If you've ever been to Swan's market, you've probably peeked your head past AS B-Dama or Rosamund's to see what the refrigerator case was, and then the other refrigerator case. The one with sausages is Taylor's Sausage Co.
From what I have been told, Taylor's Sausage Co. has been in business for decades with multiple owners, who have passed down the recipes to the next. At one point owned by a Filipino family, which is why they offer longanisa and tocino pork. I was told this by a Filipino gentleman who picks up said longanisa to make weekend longsilog with garlic rice for his family.
As a primarily pork butcher shop, they offer a lot of products outside of sausage: ribs, chops, bacon, belly, shoulder, feet, even porchetta! Likewise they offer beef, chicken, turkey, and mixed meat sausages in case you don't enjoy pork. Anyways, here is what I recommend:
-Hot Boudin Blanc: the MUST ORDER. A spicy pork sausage filled with rice. What really makes this is as you cook it the juices are absorbed into the rice making it extra flavorful and moist all the way through.
-Swedish Potato: A recent order, similar to the rice in the boudin, the potato in here helps absorb the flavor. Very good, but still prefer the boudin.
-Filipino Longanisa: As stated above, an amazing breakfast sausage if you want something different given the sweetness. Absolutely pair it with garlic rice if you have it.
-Ground Sausage: sometimes you don't want links, maybe you're making a breakfast has or a pasta. They have mild or hot, and the best part is they will add sage right to the sausage if you want. It really adds to the flavor, and I've made a tasty tomato cream pasta sauce with their hot sausage and sage.
They have so many other varieties, like Texas Brat, Hot Turkey, Cajun Chicken. I usually order more than my friends and I can actually eat given the size of these things. But the price is still very affordable. I think I picked up 10 sausages (4 hot boudin, 2 Swedish potato, 2 cajun chicken, 2 Louisiana hot) and it came to twenty something dollars. Not bad considering we only got through the boudin, and I've been enjoying the rest this weekend.
Notes:
-The 4th of July is their Christmas, so make sure you arrive a few days early.
-If you have questions ask the staff or other customers. On my July 1st trip I decided to order some of the Swedish Potato. Another customer asked how they are, and I told him I had no idea, I was curious. We both had come for the hot boudin.
