again). I have never been so turned off to something so quickly in my life. The old store used to make some of the best bbq but now I'll never have Taylors again. So disappointing. I wish I could give you 0 stars.

Mary S.

Google
All sides were excellent 5/5 rating. Only a handful of customers so the service was quick. The chicken was a huge disappointment, it is not the Eastern Shore/Taylor's chicken I was expecting. It was a vinegar marinate, chicken over cooked and very dry. Rated -3/5. And ..... it was expensive for a simple menu. I liked the old place on College Ave and Snow Hill Rd with the small loaves of fresh bread, fresh baked pies, and original recipe chicken, and few tables for eating in. Do not recommend and will not go back.

Google
Waited over 30 min for a take out order. When I said I had to get back to work how long would the wait time be, the lady suggested 7 min. I spent my whole lunch hour there and had to hurry back to work. Food is awesome like always. But the wait times need to improve it was 70$ plus a “bag tax” fee. Customer at the bar kept licking her hand and using the salt container to put on her hand for her shots, at 12:30 in the afternoon at the bar.

Yelp
Prompt delivery and our order was delivered hot and correct. Ordering was very easy through Toast. The 1/2 rack of libs were tender and delicious. The Carolina Pulled Pork sandwich was very vinegar forward and tender. The Turkey BLT was delicious and smokey but could use a bit more moisture. There were lots of sides to select from.

Yelp
Casual & comfortable dining, clean dining room, great server, food was delicious - brisket nachos, sloppy Mac, crab dip was amazing. Wish I had remembered to take pics but it was all beautifully served. Oh! Don't miss the hand-cut potato chips! Will definitely return whenever I'm in the Salisbury area!

Yelp
I stopped by Taylor's BBQ @ 934 S Salisbury Blvd this afternoon. Had never been to the new location but used to frequent the College Avenue location. The food from that location was wonderful. Today, however, after spending $69.00, I was looking forward to enjoying my take-out at home, which was only 7 miles away. It was the most horrible chicken I've eaten in years! Two half chicken platters and 5 wings in the trash. The wings were not done and so tough I had to use a knife to slice one. Chewed forever then spit it out. The half chickens were overdone. Burnt skin, dried out meat. Still some red around the bones. Even though I know some of that is normal, this was extra. Only thing worth eating were the crab drip fries. Never going back.

Eric B.

Yelp
Food was really good, but meat portions were less than expected for the price. Sides and drinks were good and reasonable portions. Servers were great too.
google avatar

Nicki J.

Yelp
I could have made a better pulled chicken sandwich AT HOME! The meat was so chewy, I started to wonder if it was really chicken or some old meat they were selling?!? It didn't have a BBQ/Smokey flavor to it either. They also don't give you much meat (If the sandwich were good, I would be pissed about the lack of meat). The best part about the sandwich was the soft buttery brioche bun. The homemade chips were OK and the pickle was good. I don't eat beef or pork so I wouldn't go back.

Nathan B.

Yelp
Friendly staff, fast service, and the thick cut brisket was delicious. Would go again!

Yelp
After serious consideration and wasting my money I decided to post this review because I figured the establishment wouldn't really care considering they don't really have any food integrity nor do the care what customers think so.. I ordered 3 of the five count wings and what I thought was the cornbread bites but it was actually two big squares of cornbread and I actually called back and explained the issue and tho they fixed my first issue they failed to deep fry them all the way (not done) and the chicken wings weren't up to the par that I've grown accustomed to over the years from this establishment to be honest the smoked wings hear were possibly the worst wings I've had in some time and the garlic parm wings were a definite no , so to sum this restaurant up ,save some time and money and just avoid these upper tier prices with this low quality food. The building and the bar are both nice and the waitress was friendly but the food was a Not So I WONT BE returning and I won't recommend this establishment to dine in ,definitely a black eye to Salisburys already slim food scene

Yelp
First visit to the new location. I had been to the College Street location in the past, but a poor service experience had kept me away from a return visit. New location and full-service brought me back for a second try. Service was significantly better this time around. I had the chopped pork sandwich ($12). Would have liked to have seen it as a plate, but that was not a menu option. The chopped pork comes pre-sauced with their goop sauce. Uncertain if you could get it without sauce. Sammies come with the chips and a pickle, with the option to upgrade to two sides for an additional $5. The sandwich was fair. There were not enough big pieces of the potato chips (think bottom of the chip bag), but the flavor was good. Sweet tea was excellent. I may come back, but would try something else if I did.

Yelp
We have traveled all over the USA in search of BBQ. We know good BBQ. I ordered the Brisket, asked for lean. Wife ordered the burnt ends. For the cook to even send out our food was crazy. The brisket was nothing but fat and under cooked. The burnt ends were fatty. The waitress replaced my order with pulled pork in BBQ sauce. Was like drinking BBQ sauce. A shame since the staff is top notch and the place looks very clean. Now to search for a better BBQ place in Salisbury. Hell Mission BBQ would have been better and I don't think they are that great.

thresia s.

Yelp
Everything was spectacular and brisket melted in my mouth. The green beans however were so salty and full of burnt meat I couldn't stand them.
google avatar

Kelsey M.

Yelp
Got the half chicken and it wasn't cooked all the way, so had to throw it away. Couldn't take it back since on the road and too far away. The potato salad wasn't as good as last time. The corn bread was great but couldn't eat much of the lunch.
google avatar

Christopher M.

Yelp
Wow. Wow. I had the burnt ends. I'll be back in the future to try literally everything else. Not far off 50 and worth it!!!
google avatar

Chris L.

Yelp
Well, my roommate got their food today. I have never tries them before. The beef sandwich was ok. But the sides were horrible. The coke slaw had no taste and the Mac and cheese about me sick. Even the pickle,I love pickles but ugh. Even my dog would not eat the sides. Never going there myself. A 1 star is to nice.

Yelp
I have heard good things about Taylor's BBQ so today I decided to try it out. From the moment I walked in I knew I was either gonna love it or not. In my opinion the inside looks more like a Bistro than a BBQ place. The staff was super friendly. Now i placed a take out order in person. I got the pulled beef BBQ sandwich, nice flavor. Was given a choice of chips or 2 sides so I took the sides, mac and cheese and coleslaw. I also ordered a side of yams. The wait was brief, was pleased. By the time I got home (5min) everything was cold except the yams. The coleslaw to me was flavorless I had to add my own seasoning. Not sure how one can make mac and cheese unappealing. The yams not great. So for what I paid it was an expensive cold sandwich. I would not reccomend Taylors.

Kristen S.

Yelp
Got the brisket tacos and pulled pork tacos, cole slaw & collards. Meat needed some sort of seasoning. Salt, pepper... Anything. Bbq sauce on the pulled pork was too sweet. Some pickled jalapenos or some pico maybe??? Collards were as bland as dish water. No vinegar, hot sauce, even salt. As much as I paid, I was expecting better. I'm sad that this place wasn't as good as I truly hoped. Guess I'll have to bite the bullet and go to Easton.
google avatar

Ivan T.

Yelp
Well today was the very first opening of the place ( see photos ). Very Interesting and Impressive. Food Was good
google avatar

Heather B.

Yelp
Delicious food, and great service! Love their new location, very welcoming and bright. Don't forget to order the cornbread!

Scott C.

Yelp
DISGUSTING!!! 1/2 pound of pulled pork = 1/2 pound of ketchup with a few bits of scrap meat and enough spice to kill the taste of Heinz 57. The corn bread was dry and granular like sandpaper on the tongue. And the only thing more coarse than the corn bread was the service (the short Asian girl with the big attitude was the worst). After calling ahead to confirm my online order was ready I showed up and they hadn't even started. Seriously, should it take 45-minutes to place a single spoonful of SLOP in a clear Chinese food sauce container (NOT EVEN THE SMALL SOUP SIZE) and wrap a piece of corn bread in tin foil???? Buyer beware - you've been warned, Never again!!!!! Terrible delivery service · Small portions · Slow service · Disappointing food · Poor presentation

Yelp
I have heard such good things about this place. When I walked in it was clean, the server was nice, and the decorated wall behind the mirror in the bathroom was a cute touch. I didn't expect a live musician at a barbecue place so that was cool. So that's what I liked but I went there for the food and was left disappointed. The brisket was on the dry side but had an okay flavor but I definitely needed a sauce. The Mac and cheese broke my heart. It had this very weird taste that hinted of spoiled milk or something and left a nasty aftertaste. The fries thankfully were decent enough to help with cleansing my palate after that. I want to try again to give them another chance but I am a little hesitant.
google avatar

Donna J.

Yelp
In town for work thought I try I got some brisket, roast beef and a couple wings So gross Roast Beef ice cold and wing microwaved in plastic I would go to Arby's before eating here again
google avatar

Danielle D.

Yelp
Every time I pass through Maryland, I have to stop at Taylor's. I cannot name a bad thing on the menu: the ribs, the brisket, the chicken salad (WOW - personal fave), corn bread, and literally any one of their desserts!! The best thing about this restaurant is they are local and Family-owned. They make the food fresh on the grill, rain or shine. All other BBQ flails in comparison. And they cater events!! Absolutely check this place out!
google avatar

Jeanne C.

Yelp
Ordered from Taylor's BBQ through DoorDash for the first time and was very happy with my meal. I ordered a half chicken with fries and collard greens. The chicken was melt-in-your-mouth delicious. I started off eating like a sophisticated person, with a fork and knife but after a few bites, let's be real--I went at that thing with my hands. The fries were good, just salty enough for me (and I LOVE salty fries). The collard greens were a first for me and I just don't think I like the taste of them. That says nothing about Taylor's- I just learned I don't love them in general. All in all, this will definitely be a regular spot for me to order dinner from. Next time, I'm trying the potato salad!

Tyler P.

Yelp
I love barbecue and have eaten it all over the United States. Taylor's brisket is the best I have ever had. The wet cornbread was something I hadn't experienced before and I really enjoyed it as well. The service was good and the restaurant was spotlessly clean which I appreciate.
google avatar

Sarah S.

Yelp
Fabulous bbq and desserts...especially the strawberry pie. The wet cornbread is also out of this world! My Mom always orders a tray of it for Thanksgiving dinner and everyone keeps coming back for more.

Patricia D.

Yelp
All I can say is uuggghh!! nothing tasted hot or fresh. I just can't believe they don't have someone professional cooking or advising them that this is less than what a drunken teenager prepares for him/herself at home. I will never waste another penny there. Their service persons are awesome! But it's about satisfying food, right? Wait...Wawa has real pulled pork...make sure you add the vinegar.

Harley H.

Yelp
Nice fancy place with good service, but food is everything at a restaurant. I ordered the brisket for $19 with 2 sides and received 2 slices with more fat than meat. It took me a long time to pick out the meat to get 4 ounces of meat to eat. What a waste of time and money!

Kayla M.

Yelp
The restaurant decor was so cute and we got great service. The brisket was AMAZING. Melted in your mouth. And the sides were excellent as well.

Miracle S.

Yelp
So sorry we didn't do this last night, but BAAAAABBBY!! If you don't know who or where Taylor's BBQ is, you will after this video k.

Paul H.

Yelp
Not the old Taylor's. Chicken overcooked and dry. Salmon was overcooked. If you want ribs go elsewhere. Industrial quality.

Nancy D.

Yelp
If you haven't been to their new location, get there!! Both the inside and outside are so fun and unique!! They have the same great menu items as their previous location, but they added so many new appetizers, main entrees, sides and desserts. It was hard to pick just one, so we decided to order a bunch of items and share. Every choice was a delicious, mouthwatering adventure! The bar and drinks are worth going alone, but do yourself a favor and go there for a delicious meal! While you are enjoying the food and drinks, you have to really look at the gorgeous bar and all the cool decor. I really loved the food at Taylor's BBQ before, but this restaurant is my new favorite place!!!

Tonya J.

Yelp
This establishment is not wheel chair accessible. This isn't very welcoming to the disabled community. I've never seen pasta salad made like that and the green beans were mixed with old ones. My piece of wet cornbread was resting under some pickled cucumbers and onions, its not in the picture because I tried to save it but it still tasted like pickled cucumbers and onions. The chicken wasnt done all the way through, I'm disappointed in Taylor's BBQ. One and done.

Redmond D.

Yelp
I've given them 3 tries since opening the new place. Ribs were old (like cooked days before and reheated). The half chicken dry and cold. Pulled pork (minced) is like something from grocery store with too much added vinegar. Brisket (dry, overcooked and not recently smoked). Mac and cheese is gummy with too much cheese (whoever would say that right). Collards are canned or possibly frozen with sodium taste. Coleslaw was only decent thing I've had. I sent friends there. They don't have a clue how to southern bbq.

Nick D.

Yelp
Well my day is absolutely ruined. Brisket was really good, that is all. Nothing else was enjoyed by my entire party of 5. I should have went to walmart and got a rotisserie chicken. My girlfriend won't even look at me.
google avatar

Bill O.

Yelp
So I'm a little late on posting this review but a few weeks ago while we were on vacation we stopped here after a disappointing visit to the so called zoo in town. Lunch time as we all were hungry and wife found this spot. I wanted to try pit beef as apparently maryland is know for it. Wow you guys eat something other than crabs. Pit beef sandwich was good and tender and great flavor. Pickled beets took me back to my childhood. Baked beans were delightful. Pulled beef and pulled pork all amazing. Greens were everything I wanted too. Kids loved it too. Huge portions. Great price. I was upset a little that I spilled my tea on my way to the car but they replaced it for free. Didn't have to do that but that tea was the topper of an amazing lunch.
google avatar

Maddi C.

Yelp
Food was decent, but the staff seemed tired and overworked. I'd avoid eating here, and definitely working here. I don't like eating places that mistreat their staff. It's more appalling than bad food. Go to back street grill or something. Save your money.

Terri F.

Yelp
I ordered over 150 dollars worth of food online and when I arrived to get food they said they cancelled the order because they didn't have one item in the order. I asked why I wasn't notified so I could choose another item and they said because their online ordering service doesn't give them customers phone numbers. Very disappointing. The owner did not seem to care they lost a sale and customer.
google avatar

Jane G.

Yelp
I've heard about Taylor's for a long time but this is the first time I catered our Christmas dinner and they did an excellent job! The food was from their Christmas menu and was delicious and plentiful. I will definitely go there a lot more now that I know how good it is.
google avatar

Nina B.

Yelp
10/10 review. Got a sandwich with pulled pork and mac and cheese... safe to say it changed me.

Qian S.

Yelp
Michael S. Great food, selection and service, reasonably priced,we go often Always clean and well lighted, staff is very engaging and service oriented Our favorite quick dinner location.
google avatar

Joe B.

Yelp
Excellent as usual. Pulled pork without a bun with a side. Can't ask for better for a Tuesday lunch! BTW, Taylor's just catered our entire company breakfast last week. Our 300+ employees loved it and can't stop talking about the good food! JB
google avatar

Sue H.

Yelp
Kathy catered our daughters wedding and everything but the crabs for the day after crab feast. She was wonderful to work with - creative and accommodating in every way! The food was excellent and plentiful! We had almost enough leftovers from day 1 to handle a 2nd wedding. She also coordinated the 7 Smith Island wedding cakes from a third party vendor - ordering, delivering and serving! The two wait staff that worked the wedding could not have been any better. Despite almost 100 degree temps, they never slowed down! They were amazing and took wonderful care of our guests. Could not offer a higher review! Working with Taylor's was a pleasure from start to finish! Thanks Kathy!

T N.

Yelp
Best BBQ brisket sandwich! Truly delicious perfect cuts. Great service! Typical wait time. Clean and easy stop. Love the way my brisket or pulled pork is carefully foil-packaged beside my roll so it's perfect when I get ready to eat. My new #1 spot for BBQ!
google avatar

Brittany M.

Yelp
I love the food here, it's absolutely delicious. The service is great, unless the owner is there. I'm not a "regular" and I usually feel very brushed aside when I go in and get waited on by the owner. Specific instance: I had called in a carry out order and was told ten minutes. I showed up 15 minutes later, stood in line for another 7 minutes to order a drink and pay, when it was finally my turn at the register I told her I was here to pick up my order she said "it's not ready" and immediately started helping the person behind me. So I can't order a drink and pay for my order now so that when it is ready I can just leave? Nope. In fact I had to get back in line and wait to pay when it was ready 5 minutes later. Rude.
google avatar

Chrystal W.

Yelp
Alright first of all let me say the service was fine and the people working here seemed very nice, but I was completely shocked at how bad the food was! I had the combo chicken and country ribs platter. The "country ribs" was actually a pork chop. I understand country ribs are more similar to a pork chop than ribs, but it wasn't even cut into pieces. It wasn't similar, It was just an actual pork chop. But this is the least of the problems with the food i had... If it had been a delicious plain old pork chop I would have been totally satisfied, but the meat tasted strange! I don't know how they prepare their barbeque but it tasted bad, and there was no sauce on it to even cover the bad taste. The chicken quarter was awful as well. How do you mess up barbeque chicken??? The cornbread was extremely undercooked, like it had barely been cooked enough to become bread-like. The taste and consistency was closer to batter than bread... When I ordered I specifically asked if the sides were homemade, and I was told that they were. They tasted bland and canned to me. I ordered bread pudding because they said the deserts were all homemade. I can't tell you how the pudding was because I'm actually afraid to eat it...

Michael Y.

Yelp
Best BBQ in Salisbury. Definitely deserves more stars on Yelp. Got the pork sandwich with 2 sides for good value for money.
google avatar

Rob A.

Yelp
Everyone has their own tastes but when it comes to bbq..i rate them by these categories...rub and sauce...sides...and quality of the meat. I am sorry to say that Taylor's failed on each category. 1. I didn't taste any rub on my ribs...and the bbq sauce taste like it was straight out of the bottle. Plus my meat wasn't hot...a no no. 2. The sides...macornie and cheese was not very good and my beans tasted like they came straight out of the can uncooked....3..meat tasted like it was cooked earlier then microwaved. Bad part was that by the time I got home..my meat was cold. Overall I would not recommend this place as I was disappointed and you will be too.
google avatar

Wufi D.

Yelp
Im from St Louis, Missouri and I come here for the ribs! The fried corn bread is heavenly

R.H. H.

Yelp
Since the ownership has changed the food is no where near as good. They say they didn't change the recipes but they certainly aren't making the food the same way. The red skin potato salad which was fabulous before is bland and flavorless. The chicken wings have very little meat on them. Their soup is always salty and served barely warm. The pasta salad has no flavor. Getting a side of BBQ sauce is very difficult. And the prices are way to high for the food quality. Used to be first class and delicious. Now it isn't even worth going to anymore.
google avatar

Mike D.

Yelp
Chicken barbeque sandwich is good! I'd recommend it. My only complaint is that I wish it came with more chicken. The staff was also very friendly.
