I've been here a handful of times and each experience has been amazing. I've been to both bars, the Trading Co (upstairs) and the Baldwin Bar (downstairs). Even though they are housed in the same location, keep in mind that they do have different drink menus (the food is the same) and different ambiances. Either way, make sure to make a reservation and be mindful when you're making the reservation since there are two bars!
On to the food and drink...The food is good and the drinks are even better! I've had their scallion pancake, prosperity noodles (spicy, but a must try!!), spicy dried rub beef brisket, and tangerine chicken. Everything was high quality and well-cooked. I loved the scallion pancake as it was light, crispy, and flakey, just like a scallion pancake should be. The tangerine chicken was also really tasty; there was a perfect breading-to-chicken ratio and the sauce it was covered in wasn't too sweet. Their Sichuan food, the beef brisket and prosperity noodles, was some of the best I and my friends have had. There was this nice slightly numbing flavor that wasn't too overwhelming.
Drink-wise, I'll have to split it up based on the two different bars.
- Baldwin Bar, Downstairs: I've ordered the Halo Halo and Chopstick Mai Tai. The Halo Halo is a really great frozen cocktail, you can taste the ube and isn't spirit-forward at all. I really recommend this drink. The Chopstick Mai Tai is also really tasty and paired well with all the food we got. I also got a Passionfruit Daquiri on the house during one of my visits (have I mentioned amazing service!).
- Trading Co., Upstairs: I've had their spin on a Piña colada, the Avenue of Giants, and the Gold Ceremony. The drinks are a bit fancier upstairs as well as in the dining rooms. I really loved the strawberry mascarpone espuma that was a part of the Avenue of Giants since it was so light and flavorful. The Piña colada was so tasty too and our bartender was so kind and made it just for us. The Gold Ceremony was really spirit-forward but also very good.
Overall, this place is a must-visit. I love the drinks, food, and service. Our servers have been amazing EVERY. SINGLE. TIME. The only thing I will say though is that you have to make a reservation. This place gets busy, even on weekdays. They have a parking lot (which is a bit small) but I've always been able to find parking.
