"A 6,500-square-foot food hall inside Area15’s 200,000-square-foot interactive-arts complex, opened after an initial pop-up run and designed as a rotating test kitchen for the chef’s global restaurants. Rather than a mall-style food court, it features artisan stations — including a wok station, a burning station for Roman-style flatbreads, a barbecue station and a vegan stall — with menus that will rotate so successful recipes can be rolled out worldwide. The lineup spans many flavors and formats: pizzas such as Caprese, Peking duck, smoked mushroom with Camembert, fig and prosciutto, vegan with Beyond Meat sausage and Buffalo cauliflower; breakfast offerings like waffle dogs with all-natural franks at the Whacky Waffle Bar; smoked and grilled items (wagyu skewers, black dry-rub brisket, smoked short rib churrasco, Alabama white barbecue) at the smokehouse; the Amsterdam burger with house pastrami, Gruyere and kraut; Singapore street noodles and pineapple fried rice at the wok stall; truffle cacio e pepe over pappardelle with toasted garlic at the pasta station; a black bean burger with mango ketchup at the vegan stall; plus Korean corn dogs, wings, salad bowls, macarons and doughnuts.
