This place is a hidden gem. Every single bite and each pairing (try also their juices!) are so carefully and thoroughly thoughtful that you wonder how the team can manage to find the time to R&D the menu, cook the food, set-up the place and accompany you in this journey. From the moment you enter the restaurant, the music pulls you in their minimal and soft atmosphere and you are taken on a journey where local ingredients are enhanced by the incredibile talent of the chef, with zero waste, sustainable cooking and down to earth flavours combined in such a way that makes them explosive. Each dish is well balanced: acidity kicks, sweetness backgrounds, salty punches and fatty pleasures that never feel overwhelming. Some of the vegetarian courses are so interesting and surprising that they almost beat everything else, but I wouldn’t have changed a thing in this entire menu. Kind, funny, genuine and very knowledgeable people that give you foodgasms without being pretentious, presenting you with a multisensorial experience where you can actually taste, smell and look at their (artistically elegant) creations. Italian-Nordic modern cuisine at its best, that would definitely deserve a couple of Michelin (red) stars.
