Ethan Stowell Is Launching a New ‘Breakfast Pizza’ Restaurant Called Bombo | Eater Seattle

"Connected to the restaurant, the Bar at Bombo will offer a similar but distinct menu and is notable for having a late-night menu served until midnight Wednesdays through Sundays, which should appeal to anyone hoping for more nightlife options near the Convention Center." - Harry Cheadle

We wandered into this lovely bar before a show at the Paramount, and I'm so glad we found this place. The food, service and atmosphere are all amazing! I love the jazzy feel, unique seating, and genrous shareable dishes. We tried their roasted beets, calamari, and Italian sub salad - all of it was fabulous. My husband was especially impressed with the calamari, with which they took a tangier flavor profile than most. I was surprised and delighted with the toasted beets - golden beets, served chilled, with a really unique set of complimentary textures and flavors.

Gosh I love this place. This review is long overdue. Tay and Joe are so awesome, I would come just to hangout with them. The chefs put something magical in the artichoke dip. I think the secret ingredient is love. I’ve also had the pleasure of chatting with the manager DeRon. Cool cat. See you guys soon

Drinks are decent, but I will go for the classics. The old fashioned is decent with reasonable price, but the flying monkey is a bit too sweet in my opinion. There is a default 22% here, not too surprising as a convection center but not for a bar. Plus, I don’t think there is anything extraordinary here. Still a good bar in this area, but I might not want to head over because of the 22% gratuity.

Bombo in Seattle is an absolute gem! From the moment you walk in, you’re greeted with warm and attentive customer service that sets the tone for an incredible dining experience. The location couldn’t be better—right in the heart of downtown Seattle, making it a perfect spot whether you’re attending an event at the Convention Center or just exploring the city. The food? Outstanding. Every dish is crafted with care and bursts with flavor. And let me tell you about the desserts—absolutely divine! The dessert we had was the highlight of an already amazing meal. It was so rich, flavorful, and beautifully presented that it left us talking about it long after we left. From start to finish, everything about Bombo was flawless—the food, the service, the ambiance—it all came together to create a truly memorable experience. I can’t recommend this place enough! If you’re in Seattle, do yourself a favor and visit Bombo. You won’t regret it!

Total tourist trap. It benefits from being across the street from the Paramount and it doesn't try to offer value for money especially as it is expensive and slaps an automatic 20% service charge on no matter how bad the service is. Best to avoid ith place to avoid disappointment.

Not a destination bar, but if I was walking past, I may stop again. Their mixology is a little too generous with strong flavors, so I'd stay away from specialty cocktails and stick to something you know. This bar does charge a mandatory 22% service charge, but they are very upfront with it and tell you as you are being seated, so it's not a surprise. They tell you that tipping is not required. The wait staff is very nice, but I sense that there is high turnover because many of them seemed like they were still learning. The seating arrangement is extremely unique, and the short tables and chairs that require you to hunch over are an interesting touch. All in all, I believe the three stars this bar has on average are earned and are an accurate assessment. If it weren't for the quality customer service, I'd probably rate it less.
