I had high expectations for Tenkai at the Grand Hyatt Seoul, given the hotel’s reputation, but the meal was a rollercoaster of extreme flavors.
Tenkai Poke
The spicy tuna, to be honest, was aggressively salty. The seasoning went beyond just “flavorful” and bordered on overwhelming. It felt like the kitchen had a heavy hand with the soy or marinade to the point where I was worried about my kidneys. The freshness of the tuna was completely masked by the sodium bomb. To make matters worse, the corn kernels looked sad and malnourished, completely lacking the plump sweetness you expect in a fresh poke bowl.
Beef Brisket Don
The beef brisket rice bowl had potential. The fat rendering on the beef was actually quite delicious, offering that melt-in-your-mouth texture you want from brisket. However, the salt issue struck again. It was incredibly salty, but the bigger surprise was the bottom of the bowl. It was pooling in chili oil—not a subtle kick, but a heavy, greasy layer reminiscent of a very oily Mapo Tofu. It made the dish feel much heavier than necessary.
Yuzu Sorbet
For dessert, the Yuzu Sorbet was the complete opposite end of the spectrum. It was intensely sour, like eating ten whole yuzu fruits at once. It definitely woke me up! If you love a sharp, lip-puckering finish to cut through the grease of the main course, this does the job, but be prepared for the acidity.
